I love chicken pot pie! I use the exact recipe except mushrooms. I make my pies in ramekins instead of one large pot and freeze half of them wrapped in I use cellophane and aluminum foil. I use rotisserie chicken for extra flavor and convenience since I don’t have to cook it. So yummy! 😁😋
Cannot hack Yukon gold - I find them mushy compared to beautiful Manitoba Red's. Big difference in taste. I also make the stock with onion, celery, carrot, salt, peppercorns and a tomato scored on top will clear the broth. Skimming it as it comes to a boil also helps and simmer it a little longer. Then I have few meals of chicken soup before making the pie. And I add celery to the pot pie. So very similar. Someday maybe will try the cognac. But your pastry looks wonderfully delicious. Yum!
When I use to cook them to save time in the kitchen I would use shredded chicken, frozen mixed vegetables, cream of chicken and mushroom soup and store bought pie crust. I thought it worked really well.
Screw any pot pie that doesn't have the bottom crust. The contrast of the slightly dumpling like consistency with the crisp crust is what it's all about. And flip it upside down. My god, man, doesn't anyone value nostalgia anymore.

We love this with a bit more veggies: added celery, and possibly more types of mushrooms maybe even a few squares of bell peppers :) Never tried cognac, just white wine, which is kind of great… but who knows, maybe other types of booze can add to the joyful taste also 😜😉!
Maybe use sage as your herb. Could exchange sweet potato for the white potato and even cube butternut squash in place of the carrots. And just ignore any rude comments. Some folks are so unhappy, they have to try and make others unhappy, as well. 🙂

OMG !!! Those are absolutely delicious ! Full of good yummy chunks, with that beautiful crust and with the least amount of salt, unlike the junk in the supermarkets . I can't think of anything else I'd need to go with them. Have them just as they are, no sides needed ! BTW the mushrooms add a real bonus .
Martha this was an excellent demonstration. Should I brown the bottom crust of a large pot pie prior to adding the filling? Next, add the filling, top with unbaked pastry and heat until brown, for about 25 to 35 minutes? I love the inside crust. You teach the most informative and precise utube cooking demo. Thank you...
I never have used mushrooms or potatoes in my pot pie and I use thyme and rosemary for the herbage and salt and lots of black pepper also I cut my chicken meat from legs and then fry it in some oil and butter with onion and garlic until it is almost 100% cooked then I toss in the flour and stir that around and add in some chicken broth that I get from cooking the bones from the legs and a good splash of milk until I get a white color and it tastes creamy enough.

I’ve never heard of mushrooms and potatoes in chicken pot pie. My ingredients in pot pie are pretty much like chicken soup just a thicker creamy sauce.

Last minute all I could find was puff pastry shells..any suggestions on what I should do? I'm either going to make the shells solo then plop one on top or bottom..but..oh gosh idk ..I have yet to open the shells box to see what they look like. I don't know if I can roll them out perhaps and use them as a topper? Eeek

Canned chicken will also work in a pinch if you don’t want to cook a whole chicken or debone a rotisserie chicken- its just as delicious

It's far easier to just pick up a couple of hot fresh rotisserie chickens at the grocery store or Costco. Boiled chicken doesn't sound very flavorful.

We do not put mushrooms nor cognac in our pot pies!lastly, we also have a layer of puff pastry on the bottom, like a real pie!

A tip for those watching their weight. When you're eating a double layer of pastry you don't need the extra starch of potatoes.
