Hey Cowboy! My Gma made this- in the same way except only difference, is she didn’t add liquid to the cornmeal. She added the salt and baking powder etc BUT- she sprinkled the dry mixture on top of the filling- to completely cover it about 1/2 inch thick. Then slowly poured water over the top. Cover and bake. It made the most amazing moist tamale pie crust. Tasted just like a tamale! I think you e inspired me to make this tonight! YeeHaw from Laramie Wyoming🤠
Fine cooking! Just got back from quarantining myself on the Trinity river in East Texas. Cooked up a squirrel stew and made a cherry cobbler in my Dutch oven with some hot coffee in the campfire percolator. Had a great time and thought about your cookin' Kent. Y'all stay safe! I'm 68 and thank goodness my Boy Scout leaders and grandmother Keith taught me how to cook!
I've been making this on average of once every couple of months since early on in the pandemic. It's so dang good. I often use fresh hatch chiles and it makes it even better. Thanks as always, Mr. Rollins!

Hey Kent. I've been using cast iron for decades. I've tried every trick in the book to keep it non-stick and your way is the absolute best. Put it on the burner, get it hot, rub it down with oil. It's the quickest way. Fantastic, works every time. Thank you
Kent my good friend, being a 57 yr. old Irishman from rural Ky., i always mention that on ethnic recipes as we don't have any no where close, & i'd have to drive to Lexington, Ky to eat or for ingredients, appx. 80 miles, but it looks good, the only ones i've seen anywhere close are husked in a jar &( 40 miles away at a walmart) probably soggy. okay - this is officially YUM! I used everything out of the pantry that I canned myself tho - stewed beef, corn off the cob, tomatoes, bell peppers, canned onions, shelf table canned butter. Coriander and cumin from my garden last year plus fresh oregano. Only part store bought was the masa, cheese, and baking powder. So awesome to use home canned products and make something so Easy and tasty.
Love you all, people and tail wagon furry friends. About 1958 dad was offered a good job in San Antonio, Texas. I love that place and sure miss the great real Mwxica. food. Most states and cities would have hot dog stands, Texas had authentic Tamales. I am truly enjoying cooking and eating your recipes. I made this last night, and it was really good! I added and show chili powder and chipotle and a little Tabasco sauce, I like it spicy. Baked it in my 13 inch skillet. If you’re baking it inside and in the oven, I would recommend putting a cookie sheet underneath, because mine kind of overflowed

My grandmother got me addicted to hominy. She makes the best chicken hominy soup. Her secret, chili pequin. Plant a bush in your yard and you’ll never have a problem slicing up a dish.

Those on the front lines like our incredible service men and women, first responders, medical professionals and hospital staff are easy to see and appreciate(I know I certainly appreciate them). Those of us working long hours in the lab toiling away to do our small part to easy suffering and increase health and happiness often feel overlooked, a few words of kindness mean the world!

Darn Kent..I've loved your videos since you were under 100k subs...I've watchd dozens and dozens of videos...I've bought your seasonings many times (my all time favorite!)....I've shared you with my dad and friends....but THIS video was the first one to bring a tear to my eye. My "Mamaw Russell" was from South Texas and when she migrated to Mississippi she brought with her an amazing recipe for Tamale Pie. I'll NEVER forget those Sunday dinners when all my cousins and my sister would sit at the "kid's table" and eat tamale pie while the grown-ups would eat at the big table waiting on the Sunday NFL game. It's a memory that warms my heart. The only difference I can see is that Mamaw would use black olives in her pie. But that's minor stuff. THANK YOU for taking me back 40 years Kent!

Kent, I made the tamale pie tonight minus the peppers (the doctor said no). The combination of the masa and the hominy (which I haven't eaten since my grandparents passed away) was just perfect! My wife, who usually sticks to a standard menu, actually went back for seconds. When she took her plate to the kitchen, I could hear her sneaking another spoonful from the pan. I think tamale pie just got added to our standard menu rotation! I do all the cooking, so I know how to keep a happy marriage. Thanks for your help with that!!
My wife loves tamales, so I bought a bag of Masa and made the tamale pie. Not exactly the same ingredients but pretty close. My wife absolutely fell in love with it. Thanks CKR. Going to do a variation with chicken, olives, and whatever else wife suggests. Love the channel.

Traditional Tamales are made with pork, or beans. Many different regions, have their own take on it. Smoked is OK, as you saw, he put in that mesquite seasoning. Add a little bacon fat, or the like, to keep the pork from loosing that juice. Maybe, that's outside of your parameters healthwise? I have another solution, If it gets too dry. Add enchilada sauce, after, (Red, or Green), to your liking.
Man, that just looks so good. I'm reminded of cottage pie, but this looks so much less bland. I could imagine using some canned chipotle in adobo in addition to the jalapeno would be very nice, a bit of smokiness. I'll definitely give this a try. Keep it up

It's under control but it wont be finished for a few days yet and my range is in the garage! Making this this coming weekend. Substituting the ground beef with smoked pulled pork. What's your thoughts on this?
Traditional Tamales are made with pork, or beans.
Many different regions, have their own take on it.
Smoked is OK, as you saw, he put in that mesquite seasoning. Add a little bacon fat, or the like, to keep the pork from loosing that juice. Maybe, that's outside of your parameters healthwise? I have another solution, If it gets too dry.
Add enchilada sauce, after, (Red, or Green), to your liking.

Man, that just looks so good. I'm reminded of cottage pie, but this looks so much less bland. I could imagine using some canned chipotle in adobo in addition to the jalapeno would be very nice, a bit of smokiness. I'll definitely give this a try. Keep it up

Good thinking Mr Rollins! I'm going to make this tomorrow. My kitchen is upended right now because a leaky dishwasher totaled the floor. It's under control but it wont be finished for a few days yet and my range is in the garage! Anyway, Ive got my dutch oven that hasnt been used since I was stationed in germany 20 years ago. got her greased up and ready to roll. My family and I thank you for the idea!

This is now my favorite when want tamales..I created tamale pie last week (tamales+chili) forget that!...when my dad made chili, he HAD to have 1/2 inch tallow on top!!!!!
