    When I was a kid my mother used to make tamale pie and I loved it. I am 67 now, been married 40 years. A few months ago I tried describing to my wife what my mom used to make, I couldn't remember what she called it and didn't do to well describing it. When I saw you making this I recognized it, looked at the title and "That's it Tamale Pie!" I brings back memories and looks good.

      Mark Chamberlain I grew up with tamale pie too in Carlsbad NM. I’m 71. Our’s was gringo style bc we didn’t know any better then. It seems like it was ground meat,onion, garlic, tomato paste, tomato sauce, chili powder, and the topping which was made with corn meal. That’s all I can remember but today I would substitute fresh red chili sauce instead of paste and tomato sauce and do the masa harina topping and call it good. Maybe a dollop of sour cream on top!😬

      Janice Scott- That sounds really good! I am a New England farm wife , but love to try new recipes. Ms. Lori has great recipe ideas. I have leftover chicken and soft corn tortillas. Think I will try rolling those full of seasoned chicken and pouring this sauce over it and serve with rice.

    Love the tamale pie recipe!! I'm a fellow Texan, even though I live in Oregon now. Loved seeing Mr. Brown in his overalls. My daddy wore overalls, and hardly anything else except for church. We even buried him in a brand new pair, because we thought he would be pleased. Thanks for your great videos, I love your country ways.😊

    When I lived in Knoxville, there was this little "off the beaten path" place, (I had to have someone show me how to get there). I used to go in and so many great Mexican dishes. I used to get a "full house". (Tamales in the bottom of the bowl, chili con carne over it, diced onion and chilies, and melted cheese on top. You have taken me back 35 yrs.

      I make that too! It's my quick Go To meal when I'm hungry. I think I bake on 350* at 30 or 40 min.

    I remember my grandmother making tamale pie.
    She would always put the Masa into the pan first using her hands to spread it out and push it up the sides I'm about an 8th to a quarter inch thick.
    Then the feeling would go in and she would top that with sliced cheese and olives.
    I remember her boiling the Masa mix like you would do a polenta so everything was cooked only thing you needed to do was allow everything to come up to temperature and the top of the cheese caramelized a little.

    I agree with you mam, there’s nothing like home cooked Mexican food. It’s a blessing to have a Mexican mom that makes you home made tortillas, tamales, caldos etc. etc. I’m very glad you appreciate our food. A very loving home.

    Hello i made a tamale pie. I made my topping with corn meal ,cheese ,milk (scaled milk) I also added a can of sliced black olives and a drained can of whole kernel corn to meat mixture. Spread topping on meat mix in casserole to bake
    Very good

    So I'm sitting here going through some old papers and watching this. Sounding good, getting hungry. Lori, seriously, the very next paper I unfolded was a recipe sent to me by my (late) Aunt J in February 1988 for her "Amigo Pie". I had to stop the video for a minute to read over it, remembering the visit where she made it. Her recipe is similar to yours with the addition of 1/2 cup each sliced olives and diced onion and 1 TBSP Chile powder in with the meat mixture. The other difference was that she added 1 cup shredded sharp cheddar and 1/2 cup sliced olives to the masa/cornbread mixture and put that in the casserole dish first, then poured the meat mixture in the center of the masa mixture. Topped with an additional 1/2 cup shredded cheese and sometimes some additional olives. I recall her garnishing with a dollop of sour cream. It was so good ... as I'm sure your recipe is. So now I've definitely got to make this. Thank you not only for this lovely recipe... but the added memory of a favorite Aunt.

    I made this for dinner last Saturday night..., it turned out fabulous..., thank you for the recipe ! I added some garlic, onion, jalapenos, and a can of rotel in with my meat.., and used my large iron skillet..., turned out so good. The masa harina really adds the "tamale" flavor to the dish - I really appreciate this recipe as it will now be in my arsenal for quick dinners....

    I worked at a hospital just outside of Houston years ago and the tamale lady would come by on payday and we bought her tamales every time!! So good. I’m drooling at the memories!

    I LOVED your video. I could not stop watching it. You make tamale pie like my Mother used to. We lived in Santa Barbara, CA. Your description of your neighborhood in Texas reminded me of mine in CA: I had homemade tortillas all my life from the neighbors that were from Guadalajara, Mexico. Mexican food is my favorite food. My Mother learned to make Chile Rellanos from Mrs. Gonzales and we had them on the holidays with our Soul Food dinners because we all were so in love with them.     Holy Moly Miss Lauri, I lived in Houston,TX from 1949 to 1956 and visited my grandmother's home until about 1980s. Tex Mex cooking and Tamale Pie was practically my baby food.
    No wonder I love your shows...we're probably related

    OMG...love mexican food! I was born and raised in Houston and worked all my life in Houston...I moved south of Houston to a small town called Damon. Lived there 14 years, met my 2'nd and now husband and we retired and moved 350 miles up to N.E. TX...homesteading and raising as much of our own food as we can...I will def. be fixing this! Fabulous!

    Since we are secured inside, I decided to make a large batch and share with a lot of our Mexican friends to see what they thought!! I am telling you, they couldn't believe the flavors and how close it tasted to the real thing!! They could not believe that it took me an hour from start to finish, thank you for your ideas!       yes Kathy it's true, the humidity plays a big part in how much liquid you may need, that's why you should add a little liquid at a time to your dry ingredients 🙂

      Especially during high humidity or drought. Makes a big difference 😋. Have you ever used creamed corn in it? We use A LOT of green chili's and cumin in Southern Colorado. They're great in a breakfast hash too😋

    Oh my! One of my favorites. I had been lucky to enjoy some authentic tamales made down at Four Points. Some Navajo women made them. I cannot wait to try your pie. I do prefer easy. Your husband is so sweet, and y’all are blessed to have each other all these yrs. God bless you both. 🙏♥️

    Oh my word...I made this for the first time tonight and it is SO GOOD!! I’ve made a stuffed cornbread using a similar filling but I wanted to try something different.       @@JoeBlow_4 I agree with you fully. It is not a small thing. It's highly significant and memories associated with food, particularly recipes stay with us and can last a lifetime.
      Lori talks about comfort food. I believe that we have many, but we all have our No.1 Comfort Food. Mine is a common poor family's supper. It is immensely associated with my Grandparents. My Granny's Beans and Cornbread with Chow Chow. They were rural country folk from Tennessee. Nothing bringing up the comfort, knowing how much love they had for you and just nostalgia more than this meal for me.

    I grew up on the north side of Pasadena, known as “Little Mexico”. Love homemade tamales! So much better than what you get in a restaurant!

      Jabber Jawz Yes, my mother many year’s ago used cornbread mix in her tamale pie. I just wish I could remember exactly how she made it. I know she used tomato paste and chili powder. But if I made it today I would use red chili sauce! I would love a slice right now!

    Using masa flour is just plain inspired! Most recipes use cornbread, but this is so much closer to a 'tamale' pie! Love it.

    this is the 3rd time I'm making it. OMG the butter makes the topping. I added corn, peppers, onions, and a can of pinto beans to my ground beef, covered it with your masa topping, it's a winner for sure! Thanks for having a great channel Lori!

    Thanks for this video. I know this method, but I love it so much, I watched your video anyway, to see if I could learn any new tricks.
    It is great using cornbread batter, but masa harina does make it taste more like an individual tamal. If you cover your batch with wet corn shucks and cover with a foil tent, it tastes even more like a hand rolled tamal. I love the skillet version; because I can load up on extras, as you did with the cheese. Personally, I love it with cheese, onions, chopped garlic, pepperoncini and olives. I serve it covered with chili and a spoon of sour cream, with guacamolé, chips & salza on the side.

    Love this recipe. I made a double batch of masa and put half in the bottom of the pan, put the meat mix on top of it and the rest of the masa on top. Great.👍

      That was how my mother made it. She may have used 2 layers of masa because it was cheaper to fill us up on the masa rather than double meat. She cooked the masa on top of the stove like polenta before layering it, then baked in the oven.

    The Mexicans use tripe to make menudo. It’s a brothy soup. It’s very delicious but I couldn’t eat that either now that I’m older. Homemade tortillas are the best. Thank you for taking time out to share your recipes.

      It really is a delicious soup. Any fat is skimmed off during the cooking process. The tripe is very thoroughly washed an cleanest prior to cooking. With the right seasons it is one tasty soup. Fresh corn tortillas with a hint of melted butter shoot make it a an excellent meal on a cold day.

    FYI...I noticed that Costco is now carrying the Organic Chicken as well as the Organic Beef Better than Bullion in 16 oz. jars for same price that I paid for the smaller jars on line.     My mom put olives in the Mesa mix...I loved it. Sometimes she would put a can of creamed corn on either side, the hamburger mix or the Mesa mix. Talk about something so great! Thank you, as always for helping some of us remember what we grew up on and how wonderful it was!

    Thank you for the tip on putting oil on the back of the spoon to spread the masa. I made Tamale Pie like you using the same ingredients and a castiron skillet. This tip will make it much easier to top the meat mixture.

    The very first time I tried tamale pie was when I stayed the summer with my cousin Jeryl and his wife Emma for the summer, Emma made my first Tamale 🥧 pie she added whole carnal korn and pieces of black olives and I think we mostly eat all of it. Your video brought back a lot of Great Memories and I have yet to eat it again. It really was Delicious 😋 thanks for a wonderful video

    I worked with a Mexican guy. We talked about food a lot. One thing he said is that Abuela's tortillas did not taste the same in the States as they did in Mexico. I asked what the fat component was in the US and he said shortening. I figured that in Mexico she used Manteca. There IS a taste difference!

      There is a big taste difference and mouth feel between lard and shortening. I figured that out the hard way when I first started making tamales and tortillas. The natural fat also carries the flavor better.

    My mother-in-law taught me to make this and its one of my husbands favorite dishes,;though I added hominy and olives and just the cornmeal topping. It’s delish😋but I’m going to try making the masa next time. Thank you for always showing us new recipes on food I grew up eating. Love , Love, Love you and Mr Brown🥰

      Put your olives & whatever in the meat mixture, cheese, hominy, chilis, then masa mix on top. Cover tightly with aluminum foil to steam, or spoonfuls on top so the meat mixture steams into the masa. Then the dough cooks like a tamale then. You can also put masa on the bottom of a casserole, meat, then masa on top. This is an American dish, not a Mexican one. TexMex is different than Mexican too.

    Cast iron is the bomb! I cook everything in mine. This is same recipe my grandmother made. Love it! My husband loves a little more heat so I make 2 one for him one for us. Wonderful.

    This is something my grandson can actually eat! He's allergic to a lot of foods and I'm always on the lookout for new recipes for him and his Mom. I only have to modify it slightly (no dairy). I'll have to use the lard instead of butter.
