My store sells coconut sugar made from evaporated coconut nectar.Would that still have all nutrients and be low glycemic?.I'm assuming evaporation would be done at high temp,which could break down/remove nutrients and enzymes that make it low glycemic.Any idea?
@@violetr958 that's also my concern especially to vitamins which is heat labile. They start to degrade at 30C for vitamin c. But some vitamins start to degrade at 48C so check your label to see if it's evaporated at low or high temp

It is use in making native sweets with coconut milk combination also....u can try that, it was fused as a lovely sweet jam

I know how it is done. We had a lot of guys who were great toddy tapping. We as children ate only jaggery. Used in every sweets.

Unless you buy from the village people who produce it themselves, most of the ones sold in shos are mixed with normal sugar.
