I am grateful that Sarah's (Sara's) attempt at this bake goodies, her honest personality shines, thank you sister, for staying humble and judge the tasting with heart.
For the ingredients maybe simple, but it is the kneading process is the science to having the best tasting outcome, along with plenty sprinkles of love in the baking/making process
Yet still, loved her humility and please Safia, do contact for teaching her to make it the authentic way and then Sara can put her own twist on it. I would love to be a part of the teaching via video (easier method), lol
As per the second runner up, Khadra, just one word sister, HUMBLE, can't win everything. Just by the look alone, Safiah's bakes looks closer or came close to the traditional authentic version.
I add herbs & spices to my bake, putting a twist on it, such as nutmeg, cinnamon cardamom and sage.
Also I used both cold and warm water. Starting out with cold water to form the crumble, then used the warm water to finish forming the dough; this is the tricky and scientific part, "TO OVER KNEAD or NOT OVER KNEAD" both, knead fast, but firm (no agression) show that dough whose the boss for ten quick kneads using wrist palm strokes folding as you knead.
Let it sit/rest for 10 minutes covered. Then knead again for the final rolling out for just 2-4 minutes softly, patting, using fingers only
Roll into whatever desired shape, not too thin or not too thick. Lightly oil the pan or if using a stone oven be mindful of the heat/flames
Brushed while warm with olive oil, very good olive oil, trust, the taste is deliciously yummy and healthier
    #Love you all
    Cheers
