French bread

  • Making french bread to put in the freezer
    6 cups flour (4 cups all purpose flour/2 cups bread flour)
    1/2 cup warm water
    2 cups hot water
    3 TBSP sugar
    1 TBSP kosher salt
    5 TBSP olive oil
    Dissolve yeast into the warm water and add te sugar. Let bloom for 10 minutes. In a seperate bowl add the hot water, salt and oil to 3 cups of the flour. After the yeast has bloomed ad this mixture and mix for 2 minutes and then add remaining and mix for10 minutes.
    Leave in stand mixer and let puff up then every 10 minutes turn the mixer on for a couple rotations. do this for an hour. Divide in half and shape loaves.
    let rise for 30 minutes and bake at 375° until golden brown or 30 minutes
