Honestly the BEST panettone recipe I’ve ever made!! I’ve made at least 5 panettone recipes (one with sourdough started weeks before that was a total fail) but I was never satisfied with the texture, dry and thick, or the flavor. This recipe was the best Christmas gift: the homemade mold is perfect (just challenging to place the mold ring all over the dough, but I succeeded in the end) and the flavor OMG!! It was heavenly!! You did such a great work with this video, thank you so so much!!❤

I always appreciate comments like this. I am feeling somewhat confident in my bread making skills and was just wondering recently if I could make a panettone. This one’s a keeper recipe. I’ve made it over 2/3 days before with a Levito Madre and it’s a Labour of live to be gone in about ten minutes. I like how the dough gets the overnight in the fridge to make everything meld and give that special flavour. Making this tomorrow . Happy Christmas everyone ❤

This recipe looks very good and the texture of the baked Panettone looks fabulous. All soft and fruity not like the bought ones, dry, hardly any fruit always disappointing to eat. I do expect better but that is the way it is. I would really like to bake a Panettone this year and this recipe looks super. Seems way to much time and effort for most people in todays world .Thank God we have bakeries here in NYC that sell them ,because they are truly one of the joys of Christmas season. I'll stay with making Italian rum baba pastries which I can knock out in an hour or so. I did like your tutorial and I bet it tastes fabulous!
No, I suggest to use water to get a lighter texture. In Italy Panettone is a bread, and very rich because it features yolks and butter in generous amount, so it’s made with water. You don’t need to add extra fat with milk, it could turn out more dry in texture. Happy baking! 💕
Yes and no. Do you have a baking pan so tall (about 17cm diameter and 11cm high)? If yes, yes you can. If no, it depends on the size of your baking pan because it’s a large dough….if you make a larger but thinner panettone it will be less fluffy and it will bake in less minutes.

It turned out OK. The paper mold was a fantastic idea. My mixture was a bit too sticky and took longer to cook but that was my fault. Should have mixed it longer but I will improve the next time. Its a learning curve 😂

Hello! In refrigerator the leavening slows down a lot precisely because the temperature is cold. To make it rise quickly you have to put it in a warm place, for example in a slightly preheated oven at around 40 degrees Celsius and then turned off.

Hello! As I’ve written in the video, I’ve used a strong flour (with 13-14 g of Protein on 100 g) called Manitoba flour; you can use a strong bread flour with a similar protein amount that you can find in your Country.

Hi Edward! It's impossible to knead a sticky dough like that without a stand mixer and the folding method is easy: only 2 minutes for every fold series! The raisins water is too sweet and sticky. In Italy we consider Panettone a Bread!! I chopped my whole candied orange in large chunks ;)

I love to try out this recipe, I'll be using instant dry yeast, your recipe calls for many hours in the fridge for it to rise, can I just let it rise at room temperature? I'm sure it can completely rise within an hour, anyway why let it rise in the fridge, what's the difference, appreciate your advice, thank you
Hello! The higher is the temperature, the more fast it will rise. If you want to let it rise faster, put it into slightly preheated and turned off oven. It’s ready to bake when it almost reaches the mold edges. A long leavening in refrigerator gives a better flavor, a more digestible and soft Panettone. If you decide to put it in refrigerator to rise, consider that when you are making the folds (so the first 2 hours because you should make 4 folds every 30 minutes), you should place it into a warm place (like the turned off oven) so the heat activates the leavening in this first 2 hours.

Consider that you can easily skip dried fruit and substitute it with chocolate chips; you just need to put chocolate chips in freezer for 1 hour before use it, to avoid that the chips could melt while you’re touching or proofing the dough in a warm place. I think I’ll make a new Panettone video for this Christmas, stay connected 😉😘
I'm about to put mine in the oven. Though the dough rose, it remained sticky throughout. So, getting it in the papre mold was a problem and it did not rise in the last step. Could you please comment what could have gone wrong? Yeast is fresh.
Hello Maria! It’s just passed midnight here in Italy so happy new year! It’s totally normal that the dough is sticky, I said that and do not worry about that. If Panettone didn’t rise in the mold in refrigerator, you can place it in a warm place (slightled preheated and turned off oven) and let it rise there. Bake it when it almost reaches the edges of the mold. Hope this helps!

I doubled the recipe and made one for us and one for my daughter. Easy to follow the instructions. I had to add 5 minutes to the cooking time.

I love to try out this recipe, I'll be using instant dry yeast, your recipe calls for many hours in the fridge for it to rise, can I just let it rise at room temperature? I'm sure it can completely rise within an hour, anyway why let it rise in the fridge, what's the difference, appreciate your advice, thank you
Hello! The higher is the temperature, the more fast it will rise. If you want to let it rise faster, put it into slightly preheated and turned off oven. It’s ready to bake when it almost reaches the mold edges. A long leavening in refrigerator gives a better flavor, a more digestible and soft Panettone. If you decide to put it in refrigerator to rise, consider that when you are making the folds (so the first 2 hours because you should make 4 folds every 30 minutes), you should place it into a warm place (like the turned off oven) so the heat activates the leavening in this first 2 hours.

This is gorgeous and looks delicious but can you do a video with one that has chocolate, lemon or pistachio in it?🙏 dried fruit is not my thing. Thank you!
Glad you liked it! Consider that you can easily skip dried fruit and substitute it with chocolate chips; you just need to put chocolate chips in freezer for 1 hour before use it, to avoid that the chips could melt while you’re touching or proofing the dough in a warm place. I think I’ll make a new Panettone video for this Christmas, stay connected 😉😘

I'm about to put mine in the oven. Though the dough rose, it remained sticky throughout. So, getting it in the papre mold was a problem and it did not rise in the last step. Could you please comment what could have gone wrong? Yeast is fresh.
Hello Maria! It’s just passed midnight here in Italy so happy new year! It’s totally normal that the dough is sticky, I said that and do not worry about that. If Panettone didn’t rise in the mold in refrigerator, you can place it in a warm place (slightled preheated and turned off oven) and let it rise there. Bake it when it almost reaches the edges of the mold. Hope this helps!
