My grandma always made the best chicken pie. No veggies, just chicken, a thick broth with celery seasoning, chopped boiled eggs and a pie crust for the top. It took me years to get that flavor after she passed. But I got it. I could eat it morning, noon and night and be in heaven. Love these videos with you two. ❤️

I loved this collaboration, you and Ethan and pretty much the only two "foodtubers" that I watch on a consistent basis, you because your recipes are so goddamn good and Ethan because his food science videos give me big Good Eats vibes. @brt5273 I mean, there sometimes is a "proper" way to eat things. Like sushi is usually eaten in a particular order (from lightest tasting fish to most intensely flavored fish) so that you can taste the subtle flavors without overwhelming your tastebuds. And from the little I know about real ramen is that it should be eaten fairly quickly, though I couldn't tell you if that's for good reason or just tradition. But sometimes tradition can be fun, too. It's a great way to interact with cultures across time and space

I'm exactly 6' and can obviously see Ethan's elbows barely reach a standard kitchen counter so it's not hard to figure out. Ethan is barely 5 foot on a good day.

To whom it may concern: I use all that leftover roja sauce for Chilaquiles, and they're amazing. Any leftover roja sauce can also easily be frozen for later.

Awesome colab, two of my favorite youtube-cooks! I love the dynamic, and really enjoyed the colab on Ethan's channel also. It did really stand out to me that you guys say 'like' a LOT. It got a little distracting at times.
My mom made the typical Mom enchiladas -- but she put chopped green and black olives on top, and man those pops of salty olives were awesome! I make a total shortcut version, where instead of rolling individual enchiladas, I layer the corn tortillas, meat, cheeses, and sauce like a lasagna and bake it. That way you only have to cook the meat. Still topped with olives though, thanks Mom! ❤
Did anyone else notice when Ethan stops chopping the meat he leaves the knife handle hanging over the cutting board and Brian pushes it back for safety reasons? Brian is a trained chef who has worked in many restaurant kitchens. My guess is leaving the knife handle hanging over the board is a nono. Much like leaving a hot pan handle extending over the stovetop when you have little children is not safe because they will reach up and grab the handle and pull the pan with hot food off the burner.
Great concept! I love Ethan. Been following him for a long time. The enchiladas looked off the chain! I enjoy all the regional variations of interior Mexican food, but I'm from central Texas and the style of TexMex I grew up with there will always be the epitome of what I think of when I think of Mexican food. As a result, when I create my version, it's based on that style with my own bumped up spins. I love the idea of brisket in the filling of these enchiladas for that sort of bump. As for peppers, I like fresh jalapeños but I de-seed and de-vein them to control the spice. It's more that fresh green taste I'm into than the extreme heat. Myself, I would have added some of those diced along with some fresh onion to the filling and that would be my over the moon moment. As for tortillas, we shallow fry them in fat for just a few seconds. This makes them pliable and flexible and I never have a problem with tearing. Also, I like thick enchiladas so I either use large tortillas...hard to find...or I overlap two regular sized to insure I get a nice roll that holds together.
My favorite Mom's style meal is taking pot roast leftovers, shredding up the beef, and mom throwing some mexican seasoning, jalapenos, cheese in along with it, and then wrapping in flour tortillas and deep frying. Its so simple, but the beef is succulent and has so much flavor, the seasonings and peppers just add to the deliciousness, sour cream and salsa on the side if you want...
22:22 already shredded cheese has a weird coating i don't use it. I've been told its preservatives. Just take the time to do it yourself your food will appear and taste better you can even turn it into something the kids can help with or a lot of food processors have a shred attachment

Awesome colab, two of my favorite youtube-cooks! I love the dynamic, and really enjoyed the colab on Ethan's channel also. It did really stand out to me that you guys say 'like' a LOT. It got a little distracting at times.

My mom made the typical Mom enchiladas -- but she put chopped green and black olives on top, and man those pops of salty olives were awesome! I make a total shortcut version, where instead of rolling individual enchiladas, I layer the corn tortillas, meat, cheeses, and sauce like a lasagna and bake it. That way you only have to cook the meat. Still topped with olives though, thanks Mom! ❤
You know, that might be the trick. I had chicken enchiladas the other day and I just couldn't get it right.
Did anyone else notice when Ethan stops chopping the meat he leaves the knife handle hanging over the cutting board and Brian pushes it back for safety reasons? Brian is a trained chef who has worked in many restaurant kitchens. My guess is leaving the knife handle hanging over the board is a nono. Much like leaving a hot pan handle extending over the stovetop when you have little children is not safe because they will reach up and grab the handle and pull the pan with hot food off the burner.

The enchiladas looked off the chain! I enjoy all the regional variations of interior Mexican food, but I'm from central Texas and the style of TexMex I grew up with there will always be the epitome of what I think of when I think of Mexican food. As a result, when I create my version, it's based on that style with my own bumped up spins. I love the idea of brisket in the filling of these enchiladas for that sort of bump. As for peppers, I like fresh jalapeños but I de-seed and de-vein them to control the spice. It's more that fresh green taste I'm into than the extreme heat. Myself, I would have added some of those diced along with some fresh onion to the filling and that would be my over the moon moment.
As for tortillas, we shallow fry them in fat for just a few seconds. This makes them pliable and flexible and I never have a problem with tearing. Also, I like thick enchiladas so I either use large tortillas...hard to find...or I overlap two regular sized to insure I get a nice roll that holds together.
How did he chop up all that brisket and not eat any? Props to Ethan!!

My favorite Mom's style meal is taking pot roast leftovers, shredding up the beef, and mom throwing some mexican seasoning, jalapenos, cheese in along with it, and then wrapping in flour tortillas and deep frying. Its so simple, but the beef is succulent and has so much flavor, the seasonings and peppers just add to the deliciousness, sour cream and salsa on the side if you want...

22:22 already shredded cheese has a weird coating i don't use it. I've been told its preservatives. Just take the time to do it yourself your food will appear and taste better you can even turn it into something the kids can help with or a lot of food processors have a shred attachment
