Roasted Sheet Pan Chicken with Crushed Olives | Home Movies with Alison Roman

  • If the idea of a sheet pan dinner does not excite you, trust me, I am right there with you. But this one feels different. Here, a chicken is roasted on a sheet pan (sheet pan dinner!), but instead of leaving the juices and sticky bits behind to be washed away in your kitchen sink, they're deglazed with vinegar, raw garlic and crushed olives and scraped up to make a gloriously tangy sauce. This gives you all the benefits of a skillet chicken, but made on a sheet pan. It tastes complex, *sophisticated*, and like you for sure put so much more effort into it than you actually did, and we love that! The quickness and ease of sheet pan roasting combined with the flavorful sauciness of a skillet sear? Swipe right, subscribe, etc!
As for the chicken you’re using- I like to use a whole bird cut up into ten pieces (two legs, two thighs, two wings, two breasts cut in half) because I think that everyone should get the piece of chicken they want (I enjoy a wing and a thigh, thanks). But if you’re wanting to just do thighs and legs, or perhaps breasts only, you should!
If you don’t like olives, I am shocked you’ve read this far. But truly, they are as important as the chicken here and make up the lion’s share of the actual sauce. THAT SAID! You could simply only use the herbs here (parsley, cilantro, a mix), or take a number of quick-cooking/already cooked vegetables and use them to make this sauce, too. Thinly sliced fennel, boiled and crushed potatoes, capers, fresh cherry tomatoes all come to mind.

Another reason why I appreciate Home Movies so much, Alison cooks in a realistic kitchen. I am not spending half of the time wondering how big is that kitchen, or how expensive are those appliances, or is that what a dream over the top kitchen looks like. I can make these recipes in my condo kitchen. @Alison's Thanksgiving video is the best example of what her mighty kitchen can do.

This is my new favorite recipe. I have made it several times. I tried it once with left over olives that had been marinated in olive oil with lemon zest and rosemary. It was fantastic. I later made it and put potatoes in the pan (the alternative for the potatoes was to plant them). Nothing is better than cooking in chicken fat.

I feel this as someone who really only eats meat that I've hunted/fished, so super rarely. I bet we could totally use some similar flavor profiles and themes for things like tofu, tempeh, TVP, beans, nuts, mushrooms, etc. Like her lamb/anchovy ragu I'm sure would be fantastic with a combo of mushrooms and walnuts that have been ground pretty fine in a food processor and sauteed until roasty-toasty, and sub the anchovies with a really concentrated mushroom soup flavoring (like mushroom Better than Bouillon).

I watch Alison Roman as a reminder to not take myself too seriously.

Alison combines competence, expertise, and creativity, with accessibility and a lack of pretentiousness. She has a great personality but doesn't seem like she's hamming it up for the camera. She includes so much vegetation and freshness in her cooking, but still makes "real" food you'd actually want to eat instead of living on kale salads and boneless, skinless chicken breasts.

This recipe straight up changed my like (so did stew #2). I added cranberries and put even more vinager.... I dont know how Allison and I have such similar palettes but I feel like she makes all of these just for me-
