      I made it and it did taste delicious... waiting for the 3rd feed of Cointreau. My dried fruit measurements totalled 1.1kg. The dedicated coconut added texture to it! Thank you.

      If making mini loaves, what baking time would you begin with? Any modification to the oven temp? Thank you! I made the recipe exact last year, but now I want to spread the love by making more loaves :)

    My mom use to make fruit cake. She use to then take it and wrap it in a brandy cloth for a week or two. A cloth cut out from an old denim shirt works best, soak it in Christian Brothers bandy, lightly squeeze the cloth out, wrap the fruit cake up, and put it in a gallon sized ziplock bag for a week or two. I just tried a store bought fruit cake that I did that with, and it still turned out great.

      You can definitely do that with this recipe, if you’d like. I just never have because we don’t care for the taste of alcohol very much. This one gets super moist after it’s frozen, so I typically make it ahead and freeze it. Thanks for watching!

    Elaine, I just made this Recipe today,and it is hands down,the STANDARD,for an Excellent Fruitcake! Came out perfect,and tasted FAR better than the famous Jane Parker Recipe! THIS IS IT !!

    Thank you so much. Merry Christmas. My husband and I haven't baked fruitcakes in years. We will this year plus a mincemeat pie. We are respectfully 79 and 70 years old. I never mixed with my hands. I have gloves and will do it. My wrist can't handle stirring thick fruitcake batter. I learned to coat the raisins in flour that keeps them from sticking together. His guardian taught him.

      Hey there, Mae. You're right about fruitcake batter, it is too thick to stir with a spoon or spatula. I also have arthritis in my wrist and it makes jobs like this difficult.     I loooove fruitcake. Was searching for a store bought in a tin but prices crazy. Remembered I had candied fruit in fridge, now soaking in red wine with pecans. Will make my own. Thank you!

    A little hint from me,,take a little of your flour and coat your fruit before you put it in the batter. Keeps the fruit from sticking together...looks so good love fruit cake...

    Oh my goodness! I was going to buy a fruitcake but after not being able to find one that was appealing to me I started searching for recipes. Your recipe with the raisins and coconut sounded so good so I bought the ingredients and made one. Just took it out of the oven as a matter of fact. My intention was to let it cool but it smelled so good I had to cut a sliver to try. It is amazing! Yours is the best fruitcake I’ve ever tasted. Well, to be honest, I haven’t really tried that many but I don’t need to try any more. I will never again buy a fruitcake or make any other. Yes it’s that good! Thank you!!

    My grandma made fruit cakes and pour brandy over them everyday for 2 weeks, then she would let you have some cake, l loved them. Ive been trying to get my wife to make me fruit cake for 50 years and she won't. Im going to try your cake and see if i can make it. Thanks.

      I'm sure you can, it's not difficult to make at all. You can also pour brandy over this one too, if you like. I just never have because my husband and I don't care for the taste of alcohol very much. Just remember to sift your flour before measuring to ensure accuracy.     I just made this fruitcake-OMG!!! I don't often pat myself on the back but this was phenomenal. I did swap out dates for the coconut, and I baked it off in small disposable pans so I could give some of it away to a few people, but other than that, it's all yours! I can't wait for my fruitcake hating family to try it on Christmas-I don't think it's possible to not love this fruitcake!

      Aw, thank you, I appreciate that. This recipe really is easy to make and makes a very moist and buttery tasting fruitcake. You can brush fruit-flavored brandy on this cake, but it really doesn't need it. It's perfect for those who don't care for the taste of alcohol or the bitterness of citron and orange rind.       Yes, citron is the ingredient i don't care for in fruitcake! It is bitter and has a chemical aftertaste to me. This looks delicious and love the addition of coconut! Happy Holidays!

    I truly thank you for this recipe. My mom passed away several years ago on a Thanksgiving morning, and I didn't get her recipe. 😢 I remember this is the exact way she prepared her fruit cake. Only one thing different she poured wine over hers and wrapped in a sheet for several days. Do you recommend this part of the recipe? Again thank you so much it brought back so many fun (bitter sweet) memories of my mother preparing for the holidays.

      Oh, I'm so happy that this recipe brings back such precious memories for you. I lost my mom in 2014 and there are a few things that she made that I haven't quite been able to copy. To answer your question, you can certainly pour wine, brandy, or any other liqueur that you like. My MIL also told me that you can even use fruit juice, if you'd rather not use alcohol, but I've never tried it. I usually just take mine out of the oven and put it in the freezer. When it thaws out, it's extremely moist. My MIL is 95 years old now and she never makes this anymore, but I try to make one for her at Christmas time.       I soak my fruit in juice with some sort of alcohol for at least 3 months in the fridge before making a cake. Needs only self raising flour added. No eggs, butter. Never fails.
      My grandmother soaked her fruit overnight in ginger ale before making her fruit cakes. They are also a moist cake and they don't last long enough to go off without the addition of alcohol.

    I've made a few different (youTube) fruitcakes and I find that this is the best! I did change the candied pineapple to a can of sliced pineapple instead and 1 half cup sugar instead of two coz I didn't want my cake too sweet. It came out the way I like it. 🥰🤩

    Thank you! Your recipe looks so good. I’ve been wanting a light fruitcake base recipe to try to hack the Apricot & Pecan cake from DeLuxe Bakery in Corsicana, Texas. I crave that cake. Hopefully I can use your batter then substitute an equal weight of pecans and dried apricots. ❤

    I wanted to tell you how much I enjoyed your video and how you encouraged me to bake my first fruitcake. I much prefer a light Christmas cake to those that are much darker and spicier and yours was perfect. I used your exact recipe but I made 3 smaller cakes than 2 larger ones. I had only one problem. Since the pans were smaller loaf pans, I figured they probably wouldn't take as long. I checked them after 2 hrs (@ 275) and my skewer came out a little moist, they were lovely and golden brown on top but I thought maybe a little longer in the oven, about 15 mins. I took them out of the pan and let them cool (although I couldn't wait for mine to completely cool before slicing into it). It is DELICIOUS! The problem is that the outside edges around the cake are quite crispy, sort of cookie-like and the inside was still quite moist. I have a new stove and I think the temp. is slightly lower than what it indicates so I'm not quite sure why the outside seemed overcooked and inside still moist. Any thoughts or suggestions? Thanks for a lovely recipe and it is SO GOOD my daughter wants me to make more so she can give one to her boss and I would love it to be PERFECT!!

      Hey there, Gloria. Based on your description, it sounds like your oven temp isn't quite high enough. I know that when I purchased our new stove, we had to regulate our oven temp to get it right. What we did was purchase an oven thermometer. I set my oven to 350 degrees and when it alarmed that it had reached the correct temperature, the thermometer was reading 325 degrees. My husband made an adjustment and we repeated the process and this time, it read that the actual temperature was 350. Our stove manual had the instructions on how to do the adjustment. You could also try putting a strip of aluminum foil around the edges as you would in a pie crust and remove them during the last 15 minutes or so of baking.       I cooked mine at 275 for 1 hr and 10 mins and they were perfect. I made mine in 6 mini disposable loaf pans, about 6 inches long and 3-4 inches wide...

    Hi, I just came across your video of your fruitcake. I haven't found one that I really like because they are so dry so I'm going to try your recipe. I was just wondering why there aren't any spices in it, like cinnamon, cloves or all spice? Most fruitcake recipes I've seen have some kind of spices.       I'm not sure why this recipe didn't call for any spices, but it has such a buttery, sweet flavor that it doesn't really need any. Of course, if you wanted to add some it would be fine. You could also brush it with your favorite wine or other liquor, or you could also use orange juice. I've never done that because I typically freeze it after I've baked it and it turns out very moist when thawed. I hope you enjoy this recipe, thanks for watching.

I'm not sure how long it will keep in the freezer, but I've had it in the freezer for about 6 months, thawed it out and it was just as good as it was the day that I put it in there. I have two in the freezer now that I fixed at Christmas time. I was going to take them to Michigan to my daughters, but I ended up not going.       Oh, I'm so happy that everyone enjoyed it! They will keep a long time in the freezer, at least 6 months. I had two loaves in my freezer from last Christmas (2020) that I forgot about, so I thawed them out this year for Christmas and they were fine, we really enjoyed them. They were just as fresh tasting as the day that I baked them. I had them wrapped in two layers of plastic wrap and then wrapped tightly in aluminum foil.

    I've never tried coconut in my fruitcakes, and I as well as my cousin are the only one in our family that likes it. This recipe looks interesting and would like to try it. I'm wondering IF I put a dash of coconut flavoring, instead of the coconut, if it'd be too strong? Btw, cool scoop!!

The raisins help add a lot of moisture to this cake, so I think that the dates would probably be a good substitution. Another suggestion is dried cherries or dried cranberries.     This is my first time to watch you. I have been looking for the right recipe. I didn't see any cinnamon or nutmeg?       Welcome to my channel! This recipe is very flavorful without the addition of extra spices, but you could add them, if you wanted to. I understand from some of my other followers that dates work very well in this recipe as a substitute for the coconut. I don't think that the addition of mandarin oranges would work very well in this recipe, although you could substitute the juice for the orange juice and I don't believe it would hurt anything.       Typically, citron or fruit rind/peel makes it bitter. This recipe doesn't contain orange peel, citron or any kind of rind, which gives it a very sweet and buttery taste. Some alcohols can make it bitter, depending on what is used. This cake can be soaked in brandy or other liqueur if you like or you don't have to use it at all. This cake freezes very well and is very moist, so I've never needed to soak it at all. I hope you try this recipe, it doesn't disappoint. Thanks for watching!

      Hey there Valerie. In the video, I used 8 1/2" X 4 1/2" X 2 5/8" loaf pans. I have also made this same recipe in a 10" tube pan or divided the batter into mini loaf pans to give out as gifts. If you want to use a 9" round pan, I think that you'd probably have enough batter for two 9" pans. Those pans would be fine, but you would need to adjust your baking time. They're done when you can insert a toothpick in the center and it comes out clean. These cakes will freeze beautifully, so you can make them ahead and just thaw them out when you want to serve them.       Hey there joemar. Adding more flour and soaking the fruit could change the texture of this cake and possibly cause it to become dry. I've always made this recipe exactly as the recipe says and it comes out perfect every time. The loaf pans I used were 8 1/2" x 4 1/2" x 2 5/8" or you could also use a 10" tube pan or divide into mini loaf pans to give out as gifts. I've found that it adapts well to most any pan that you'd want to use, but you would have to adjust your baking time accordingly so as not to overbake and I always line my pans with parchment paper.       Since these are candied fruits, no need for soaking them as such. You may soak the dried fruits, strain out the juice/alcohol, and put in same amount of flour mentioned. Should turn out great 👍

      I'm not sure if you could, I've never used a sugar substitute in this recipe. This being such an old recipe, I'm not sure how it would react, such as changing the texture or flavor of this cake.       Hi Tracey and welcome! Unfortunately, I wouldn't recommend using self-rising flour in this recipe. The eggs in this recipe act as the leavening agent causing the cake to rise. If self-rising flour were used, it would rise too much and would change the texture of the cake, possibly causing it to be dry and crumbly. I'm sure that you wouldn't be happy with the results.     Good recipe, but I would marinate the fruit on liquor of choice , add zest of orange, and age by dousing the cake with liquor.
    I like my fruit cake to have a kick.

      You can certainly do that, if you'd like. We don't particularly care for the taste of alcohol and orange zest can lend a bitter taste that makes most people dislike fruitcakes. This one is very buttery tasting and sweet. Also, the fruit is candied, so marinating it may not work as effectively. Of course, you could marinate the raisins. It's mainly just a matter of taste, so have fun making this recipe your own. Thanks for watching!

    I don't understand why these fruit cakes have to be made from scratch. Can't you simply use all those fruits/nuts with a modern box cake mix, but add stuff like the molasses and maybe extra butter and vanilla? I just think that would make fixing these cakes faster/easier.

If there's any raw batter on the toothpick, put it back in the oven for another 5 minutes and check again. Oven temperatures vary, so it could take longer in your oven than in mine. It could also be that your oven temperature was too high and it got done too quickly on the outside, leaving the inside raw. I hope you'll try this recipe again. Thanks for watching.

      No, I never have because the original recipe that my mother-in-law gave me didn't call for anything to be soaked, so this is the way that we've always made it. It does turn out a truly delicious and moist cake. Thank you for watching.

      Really, it isn't when combined with the other ingredients. It's very moist and actually, more buttery tasting. It has nothing in it that makes it bitter and most people who say that they don't care for fruit cake, love this one. Many tell me that it's the only one that they'll eat. Thank you for watching.

    Looks delicious but won't be making this cake for 2 reasons measurements given cup measurements 2 sticks of butter haven't got a clue dont they have metric measurements in the US 21st century??. Second reason 6 eggs too many if they were less in numbers could have used alternatives to eggs but not for 6 eggs. Looks delicious though.

      Hey there Dorothy. No, we don't use metric measurements in the US and I don't see that happening any time soon. However, I looked up the measurements for you. It didn't take long on Bing to find what I was looking for, so I hope it helps you. 2 sticks of butter = 227 grams. 360 grams of egg substitute = 6 large eggs. These conversions were pretty simple for me to look up. You can also go to Google and get a conversion chart. This is typically what I do when I want to convert a recipe to cups/teaspoons, from metric. Thanks, this is a very delicious recipe.
