Made these tonight. Filled a Jim bowie pellet grill with them for guests. Devoured in minutes. From after the first bite nobody spoke, nobody breathed, nobody wiped their faces. At the end everyone just looked at me, ashamed, and said thank you.
If you make these for a party you have to make A LOT. People devour them. I put salsa in the cream cheese. It’s really good. They come out perfect on a charcoal grill but they take forever.
This sounds and looks absolutely amazing. For any spice fans, I'd suggest just give the membranes/seeds a quick chop and throw it in the mix (I'll have to try this). Thanks Sam!

I've been making this recipe for a couple years now. Always a huge hit! A change I made is to crumble up the bacon and just sprinkle heavily on top. Makes it easier to eat and the jalapeños won't get too soft with the bacon still being fully cooked. DELICIOUS!
The vegetarians watching, myself included, are smart enough to know that you can also substitute Fak-on (fake bacon) or some other vegetarian bacon substitute.
I've been making Bacon Wrapped Jalapeno Poppers for YEARS! The Chirrizo is a new twist to me!!! I'll have to try that. But happy to see you use the Chive and Onion Cream Cheese!! That's my go too always! ONE BIG TIP.....I do this every time when I make them to make sure all taste buds can handle the spice. I soak my Jalapenos in an ice bath with salt after I scrape them out. I put them in a large bowl, sprinkle salt on them, fill with ice cubes, top off with water and then stick them in the freezer between 10 minutes up to 20 minutes. I've been to parties where they didn't soak the Jalas. People couldn't handle eating them. At least soak them for 10 minutes if you know most people don't mind the sting ;) Thanks for sharing (Yes, I do the tooth pick thingy!) Fantastic video. I like it way better than a certain G.R. cooking personality that tried covering the Frito Pie....WAY over done ;D (Love you G.R. ;) )

I did some baked chilli rellenos the other day, and they were good. Jalapenos, red onion carmilized, then cook with chorizo, then stuff poblanos with that mix and Monterrey jack cheese. Bake in the oven, and it's amazing.

Pro tip on these as I've made them about 10 times now, cook them in the oven @400 for about 25 - 30 mins. Then finish them off on the grill. The bacon cooks better, and no grease/grill fires to deal with. As always, thanks Sam, these are amazing, and the left over filling makes a great dip as well.

Pro tip at least on a Weber, (because I do these way too often) start the peppers with the ‘open’ side down before the cream cheese melts and flip after the bacon is seared and grilled off. Having cold cream cheese mix/chilled is key to the filling not melting out imo. Once the bacon is cooked on the first side flip the pops to finish. Banana peppers stuffed with hot pepper cream cheese is one of my favs. Make America cook again!

Smoking them does wonders as well. I let them get some smoke at about 170 degrees for a couple hours and then crank it up to 350 for 30 mins to crisp the bacon a bit. Fukking delicious
The most disappointing part of this was saying “we’re going to need 3/4 of a slice of bacon” I’m sorry but you NEED the full strip always, because bacon. 🤷🏿♂️
I make these poppers for parties and they are always a hit. Some things I’ve changed is cooking the bacon separate and making them into crumbles. Ensures the bacon is cooked exactly how I like it and makes it for a cleaner bite
Hey Sam - great vid, one thing I do differently is I start the jalapeno face down on the grill. The filling is not hot so it doesn’t spill out and by time the stuffing is hot and gooey, you flip and and finish. This helps prevent it from spilling out - keep it up

Use whatever you have. I've used breakfast sausage, no sausage, garlic chives (we grow them in our garden, along with jalapenos), cheddar, whatever. The poppers I made the other day were stuffed only with cream cheese, then wrapped with bacon. Still freaking delicious!

I really like using the air fryer for poppers! 330° for 13 minutes is just about perfect, especially since there’s no preheating required!

The trick to getting half of the stem on each half, is to cut it first, then the pepper.
