Butter 130g (½ cup, 1 tablespoon)
Sugar 100g (½ cup)
3 Eggs
Vanilla extract 1 teaspoon
Almond essence ½ teaspoon (optional)
Plain flour 200g (1 ⅓ cups)
Baking powder 1 1/4 teaspoons
Dried Fruit and Nuts 150g (about 1 cup)
Measuring cup size - 240ml
Baking pan 21x11x6 cm
Bake in a preheated Oven at 170c (338f) for 40 - 45 minutes

Hello, I have all The ingredients measured out in the kitchen ready to mix when I get up isn’t it awful I am 76 I’ve always loved cooking and baking I could spend all afternoon baking for my husband and three sons pies and cakes without a care in the world now I have to do it in stages as my back aches but I still love baking and I love fruitcake and I like the look of this recipe so I will let you know tomorrow how it turned out and if I liked it and I had no trouble reading the recipe and I am blind in one Eye Love and greetings from New Zealand originally a valley girl from Wales

This is Christine again I forgot to say why this fruit cake is so lovely here it’s not very often you you’ll get a recipe for a fruit cake that is not dark I think it’s an English thing a light fruit cake thank you once again

We were taught that if you coat the fruit in flour it won't sink. Looks lovely ill try this. It's basically like a Victoria sandwich mix.

Sultana, dried pineapple, dried papaya, red glazed cherries, the little green bits are dried melon pieces. You can use whatever dried fruit and nuts available ❤️

I don't see the mx fruit soak in water. Will that be ok no need to soak?
The ones in the batter become soft while baking. But if you want, you could soak them first and add. It’s how you like your fruits to be feel, isn’t it ❤️
