Congratulations! I'd fence in a quarter acre in the middle somewhere and install a 16 or 20 ft pen gate. Make one big turn around inside for people to park and camp and leave the center open for gathering. It will give you a place to plant things and build fire pits and cooking areas that won't be disturbed by wandering cows. Having a well dug would be the next ideal improvement. If the well doesn't have to be too deep you could then drop your own 12 volt pump down the encasement and power it with an RV. You can pick up a used plastic food container (275 - 325 gallons) and place that up high on a foundation and fill it when you need to and use it to fill RV tanks and for watering whatever you grow there. The well will add a lot of resale value to the land.
Good idea about a central gathering spot. You also want to think about how the land is worn by the other RVs. In other words what kind of path is being cut by the driving in and out. Congrats!!!

Tie some 1 inch wide red or orange ribbons about 12 inches long on the sides. It works really well in AZ and NM. You can use some 3M adhesive mount hooks to tie to. Trust me it really does work to keep the birds away.

Yes, discovered using dried cow-patties for fuel while back packing! They burn really well. A great fuel source.
