Roasted refers to the slight burning on the duck after it in feathered in the meat depot. It burns off all the remaining fine feathers but does not cook the meat in any way. Usually done with a torch
Another excellent and simple recipe from the master chef, could taste the smoke flavour. Would love if you can invite Mark Weins and really show the world the true taste of Trinidad and Tobago not like what they did with the Anthony and Andrew.One suggestion please don't cook any more poultry in the presents of corcort like when you guys did the bar b que.He could be relocated.To much torture LOL.Keep up the good work.
