I love sweet potatoes and I've never had sweet potato & bacon salad. It looks delicious. I've never thought about mixing hard boiled eggs with sweet potatoes but, we do enjoy deviled eggs with sweet potato casserole ... why not!!! Thank you for sharing.

I made this and it was a hit. The next morning my wife made mashed potato cakes using the left over sweet potato salad, it was amazing.

Hey Merdi! Don't know how I missed THIS channel - I've been subscribed to your other one for a long time! I'm making your sweet potato salad right now. I went looking thru your other cooking videos to see what you had there & realized they were all at least 2 yrs old & not very many to try. I'm not really complaining (kind of a little) but could you put some more of your quick & easy supper ideas up? I know you're really busy, so, it's with tongue in cheek that I make the suggestion that you use some of your "SPARE TIME" into more cooking videos. 🤣🤣🤣 C'mon... laugh with me!

I am very picky about my sweet potatoes and always buy Beauregard variety. When you scratch the skin they should smell a bit like Nutmeg. I am definitely going to try this recipe. Thanks for sharing Meredith!

Thanks for sharing, that looks yummy. One thing I haven’t tried yet but you might like is to dust your bacon with flour prior to putting in the oven. Gives it a crispy breading texture. Stay safe, wishing you and your family the best.

... thanks for sharing, on a side note .. I've just begun using Ghee in place of butter for much of my cooking because I can order and have it shipped during this stay at home time .. so many brands and if I add a pinch of salt, it's Heavenly buttery taste is amazing. Even when I do get back to the store for butter, Ghee has found a place in my kitchen.

This looks like a great recipe and I will definitely try it! I'm a single man, so I don't have a sweet wife to cook me delicious meals. LOL! But I will survive! I am a pretty good cook, if I must say! I love sweet potatoes! I usually buy the candied yams from the grocery store. Your recipe gave me an idea. I chopped up 2 sweet potatoes and boiled them as you suggested. Then I drained them. While they were still hot, I sprinkled cinnamon sugar over them. They were awesome!

Meredith i always mash my potatoes for potatoe salad. Jus like when you mash them for dinner. All of the flavors are through every bite that way . And I even add cheese.
Little things like cream cheese can really change things up once in awhile .that's why i make extra potatoes for mashing so I can make potatoe salad out of the leftovers.

Looks good. I surprised my wife with kale and sweet potatoes. Kale can be bitter by itself, but sweet potatoes make it great. Cut up and saute bacon. Remove bacon. Saute cubed sweet potatoes in bacon grease until soft. Add back bacon and chopped kale. I remove stems, don't like those. Season with salt and pepper. Saute some more until kale is wilted. It can take more kale then you think. It wilts down like spinach. Maybe kale is a California thing. It is good.
