Homemade Cowboy Enchiladas

  • I love a good enchilada but what makes them even better is if you have the homemade sauce. This homemade enchilada sauce is full of flavor using dried chiles and cooks up to a good hearty consistency. Even better when it’s baked in cast iron! Hope y’all enjoy!
    Homemade Enchiladas
    1 lb. hamburger meat
    1 yellow onion, chopped (divided)
    1 (4 oz.) can chopped green chiles
    Salt and pepper, to taste
    12 dried guajillo chiles
    3 teaspoons minced garlic (divided)
    3 (8 oz) cans tomato sauce
    1 ½ teaspoons chile powder
    1 teaspoon cumin
    2 teaspoons ancho chile powder
    1/3 cup chicken broth
    8 flour tortillas
    3 - 4 cups shredded cheese
    1. In a cast iron skillet, begin browning the meat over medium heat. When the meat begins to brown, stir in ½ the yellow onion and green chiles. Season with salt and pepper to taste. Continue cooking until the meat is cooked through. Set aside.
    2. In a pot, add the guajillo chiles with ½ cup water, the remaining ½ yellow onion and 1 teaspoon garlic. Simmer over medium heat until the peppers soften slightly.
    3. Remove the onions and peppers from the pot. Remove the stems and the seeds from the chiles. Chop and place the onions and chiles in a blender. Stir in the tomato sauce, 2 teaspoons garlic, chile powder, cumin and ancho chile. Salt and pepper, to taste. Blend until smooth.
    4. Pour the mixture back into the pot. Add the chicken broth and simmer on medium-low for a couple minutes, stirring occasionally.
    5. Spread a light, even layer of the sauce on the bottom of a 12” Dutch oven or large casserole dish.
    6. Spoon the meat mixture onto the tortillas, sprinkle with cheese and tightly roll. Place in the Dutch oven and repeat with the remaining meat, cheese and tortillas.
    7. Spoon the remaining sauce over the enchiladas. Bake at 350 degrees F for about 25 minutes or until tortillas soften. Sprinkle an even amount of cheese on top and continue baking until melted.

    There not Enchlitas Rojas(red) / Callejeros (street vendee style) from north Mexico style but that sauce you made is very similar to the kind my mom makes it real chill with spices, onion, garlic and made in to the sauce close to ingredients you put. I like that sauce with ether atuthitic queso frescio or I call Tajono (Mexican Texan) style any cheses. Meat think it TexMex but it is good. Now one differents anywhere in Mexico and Texas( Mexican or TexMex with different levles of Tex and Mex) is useing corn tortillas. My aunt been to New Mexico and Arizona the local version from Mexian (when then those states where part of Mexico people) and Natives from those parts hybrid culter dishes has enchlatas serived tge tortillas lyered with cheese and sauce . Oh yes super hot food can burn your mouth and troat beter to let warm foods be so but not super hot. Yes the premade Amerinased enchilada ssuces is ligth not that tasty like you said. I get confused with all tge button choses on blendrrs too. Very nice video Kent. I

    Oh man mr Kent i absolutely love all your videos. I cant believe i was watching outdoor cooking on youtube for years without seeing any of yours until the other day. I love all the wonderful things you do and make. I used to be a chef myself and my heritage comes from south of the border and your cowboy enchiladas really impressed me to where my wife demanded we give it a try.     Good looking sauce, two suggestions:
    1. Corn tortillas, fry in in oil until soft and pliable. 2. Chop one whole onion a one can black olives and put in meat, about 1/4 of onion & olives to put on top with cheese. Enjoy

    Kent, another take, my grandmother's system.
    Sauce, just about how you made it, but a bit, uh,
    runnier. Corn tortillas, not flour.
    Fry the tortillas one at a time, in some oil, to
    soften them up. A few seconds. Tortilla goes
    in the sauce, again for a few seconds, then, on
    a plate. Cover with (your choice) chopped
    onions, grated cheese, lettuce, (Yes, lettuce!)
    fried meat (hamburger or ground pork or even
    ground chicken.) Now top with as many more
    as you want. Sour cream and fried egg finishes
    the stack.
    I have recently found out this is "Sonora Style."
    (Dad and his parents were born in "The city of
    Small Dogs" Chihuahua Mexico.)

    These also work well if your cast iron pan fits inside your propane smoker. I made these again last night, to avoid using the oven in the house, put these in my propane smoker (280 deg.) turned out great. Hard lump is expensive and I don't always have time and it's fire season. Next time I plan to add some smoke when I melt the cheese on top, last 15 min in the smoker. So glad we found this enchilada .

    I wonder if yardbird, pig or shrimps would be as good? Love my beef but it doesn’t love me as much anymore so I can’t eat it like I use to. I pick my beef choices carefully (Ribeye or Porterhouse) lol.

    This is one of those videos that should require us to reach in and grab us a plate of it when its done..like frequently happens on this channel. Have eaten, but suddenly hungry for some REAL enchilada's..and none of them 'from a place that makes them with canned ingredients' either! Can't stand canned enchilada sauce, but will definitely try this sauce shown here.

    Fine dinning YUM he hee Can't sleep on dirt > NOW PINE NEEDLES YEA BUDDY!!! sleep like a LOG People don't know this> pine needles beds are very comfortable! where ever there pine trees> YOU GOT A BED! insect and things want go on top of the pine needles! IDK WHY? WAY IT IS ! fine a bed, with no sticks, limbs or cones, fall rite to sleep

    Im with you Kent on the flour tortillas. There is more than one way to make enchiladas. People seem to think there is some magic book that says, "only use corn tortillas" there's not. It's all personal preference.

    Yeah, here in southwest Arizona it's pretty common to have a very good supply of some mighty tasty enchiladas this time of year !
    That and some cooler weather makes it a nice time of the year !

    Although, I bet, Santa Claus needs to bring Kent an older model of blender, so he ain't making all those red lights blink like it is Christmas day! 😁

    I don't know CKR. The way I was raised in Oklahoma , we used Corn Tortillas for Enchiladas, and Flour Tortillas for Burritos.

    get a oster blender or some other "KISS" compliant brand. That having to reboot the blender, thats a paper weight in my book.

    11:35 Look at that hand. Not the purdy one but the otherin. That thar is a work'in hand. When you shake that one, you know whatever you agreed to will be done. You don't need no written contract just his word. My Great Grandparents had a beef ranch and a dairy ranch and those hands are the ones you want working for you.     I don't think the blender liked the generator. Some appliances and electronics are picky/sensitive about the way the electricity flows. Generators often produce a choppy unsteady flow of electricity unlike when you plug things into the house.

    Only thing I would change is use corn tortillas instead. They don't get as soggy and give a better flavor.

    What I recommend you use is corn tortillas and next time. Fry them a little bit before you add them to the Dutch pot.

    You should try frying thos tortillas in some grease before rolling. Makes the tortillas nice an pliable and tasty.
