Stopped my MeatChurch today and Matt was shooting a new video. We stood by and as soon as they had a break he came over and greeted us and we got a picture with him. Real nice man, my BBQ hero. Appreciate all you do to help us all become better at smoking and cooking meat.
I got to meet Matt this past Saturday while he grilled that second batch of wings. Chatted a bit with him at the outside grill. What a nice guy and a fantastic shop. Looking forward to using the seasonings we bought in the store. Maybe it was his third batch.
Man i love his videos and recipe's. I've purchased a ton of his rubs and they are my favorites. The best part is that Matt seems like a genuinely nice guy, that makes his brand even better to me.

Using this recipe I have 10lb of wings marinating overnight and have already made the Jalapeño Ranch as well. Excited to try it out tomorrow! One of the best rubs I’ve had on wings. That sweetness is complemented with a little heat, so good. I cook them over low, direct heat turning them frequently so the sugar doesn’t burn but a slight char is perfect. Personally I’d never sauce these. My local Ace Hardware has this and many other Meat Church rubs which is super convenient.
Another awesome video buddy, killing it dead. Don't know why some people want dark meat right at temp myself.. really appreciate you showing how forgiving meat, bone, fat and skin is for something succulent as a wing or leg and thigh.
I love Matt's honesty "this isn’t going to be super hot... I don't think" Ot make me feel better about what I make to know that he isn’t 100% on the heat level of something new he is trying either
My family liked the Gorgonzola cream sauce so much they put it on a BBQ pork butt I smoked the next day. Thanks for all the recipes and tips. You're making us Dad's look like heroes to our families!
my go to is meatchurch garlic herb rub then smoke. the melt down kerry gold butter with meatchurch lemon pepper and fresh herbs . toss the wings with the mix and add some more fresh basil. I also do a hot version where I add buffalo wild wings medium sauce to the herb butter mix.

I wonder how these wings would be if you took them out of the marinade and then used the double fry method to make them super crispy. I think it's time I found out. Thanks, Matt for more great ideas.
I'm gonna try this one too! The Chicken sandwich was a hit and the W sauce is amazing. I'm going to try the Fireshire W sauce next. My local store said they can't keep W sauce on the shelf because of Matt's videos!
I still use your drying out method of overnight fridge and corn starch 👍👍👍 fam loves it. Toss in some franks buffalo wing sauce and back on the grill for 5 min… done and done
I've had a pellet grill for about 3 years still have alot to learn and am critical of my cooking, but I make the best wings I have ever eaten on my smoker it takes about 3 hours the skin is awesome I cook to 195 to 200 internal temp, I start at 225 1hour then raise temp by look as i go,they are beautiful and delicious I use all your rubs !
I am totally using my Honey Hog on chicken thighs tonight. Thank you for the inspiration. And they will definitely be cooked inside because of this Texas heat.
Finally was able to get to Meatchurch from Las Vegas this last weekend. Has only taken 3 years. Kind of funny I had just made honey hog hot wings a week prior to this vid coming out. Was nice meeting and chatting with Matt for a few mins. It was a Sat so the shop was busy. As it should be. Matt I have one request... my wife was a bit upset I didnt get her a shirt....Not a ton of ladies options. She as well as my folks absolutely love watching your vids and duplicating recipes..

I have a Kamado Joe Big Joe. KJ recently introduced a really nice rotisserie basket. You can put a ton of wings into that thing and cook them with the fire off to one side for about a half and hour. Then take them out of the basket and finish them at high heat on the grill to crisp up the skin and get them in the 175 degree range. Or said a different way: put on some char... Not a tailgate cooking method but it keeps the wing juicy while still getting a nice char.
Those wings look awesome! I love that they’re cooked simply over charcoal!! It was hilarious when you put the wings on the grill with your ungloved hand. 😂

in my small town in Australia, we don't get all the meat church products rubs, and merchandise but I was able to get my hands on some Texas sugar, and mate I have that rub on just about everything I eat including breakfast cereal 🤣
I've been watching meat church for so long that when I pull up on the jobsite,, the guys ask me what was he cooking this week and if I'm gonna bring in my leftovers,, of course there isn't any!! Honey Hog Hot is a secret weapon. I add it to most of my bbq dishes b/c it gives it that light kick people don't think would be there. People who don't like hot food are always surprised when I tell them.

We like to marinade fish in Frank's red hot for about an hour before deep frying it in our favorite seasonings. Wings looked amazing!

Great game day treat. Seeing the ingredients, I was concerned about the heat factor. Not hot! Definitely repeating this for future games!
Recommendation: sample sized seasoning packs. Like a flight of beer. We don't cook enough to justify to buy them all but I'd love to try them.
