I wanted to come back (again)and tell you, ever since you debuted this recipe, I have made it 5 times. Twice following the original using beef. The next time, I tried using pork Boston Butt steaks that I browned and then cut into bite sized pieces in place of the beef! I know your farm is a beef cattle farm, and Lawrence prefers beef, after all it is what's for dinner..... But I'm letting you know this recipe works well with other meat. My last usage was making 2 large casseroles using chicken tenders browned and cut up. Everything else, was as I made my original try of this recipe. I use the same powder broth/soup base mixture you did, except the ham flavor for the pork version, and the chicken flavor for the chicken.... This recipe is now on my regular go to list of recipes! Thank you!
We make about same up here, Called "River Hash" use regular stewed tomatoes instead of canned regular, maybe add left over Italian or breakfast sausage to the mix or what ever in the ice box that night. Cheddar on top, original used Velveeta Cheese, the stuff was made not far from us. Add a biscuit or piece of French, any crusty bread, got to mop sauce, and you have a cold night's dinner that takes that chill out of the bones. Keep the recipes coming, fun to see and how alike and different recipes are by region.

I have made stuffed peppers with different ingredients many times. I have also made basically that very same dish you made. But never thought to call it unstuffed peppers. I like they way you think.
Yummm ! The meal contains all nutritional needs of grain, fiber, dairy, vegetables, proteins etc. What a healthy yummy way to put ones stomach on full packed with lots of energy....

We love stuffed peppers but, we never eat the peppers. Your's looked delicious. I'm going to try it. When my children were young they hated the feel of chewing on crunchy veggies. Especially, peppers & onions.
I wanted to come back.... I made this AGAIN! I made it mostly as your recipe reads.... Except, I still haven't tried the Musket Powder... But substituted a garlic pepper seasoning and also the minced garlic from the jar. This time, my wife raved about how good it was. For her, I made it without the rice, since she is diabetic, and that made it a delicious meal for her that she could eat. Also, I put fresh cut off corn from an ear of corn into the pot with the peppers and meat mix. It was GREAT!

Kenny Dean you are so right, I think my mother could have committed crimes without leaving a single fingerprint . She was in charge of a busy restaurant doing the carving and trying to direct staff at the same time. I don’t think a single finger escape topping.
Thanks for sharing your thoughts and ideas. Was sitting here wondering what to make in my insta pot I just got then your video posted. Used pre sliced frozen peppers and onions, Rotel, Mexican corn, brown rice, minced garlic, salt, pepper and ground beef. Browned the beef in the pot and in best dump can fashion thru the rest in the pot at high pressure rice auto cook. Couldn’t figure out how to extend the cooking time for brown rice and had to run it thru twice, but after it was done it was great. Thanks for the inspiration. I used ground beef/pork blend. Same peppers, and veggies. Just haven't ordered any Musket powder, but used Italian seasoning and coarse black pepper n salt. I used a 3qt. soup pot. Smells delicious.

Great cooking vid Meredith....non of the fancy stuff chefs think up with flowers stuck in it and about the size of a hen egg, but just good country cooking. My wife fixes me stuffed bell peppers or stuffed poblano peppers. But I gotta' get her to fix your unstuffed bells or poblanos.
This brought back some childhood memories! I remember my dad fixing this for supper. The only difference, he would cook the rice separately and then combine it all.
I love this dish it resembles so many other dishes plus or minus this or that ingredient. One thing I'd add thou is less measuring, (unstuffed & no measure) especially of garlic I love a mess of it.

With a good seasoned cast iron frying pan you don't need oil or butter to keep the beef from sticking. The wonders of cast iron. I don't typically add anything to meat that I'm browning until the meat is cooked. Once the meat is cooked, I'll add the veggies and cook until tender. Rotel is the best! A can of Rotel, a can of fire roasted tomatoes, one can of tomato paste and then the Mexican style corn. Having not tried the Musket Powder yet, I'm a bit hesitant since the ingredients list coffee. A touch of chili powder and Paprika powder for little more spice. Meredith always makes comfort foods. That's a good thing. A busy Farm Wife doesn't have all the time in the world to prepare meals. Quick to cook, tasty, and filling foods are where it's at.

We have made this and love it. We also make a "unstuffed cabbage" same way just replacing the peppers with cabbage. Try it think ya'll will love it.
