YESSS for sanitizing your sink and counter (if it got splashed) afterward!!! ❤❤❤Just get a spray bottle fill 1/4 of the bottle with bleach and top with water OR buy the clorox spray that's shown. 5 mins on the counter and sink and wipe off, rinse your cloth and wipe area. There's also the clorox wipes but don't forget to wipe off with your damp cloth after. It's so very important guys. Oh and NOT microfibre, J cloth or A cloth whatever they call it now. As usual, great video. Authentic Trinidadian food. One small observation: When the chicken is out into the hot oil and curry it is not "chownkay", it is "bhoonjay". It comes from the Urdu word "bhuna" which means "fried". Plase do not regard this as a criticism but as a language correction.
I learned how to make a lot of Trinidadian dishes from my son‘s grandmother. That’s also from Trinidad as I go to yours and look at yours yours look amazing. Because she’s no longer here I can’t ask her. I noticed that the recipe is similar, but you add different touches as well so is that because you’re from a different part of Trinidad she’s from San Fernando.
I always watch every roti video that comes out so I can get better at making them. I appreciate and enjoy how you make it. It's very clear. Good stuff.

Fun fact! Trinidad and Tobago, and Mauritius have the same cuisine! I thought dholl puri was available only in Mauritius!! Coming to Canada and eating in a Trinidadien restaurant I was amazed by the similarities that our foods have! Yes! Curried chicken & dholl puri is good :P But you should try "dholl puri, gros poids (lima beans)" in Mauritius. It is 100% veg and very good as well. There is a restaurant which in Toronto which sells the Mauritian dholl puri and the veg curries!

You using a low heat takes longer but using the lid and keeping te heat low makes tghe chiken cook to really favourful and tender curry, that falls off the bone.
Brings back memories of my grand mother making this for me and my cousins to take on our school outing each year. We’d look forward to this food as much as the different places we were scheduled to see. For a girl from the bush going to the city for an excursion, it was always a joyful and memorable occasion.
Food mills workpon bigger stuff, than split peas is far too small, you need stuff the size of gapes or just smaller like onions. Better have a grater stand or bench than a table as they would be more stable.

I have the same grinder and I put it on the strip of counter right above dishwasher. I also had to have alit of patience to put it together. The circular grinder needs tightening. Order to get a fine grind.

Ria never disappoints, always showing the proper way to cook a traditional tasty dish. I will try this , I picked up a Victoria food mill for grains and meat. It takes time but the good flavor comes through with experience along with trial and error.
