One Pot Spanish Chicken and Rice

- One Pot Spanish Chicken and Rice
6 chicken thighs
1 medium onion diced
2 stalks of celery chopped
1 red pepper diced
4 TBSPS white wine
2 TBSPS tomato paste
3 ¾ cups chicken stock that is hot
2 TBSPS oil to fry the chicken in
1 cup basmati rice
10 halved cherry tomatoes
1 cup chorizo or other smoked sausage cut in half moons
Spice run for the chicken:
1/2 tsp garlic powder
½ tsp pepper
1 tsp salt
1 tsp smoked paprika
Season the skin side of the chicken thighs in the oil in a pan on medium-high heat. Cook for approximately 4 to 5 minutes or the skin side until the skin is golden brown then turn them over and cook another 3 minutes. Remove the chicken from the pan, add the onion, celery, and red pepper, and cook for about 4 minutes or until the veggies become translucent. Add the rice, tomato paste and white wine and mix well. Next add the hot chicken stock. Place the chicken thighs skin side up back into the pan and add the cut tomatoes. Put a lid on and bake in a 325 degree oven about 35 minutes checking now and then to see where the rice is.

I think this sounds wonderful and I like the idea that there are two meats in there I have one that is not real wild about chicken that really doesn't mind chicken flavored things and I wouldn't feel bad about him this meal without the chicken and the rest of the family would enjoy it. Kind of sounds like a win-win to me. I will for sure be trying this one

I also love your channel. It is food everyone can enjoy. As for Hallowe’en, we only get 7 trick or treaters, we live in the country. They come in with their parents, we offer them a beverage & a piece of homemade fudge. We always give a lot because of the numbers we get. They are so cute, one year we had a John Deere tractor come through the door. The mom was very creative.
@bonnietomlinson7945 we have about 30 kids come to our door, most of them are related to us some how and it's always fun to see them all dressed up and excited.

I love one pot meals. You have some of the best recipes and I have been cooking for many many years, but enjoy seeing new recipes. Even though we’re in our seventies, we always have our porch light on and have a treat for the little ones. If my husband opens the door, he always tells them to get a big handful of candy. Then those who don’t wash everything. I don’t wash my meat. I pat it dry. If you wash meat it can splatter on stuff and spread germs. That’s what I read. I’ve heard that as well.
I wash my vegetables tho .

Colleen - I don't wash my meats either because I remember a directive from the health department saying that by washing you run the risk of spreading bacteria throughout your kitchen with the fine water spray. (Much like the very fine spray when you flush a toilet.)
That is an absolutely absurd “directive.” Do you by any chance remember the illogical directives that they and others ie the WHO, were spewing about the Covid virus, absolute lies. They can’t be trusted. Common sense should tell you otherwise regarding washing meat.

I’m going to try this. It looks easy and tasty.
I live in Sacramento, Ca. and I live in area that is populated mainly by older people. We get no children to our house and it breaks my heart. Halloween has always been my favorite holiday. I think that Covid had an effect, also lots of schools and churches have parties. It is sad and I miss it so much.

Hi Colleen, this looks like a very simple to make, quick & tasty meal, & the cherry on the proverbial cake, less washing up being a one pot recipe! This looks delicious Colleen and I know it tasted great also !! Colleen your baking instructions say to bake at 325 is this correct since most things bake at 350 ? I love roasted tomatoes the flavor is amazing to me ! I often just slice some tomatoes about 1/2 inch thick and coat in olive oil salt & pepper & bake at 400 for 10 minutes , flip over and top each slice with Mozzerella cheese and Italian bread crumbs mixed together and bake another 10-12 minutes until bread crumbs are toasted and cheese is melted , and I serve them either as a side veggie or as a topping for buttered noodles ! Delicious 🥰! I hope your stove burner wasn’t yi hard to get the melted plastic off !! Happy Halloween , enjoy your truck or treaters , I live in a very old neighborhood with no children in it , most of us are retired and we never get any kids on Halloween !! ❤️🙏🙋🏻🌈🌈

Looks yummy. I was thinking that changing up the spices slightly to add a little bit of a kick with some hot pepper and then add some shrimp in the last 5 minutes or so would be like a jambalaya. Just an idea if you like spicy food and shrimp.

colleen i was wondering since your canadian do you have ployes up there aka buckwheat flour with self rising in the mix? i was wondering if you have any reciepe idea on how to use it. we have it here in maine from fort kent maine...and i was raised on it from my bro in laws family when we visited.. we had it with just butter oir used it in a soup like beef/chkn stew like you would a normal bread...i havent seen hardly anyways to use it other wise...would be interested on your take on it... thanks for the great content i love watching you ;];];]

It is widely written that raw chicken should NOT be washed/rinsed before cooking to minimize the spreading of raw chicken juices and blood all over the sink, countertop and elsewhere. You are doing the right thing by not washing, Colleen!

Yes, that was what I was taught. I think at one time it wasn't questioned.
Could you make this in an electric frying pan instead of the oven?
😂 the melted plastic. My husband maintains the stove (by his choice) & I have heard it about accidentally doing something similar. In my case, my plastic cutting board got too close to the most powerful burner and started melting. I also partially melted a paper plate tray in exactly the same way. It's a very powerful burner on high. He likes to take a razor blade to clean the glass top. It's just his ocd.
Personally, I rinse my chicken. However, it is actually recommended for sanitary reasons that you *do not* wash it.
Can I use chicken breast or are they too dry
Actually compared to U.K. prices for chicken thighs you would only get about 5-6 according to size for that amount of money.
I don’t wash my chicken either because if there is any salmonella in the chicken you will spread the virus around your kitchen.
I live in a rural area of Somerset in a crescent of bungalows ( one story homes) and there is not street lights along the country lane leading to my home. It’s very dark and nobody would be able to see their way to the bungalows.
For the first few years of living here we stocked up on sweets, no little kids turned up after the third time they were a no show my husband and I got fed up eating all the candy ourselves 😂
It is advised now, that you do not wash chicken, before cooking. Washing it, can can cause cross contamination all over the kitchen. These juices can contain the germs, that cause salmonella poisoning.

Boy do we eat leftovers. After the kids moved out, we have found it almost impossible to downsize our cooking 😂. The good thing is that we put the uneaten leftovers get put into the freezer for a lazy or sick day
I've been told here in our very small community we can expect 300-400 trick r treaters....
