  • Learn how to make a Classic Cherry Cake from scratch. This old school recipe is the world’s best, that melts in your mouth delicious and this recipe is so easy !

    How to make Classic Cherry Recipe Cake

    Recipe Ingredients:
    200g Softened unsalted butter
    250g Glace Cherries
    200g Castor sugar
    175g Egg
    200g Plain flour
    85g ground almond
    Grated zest 1 lemon & juice
    5g Baking Powder
    900g loaf tin or 20cm round cake tin
    Method:
    1. Preheat the oven to 180c / 350f
    1. Oil & line the base of a 900g loaf tin or a 20cm round cake with greaseproof paper.
    2. Put the butter and sugar into the bowl of a freestanding mixer with 3 speed, then beat until light.
    3. Scrape down and start adding in the egg over 5 mins on 2 speed then mix on 3 speed for 5 mins
    4. Mix together the cherries & sifted ground almonds, with a tablespoon of the flour. Now in a 2nd bowl sift the flour & baking powder together
    5. Scrape down the mixing bowl now add in the lemon zest, flour & cherry mixture, now add in the juice of the lemon fold lightly in evenly into the batter & fold until clear.
    6. Put the batter into the tin and smooth over the top add some crushed sugar cubes or granulated sugar and now pop some cherries on the top
    7. Bake for around 1 - 1 ¼ hours or until golden brown and a skewer inserted in the middle comes out clean.
    Please note times can vary it’s down to the types of ovens and the tins size i.e. small tin may take about 60min large tins about 90min
    Tip : ( add a small amount of Ice into oven at the same time as baking this help )
    6. Remove cake from the oven then leave to cool for 30 mins then remove from the tin, peel away the paper and leave on a wire rack to cool completely before slicing.
    The Cake will keep in an airtight container for five days

    your bakehouse reminds me of my 20 years as a baker , the oven you fired the cake in is really old , i remember at doughschool they had a rotating gas oven , that was interesting and a mixer with what looked like forks , im a nurse now but enjoyed my time as a baker , your cherry cake is perfect

    Thanks for the recipe, made it for the family and they loved it. I wasn’t sure how many eggs to add, and added 3 medium sized eggs. How many do you use in your recipe?

      Hi 175g = 6oz which is based 3 eggs, as a boy baker in the 1970s I was told that I must weigh the eggs, so funny thing is I sill do, as professional I have to make sure I teach everything I know 😀 and not to cut corners 😉 I have lots of different old recipes coming up soon 😉 I have just started Christmas recipes now 😀 laters Steve 😀

    I'm an ex pat living in NYC. Everything was great!!!! Reminded me of home. I used Swans flour....maybe a mistake? Problem is rather crumbly and soft. What was wrong? Best!!!!

      Hi today we have so many different types of flour just in the UK, and of course the US is the same, now from what you said yes it's most likely flour, in the bakery when I an making this recipe I have used, soft cake flour, all purpose flour and a very low gluten bread flour all came out the same, now in the bakery I don't add in the ground almonds, because of so people who have a nut problem, so basely you can leave them out and replace with flour, hope this will help you 😀 laters Steve

    Just made your cherry cake it was lovely only the bottom of the cake was slightly hard. Any ideas what I did wrong

      Hi some times ovens have to much bottom heat, good tip is pop some ice on to the baking tray and bake the cake tin on that tray,this slow down the baking on the bottom of cake and also bake a nicer cake because of the steam, also you can use paper under the baking tin. Hopefully this will sort that out, ovens are a nightmare every body has a different types and all Bake different laters 😀 Steve

    Ive baked your Cherry Cake recipe numerous times now. I’d like to make a Lemon drizzle cake now. Can I use the same cake batter, leaving out the fruit? I can’t seem to find a Lemon drizzle in your recipe page.

      Hi yes of course, I was getting round to lemon drizzle cake, it's the same recipe with extra lemon zest 🍋 and hot lemon juice with icing sugar for the topping 😀 I can taste it now yummy 😋

    lot of comments on this one i remember when i was a lad in the bakery and when the owner made cherry cake he would send me to the chemist to get some titanic acid , its no joke it really exists and he put it in the cake to stop the cherries sinking.

    I just made a loaf and a round, they look and smell amazing. I didnt quite have quite enough egg so I made up the 20g weight with milk. What would be a more appropriate egg substitute for tiny amounts to save me wasting an egg please? 🥚

      At the bakery when I am short of egg I just add in water to make up the the amount, very much like you did, in the bakery I only have dried milk powder 😀

      Just mix into ground almonds or flour all helps, funny thing is I always wash the cherry 🍒 and dry them before I make any cakes mixers, if you want to make something a bit different is using fresh cherry, makes a lovely cake 🎂

    Thank you for this recipe, it looks good. Can I replace the Glace cherries with Mixed dried Fruit, or just Sultanas. Should I also wash and dry the dried fruit first?

      @@pegasus8718 yes 😀 I funny thing this week for making Hot cross Buns in the bakery, the boxes of fruit was very dry and stick together, and lots of seeds, quality was not the best, so basely I washed them and they came back to that nice quality, drying them off with coth, the hot cross buns was the best 👌

You did a demo on pulling the hairs away from the wrap around brush. Glad I did, there are some excellent recipes to try on your baking channel.😘

      Yes it's the same, if you use fresh they'll most likely sink to the bottom of the cake, best to use glasses pineapple 🍍 enjoy 😉 laters

    Unfortunately although I washed, dried and dusted the cherries, they all settled on the bottom of the cake. However, I have to say that it’s the best loaf cake for texture, moistness and cutting quality that I have ever baked. I will try a slightly stiffer mixture, but even leaving the cherries out, it has an amazing lemon flavour.

      I had the same problem with cherries when I use different types of flour, and also cherries that hold to much sugar, the list can go on, the cake mixture itself I use for a base to most of my cakes even chocolate, very easy recipe and taste great, add in extra lemon and lemon sugar topping this is to di for 😀 laters Steve 😀

      Cherry cake is round as a circle blood on the guys forehead which is left hence the injury on the right side of the forehead

      Some times it's not the cherries but the mix may be to soft and need more flour, it's also happened to me when I used a different flour, to be honest it's luck 😀

    you said bake it for 1hour mine was burnt after 20 minuts at 170

      This is due to oven, each oven does it's own thing, if you read your instructions for your own oven this will help you out baking, no oven is the perfect, me a professional Baker for over 35 years I do know about ovens, hope this helps you out laters

    there is no almonds in a traditonal cherry bun

      There a different between a cake and a bun, and the Traditional means old fashioned, so almonds can be used in a Traditional Bakery recipe that is 1947 because it is an old recipe, if want a cherry cake without almonds or Buns you just leave them out and replace with flour or rice flour, hope this helps you laters
