You are wrong about your number one choice avocados, all the other vegetables on your list I can grow on my allotment but avocados have to be shipped in by planes from the USA and Mexico so it is damaging the environment and planet ,,please take this in consideration as this far outweighs the personal benefits and it only has a shelf life of 7 to 10 days .

Anybody can take a few seconds to do a Google search and find hundreds of lists on the topic, but why should they trust any particular one of them? Why should you trust mine? Knowledge is powerful, but random bits of data is not knowledge. The list itself without context is worthless. Understanding WHY the items are on the list is empowering. People today are busier than ever, and we love to take shortcuts, but health is not a topic where we want to take shortcuts. We only have one body so we need to understand a little bit about how it works and how our lifestyle is affecting our health. Our food and our environment has changed more in the last 50 years than in the last 50,000. That is why we need to understand how that impacts our health, and that takes just a little bit more than an itemized list. You only get as much out of something as you invest in it. When you immerse yourself in something, you grow. When you are fully present and focused while watching, when you process the information, when you analyze, contemplate and incorporate it, you become more. That is empowerment. When you skim, speed watch and look for bullet points, you may catch some tidbits and some sound bites here and there, but your understanding doesn't fundamentally change. You're still the same person. In a hurry, with a shallow understanding, trying to get to the next thing. I urge you to read some of the comments that speak about how the content on this channel has changed their lives. How medical doctors comment on my videos and say they learned more about health in 20-30 minutes than they did in all the years of medical school. When you take the time and give it the focus it deserves, your life can be transformed. You're worth it.

I love cabbage! I literally use cabbage almost daily. Last night I used it as noodles in my casserole. Put down your choice of meat & cheese, slices of cabbage on top of that, some seasonings, garlic, butter and cream. stick it in the oven to bake. Mix it up, top it with some cheese and bacon with a large side salad. I also added some roasted cauliflower and brussel sprouts on the side. Yum 😋 I've been doing keto and intermittent fasting for two and a half years and I have lost 195 lb and I've never been healthier. And a lot of it I owe to you. Thank you!
Your levelheaded approach to nutrition is why I am a subscriber and why I keep returning to your channel! While many other doctors on YT provide us with information, most of it is a decoy to sell us their books or whatever else they are promoting for profit. They are mostly commercials in disguise. You, on the other hand, go into such great detail and depth that it makes learning what's best very easy to understand. I'm less confused because of your ability to simplify so much research and data into bite-size chunks that are easily digestible. Plus, I have to say that your 'bed-side-manner' explaining things is well appreciated! Bravo to you and your wonderful approach to proper nutrition!

I am into changing my eating habits due to the fact that I am a full blown diabetic and have liver failure. In my youth I suffered problems with obesity and could not control and maintain my weight. I have recently became a vegetarian no longer eating any forms of meat. I exercise everyday but still have problems maintaining the weight. The most I have ever weighed is 250 lbs. I am now at 145 lbs.🍌🍐🍅🍵🍶🥑🥕🌰🍑🍄🥦🍎🍇
Sounds as though you're getting onto the right track but I would say consider eating meat in limited amount (1meal) and be careful with veggies due to sugar amount.
Hi Dr, as a farmer in South Africa, (southern hemisphere, winter rainfall) i disagree with the inclusion of brassicas in the Clean Fifteen, Cabbage and cauliflower in particular attract so many pests that are resistant to organic pesticides you have no choice but to nuke them with chemicals if you want to save your crop. We've discontinued production of these brassicas to avoid using the dangerous pesticides. Spinnach, cellery and potatoes need 0 pesticides in our experience. Maybe its a regional practice? Mushrooms may also not require pesticides, but they are known to absorb any heavy metals from the substrate, even radioactive ones! So make sure the producer is reputable... I realize that many of them are for American's and the way they eat. and we in the Caribbean are messing up our diet base on what we see on TH-cam. Good to know that I've been eating the right food.. I usually stir fry white mushrooms with red bell pepper, onions, and garlic - along with pan-seared salmon and white or brown rice.. Sometimes I stir fry cabbage with mushrooms and shredded chicken breast too.. Thanks for the video Doc.

Good evening Dr. Sten, thank you so much for the guidance & tips, I started my intermittent fasting in January 2022 I was weighing 72kgs🙈🙊following your advice today iam 62kgs💃🎉 10kgs off! But in the bigining of this journey in when I got to 68kgs I stayed there for two weeks & continued with my routine, & it was a fun game for me as each week the number went down down down🤭 I eat once a day no snacks in between I don't like carbs or sugar I don't eat them at all plus I don't drink fizzy drinks not even pre-bottled juices, so👍 to all out there who want to lose weight & be healthy, stick to a routine & be disciplined & listen to Dr. Stens advice you will achieve your goal🤗 regards Nancy K.
I like to fill up "romaine boats" with all kinds of veggie/mushroom and chicken stuff. So good. For dinner: I add avacado to my organic blueberry, cherry, lemon, tumeric smoothie. It makes it creamy. I love purple cabbage in stir frys. Mushrooms are my favorite in a stir fry with chicken and tons of veggies. So many things you can do. I really like the large, baby brocolli (dont know what its called) and I just started squeezing fresh lime on my stir fry right before eating. It has changed my life.

Most of the veggies you talk about are pretty easy to grow just about anywhere on the planet (inside and outside) on a balcony, in the back yard, under grow lights, etc. Veggies like spinach leaves and just about any other leaf veggie are really easy to grow indoors. Grow your own is the best and healthiest option.
I found this recipe online and we love it! No Mayo Coleslaw Ingredients * 1 green cabbage * 1 large red apple julienned or thin sliced (I used Granny Smith ) * 1/2 or 1/4 red red onion thinly sliced (the amount depends on the size of your cabbage) * 3 tbsp coarsely chopped mint * 2 tbsp lemon juice * 2 tbsp olive oil * 2 tsp apple cider vinegar * 1-2 tsp white wine vinegar * salt to taste Steps Combine all ingredients and enjoy
Speaking of a bunless burger, something I have recently (last few years) learned is that you can use a portabella mushroom cap in place of the bun. I have used it to make a tuna bunwich too. Works and tastes great!
I finally heard what is going to change my life. I have been so stubborn about carbs because no one ever said "carb intolerance". And when you said that, the final key slid in the lock and you opened my eyes about the reality of carbs. You have changed my life. From now on, realising I have an intolerance for carbs, will take the hardship of whether to keep carbs in my diet, out. I am so very grateful to you. Now I can adjust the final obstacle to me becoming the being I need to be to be worthy of being an elder in the future.

I just made a cabbage stir fry yesterday with onion and garlic (bacon too). That's 3 of the Top 10 in one dish. It's REALLY tasty & quick to make and will be added to my repertoire. The fact that it's healthy is just an added bonus. There's some really tasty recipes on TH-cam.
I grew up on the Lebanese salad tabbouli. It's delicious,nutritious and easy to make. Must use extra virgin olive oil,and freshly squeezed lemon juice with sea salt. An ounce of prevention is worth a pound of cure! You are correct Dr.Ekberg! Foods do not cure diseases but, they may prevent them from occuring. I love your videos. Keep up the good work. I love tabouli and would make a large bowl just for me to enjoy. In fact for about one whole week that's all I ate. I was very surprised at the huge increase in my blood sugars until you mentioned the amount of carbs in parsley. I still love this salad but will enjoy a much smaller helping in the future
Dr Ekberg, could you please talk about lectins and nightshades. It's an area of confusion for me, and currently I keep away from tomatoes, bell peppers and egg plants. I'm an enthusiastic follower of your lifestyle recommendations and need help in understanding lectins and nightshades. Thanks.
A large number of the plant foods you say we should eat are cruciferous, high in oxylates and nightshades. Brussel sprouts contain 136 oxylates. They might work for many but not so for those of us with autoimmune. Thank you for the information including those of us who are sensitive to carbohydrates.

Hey Sten, I recently have decided to try keto and was looking at suitable veggies to have that were low carb. This video is timely and well explained. I have lost much weight over 6 years and now focusing on getting rid of the remainder of belly fat. I attempted keto once and I stopped as I could not handle the dairy and it really affected me. This time around I'm only trying ghee and it seems to be a lot more gentle on my system. It would be good for you to make a video on healthy bowel habits and improving these and, what are some of the causes as to why people may have issues going to the toilet. Thank you for your content.

I started watching because my Mom and Dad both died from Alzheimer's. Now I am hooked. I make my own greek salad at home with tomatos and cucumber chunks, green/red bell peppers with feta cheese in a greek vinegrette (olive oil, red wine vinegar, lemon juice, oregano, minced garlic, pepper, salt). It’s very filling and refreshing.

You are absolutely right about the cauliflower pizza crusts popping up everywhere. I've looked over the ingredients list on many brands and sadly a lot of them have way too many carbs. Marketing sure has a way of luring people into buying a supposedly "healthy" product, especially people with metabolic diseases who are looking to better their health.
@@Nicksonian I've not tried to make any yet. People have had various degrees of success making it from what I see. Many complain of too much moisture/ soggy crust. I would love to give it a try, but would make sure I use paper towels or a good cotton cloth to really dry out the cauliflower. Then again, I need to find a really good recipe!
@@clairehachey2189 drying out the cauliflower is pretty important. It's insane how much moisture it holds. I've tried making it a few times and enjoyed it, although I never managed to make it hold together when taking it off the baking sheet. Tastes nothing like pizza dough, as George said, but I would never have expected it to. Personally, I think it's a lot of effort for something nice but not amazing, but definitely worth trying to make at least once.

Just want to say thanks to Dr Ekberg I didn't know why I was sick until I started watching these videos. I'm only 40 but I was suffering with gout, arthritis, high blood pressure and sleep apnea. It took me a while to figure out that it was grains/pasta/carbohydrates in general that was making me ill. I had a massive appitite due to lifting heavy weights and strength training, and I was always told to eat 6 times a day. Well that was terrible, I'm now eating twice a day, mainly protein and fat and all my ailments have gone away. I can't believe how quick it was either. So again Thanks

It seems like it was yesterday that nutritionists and doctors were advising us to eat every 3 hours right! How crazy was that? Cucumber just barely missed being on the Dirty Dozen list -- it is actually ranked #13, which suggests buying organic or peeling them is best for our health.
Doc, I had asked, in the comments of one of your vids, What about honey as a sweetener. I have since seen a video by you about sweeteners and found it fascinating and informative and it answered my question. I was wondering about peppers and this video partially addressed that, but you only mentioned bell peppers, not other peppers such as Chiles, jalapenos, etc. I have heard for years that they are wholesome foods and would like your take on them, as well as other foods that add some "heat," such as horseradish and wasabi. Thank you for doing these videos. I have recently made changes to my diet and you are helping me to amend it further.

Great lecture Dr.! I live ne some Brussels sprouts. We air fry them, put a little bacon grease on them, and boy are they good! I could eat them like I used to eat potato chips.

I'm doing my best to help my elderly parents modify their eating to low carb...my Mum is gradually fitting into her old clothes! It is a struggle to break the bread/potatoes habit etc for them but I keep on reminding them of the science behind the rationale and showing them new recipes. Bravo Dr Sten!.

Not sure if anybody has mentioned this in the comments yet. Mince or crush your garlic and onions, let them rest for 15 minutes before cooking or consumption. These actions break the cell walls combining alliin with the enzyme alliinase, which creates allicin and other beneficial compounds. 🌱

Same here. My dermatologist says anything to eat like meat is an inflammatory to the body. The Mediterranean diet is best. Psoriasis is an inflammatory disease

Great information about healthy vegetables. My favorite is Avocado which i ate everyday and comes cheap and abundant here in Davao City, Philippines. Technically avocado is a fruit, not a veggie. It contain healthy unsaturated fats which lowers undesirable LDL cholesterol. Every other week i picked the fruit situated in our farm.
I was wondering what you thought about Squash. I was happy to see you include zucchini, and you have so many videos I'm not sure if any others have anything regarding Squash. Does Spaghetti Squash compare similarly to zucchini? I know butternut is pretty high in carbs, wasn't sure if that's a concern with Spaghetti Squash too. Either way, great video and great content generally.
Thank you Dr Stern, I am a big fan and this video is enlightening for me, as I eat smashed avocado and broccoli as a dip withe lettuce leaves as a kind of tacos. I season the dip with garlic, anion and tomatoes similar to guacamole and is just delicious. All these are on your list, so YAY :) I'm in my first 8months of fasting getting to OMAD thanks to you, the benefits are countless so thank you again, keep up the great work!
I am strictly in a keto diet since 03/15/2023; today is 05/29/2023; i have not seen much lost weight difference as today; however, i have noticed my belly is downsizing; my chin is not bulky as was before i started the keto diet; and also, as soon as i go to bed, i fall asleep as a baby :D ALSO, i have added intermittent fasting, i have been eating once a day for the last week (salmon w asparagus, celery cooked in the Oven Air Fryer); then i continue fasting until the next day at 3:30 or 4pm. I have a gallon of NON sugary homemade lemonade, a gallon of cinnamon/anise/cloves homemade tea in the fridge; hot chamomile tea, hot broth with lemon, water, coffee. I also have hard boiled eggs in the fridge handy in case i get hunger prangs. I am decently handling it very well, because i am taking it as personal project, as fun. Overall i am feeling great.
Its vwry common in my place when someone is pregnant they carry with them garlic to protect from vampires. Houses hanged garlic in thier doors for protection against vampires. 🤭

I eat (of these foods): Garlic Onions (Brussels Sprouts, Tomatoes, Bell Pepper and Cabbage far less often) Cauliflower Broccoli Lettuces a bit less often, well, less often than broccoli, cauliflower, onions and garlic. Avocado is something I go back and forth regarding…. Sometimes I eat a fair amount of it, sometimes not so much. I think I get a lot of potassium from egg/poultry/meat, fruits and nuts/seeds…

(Worst when fresh, but also when roasted or cooked) (It is interesting that the Hindus forbid eating garlic and onions, I do not know of a medical explanation for this prohibition.) I also have a problem with the nightshades fruits (tomatoes, peppers and eggplants). In retrospect, it turned out to me that they were responsible for leaky gut, as soon as I stopped eating nightshades, most of the symptoms disappeared. So I suggest being careful with the recommendation to eat nightshades.

People today are busier than ever, and we love to take shortcuts, but health is not a topic where we want to take shortcuts. We only have one body so we need to understand a little bit about how it works and how our lifestyle is affecting our health. Our food and our environment has changed more in the last 50 years than in the last 50,000. That is why we need to understand how that impacts our health, and that takes just a little bit more than an itemized list.
You only get as much out of something as you invest in it. When you immerse yourself in something, you grow. When you are fully present and focused while watching, when you process the information, when you analyze, contemplate and incorporate it, you become more. That is empowerment.
When you skim, speed watch and look for bullet points, you may catch some tidbits and some sound bites here and there, but your understanding doesn't fundamentally change. You're still the same person. In a hurry, with a shallow understanding, trying to get to the next thing.
I urge you to read some of the comments that speak about how the content on this channel has changed their lives. How medical doctors comment on my videos and say they learned more about health in 20-30 minutes than they did in all the years of medical school.

I love cabbage! I literally use cabbage almost daily. Last night I used it as noodles in my casserole. Put down your choice of meat & cheese, slices of cabbage on top of that, some seasonings, garlic, butter and cream. stick it in the oven to bake. Mix it up, top it with some cheese and bacon with a large side salad.
I also added some roasted cauliflower and brussel sprouts on the side. Yum 😋

I am into changing my eating habits due to the fact that I am a full blown diabetic and have liver failure. In my youth I suffered problems with obesity and could not control and maintain my weight. I have recently became a vegetarian no longer eating any forms of meat. I exercise everyday but still have problems maintaining the weight. The most I have ever weighed is 250 lbs. Sounds as though you're getting onto the right track but I would say consider eating meat in limited amount (1meal) and be careful with veggies due to sugar amount.

Hi Dr, as a farmer in South Africa, (southern hemisphere, winter rainfall) i disagree with the inclusion of brassicas in the Clean Fifteen,
Cabbage and cauliflower in particular attract so many pests that are resistant to organic pesticides you have no choice but to nuke them with chemicals if you want to save your crop. We've discontinued production of these brassicas to avoid using the dangerous pesticides. Spinnach, cellery and potatoes need 0 pesticides in our experience. Maybe its a regional practice?
Mushrooms may also not require pesticides, but they are known to absorb any heavy metals from the substrate, even radioactive ones! So make sure the producer is reputable...

I like to fill up "romaine boats" with all kinds of veggie/mushroom and chicken stuff. So good. For dinner: I add avacado to my organic blueberry, cherry, lemon, tumeric smoothie. It makes it creamy. I love purple cabbage in stir frys. Mushrooms are my favorite in a stir fry with chicken and tons of veggies. So many things you can do. I really like the large, baby brocolli (dont know what its called) and I just started squeezing fresh lime on my stir fry right before eating. It has changed my life.

Most of the veggies you talk about are pretty easy to grow just about anywhere on the planet (inside and outside) on a balcony, in the back yard, under grow lights, etc. Veggies like spinach leaves and just about any other leaf veggie are really easy to grow indoors. I’m so thankful for Dr. Sten Ekberg’s great advice! I lost 30 lbs in 5 months, and for the first time, it was effortless!! Low carb, high fat, and lots of veggies.

I just made a cabbage stir fry yesterday with onion and garlic (bacon too). That's 3 of the Top 10 in one dish. It's REALLY tasty & quick to make and will be added to my repertoire. The fact that it's healthy is just an added bonus. There's some really tasty recipes on TH-cam.
I took Keto - bacon fried cabbage, added hamburger, jalapeno, chipotle, and it was fab.
We make that 3 times a week. That is our new rice Keto way.
I like to sprinkle some lime, or lemon. Delicious!!

I grew up on the Lebanese salad tabbouli. It's delicious,nutritious and easy to make.
Must use extra virgin olive oil,and freshly squeezed lemon juice with sea salt.

I love tabouli and would make a large bowl just for me to enjoy. In fact for about one whole week that's all I ate. I was very surprised at the huge increase in my blood sugars until you mentioned the amount of carbs in parsley. I still love this salad but will enjoy a much smaller helping in the future

A large number of the plant foods you say we should eat are cruciferous, high in oxylates and nightshades. Brussel sprouts contain 136 oxylates.
They might work for many but not so for those of us with autoimmune.

I recently have decided to try keto and was looking at suitable veggies to have that were low carb. This video is timely and well explained.
I have lost much weight over 6 years and now focusing on getting rid of the remainder of belly fat. I attempted keto once and I stopped as I could not handle the dairy and it really affected me. This time around I'm only trying ghee and it seems to be a lot more gentle on my system.
It would be good for you to make a video on healthy bowel habits and improving these and, what are some of the causes as to why people may have issues going to the toilet.

I make my own greek salad at home with tomatos and cucumber chunks, green/red bell peppers with feta cheese in a greek vinegrette (olive oil, red wine vinegar, lemon juice, oregano, minced garlic, pepper, salt). It’s very filling and refreshing.

You are absolutely right about the cauliflower pizza crusts popping up everywhere. I've looked over the ingredients list on many brands and sadly a lot of them have way too many carbs. Marketing sure has a way of luring people into buying a supposedly "healthy" product, especially people with metabolic diseases who are looking to better their health.

@@Nicksonian I've not tried to make any yet. People have had various degrees of success making it from what I see. Many complain of too much moisture/ soggy crust. I would love to give it a try, but would make sure I use paper towels or a good cotton cloth to really dry out the cauliflower. Then again, I need to find a really good recipe!
@@clairehachey2189 drying out the cauliflower is pretty important. It's insane how much moisture it holds. I've tried making it a few times and enjoyed it, although I never managed to make it hold together when taking it off the baking sheet. Tastes nothing like pizza dough, as George said, but I would never have expected it to. Personally, I think it's a lot of effort for something nice but not amazing, but definitely worth trying to make at least once.

Steamed broccoli is definitely my favorite from the list followed closely by avocado. Best part is my 15 month old daughter loves them too.

I didn't know why I was sick until I started watching these videos.
I'm only 40 but I was suffering with gout, arthritis, high blood pressure and sleep apnea.
It took me a while to figure out that it was grains/pasta/carbohydrates in general that was making me ill.
I had a massive appitite due to lifting heavy weights and strength training, and I was always told to eat 6 times a day.
Well that was terrible, I'm now eating twice a day, mainly protein and fat and all my ailments have gone away.
I can't believe how quick it was either.

People I know still don't believe me that it was simply eating carbs that was making me ill.
Intermittent fasting and eating meat/fat + a few carefully chosen vegetables could save more lives than the entire drug / pharmaceutical industry ever has.

Doc, I had asked, in the comments of one of your vids, What about honey as a sweetener. I have since seen a video by you about sweeteners and found it fascinating and informative and it answered my question. I was wondering about peppers and this video partially addressed that, but you only mentioned bell peppers, not other peppers such as Chiles, jalapenos, etc. I have heard for years that they are wholesome foods and would like your take on them, as well as other foods that add some "heat," such as horseradish and wasabi. Thank you for doing these videos. I have recently made changes to my diet and you are helping me to amend it further.

I'm doing my best to help my elderly parents modify their eating to low carb...my Mum is gradually fitting into her old clothes! It is a struggle to break the bread/potatoes habit etc for them but I keep on reminding them of the science behind the rationale and showing them new recipes. Bravo Dr Sten!.

Not sure if anybody has mentioned this in the comments yet. Mince or crush your garlic and onions, let them rest for 15 minutes before cooking or consumption. These actions break the cell walls combining alliin with the enzyme alliinase, which creates allicin and other beneficial compounds. 🌱

Great information about healthy vegetables. My favorite is Avocado which i ate everyday and comes cheap and abundant here in Davao City, Philippines. Technically avocado is a fruit, not a veggie. It contain healthy unsaturated fats which lowers undesirable LDL cholesterol. Every other week i picked the fruit situated in our farm.
I was wondering what you thought about Squash. I was happy to see you include zucchini, and you have so many videos I'm not sure if any others have anything regarding Squash. Does Spaghetti Squash compare similarly to zucchini? I know butternut is pretty high in carbs, wasn't sure if that's a concern with Spaghetti Squash too. Either way, great video and great content generally.

I season the dip with garlic, anion and tomatoes similar to guacamole and is just delicious. I am strictly in a keto diet since 03/15/2023; today is 05/29/2023; i have not seen much lost weight difference as today; however, i have noticed my belly is downsizing; my chin is not bulky as was before i started the keto diet; and also, as soon as i go to bed, i fall asleep as a baby :D ALSO, i have added intermittent fasting, i have been eating once a day for the last week (salmon w asparagus, celery cooked in the Oven Air Fryer); then i continue fasting until the next day at 3:30 or 4pm. I have a gallon of NON sugary homemade lemonade, a gallon of cinnamon/anise/cloves homemade tea in the fridge; hot chamomile tea, hot broth with lemon, water, coffee. I also have hard boiled eggs in the fridge handy in case i get hunger prangs. I am decently handling it very well, because i am taking it as personal project, as fun. Overall i am feeling great.

Enjoyed your video, I heard that watercress is also very healthy and very nutrient dense as well.
I eat (of these foods):
Garlic
Onions
(Brussels Sprouts, Tomatoes, Bell Pepper and Cabbage far less often)
Cauliflower
Broccoli
Lettuces a bit less often, well, less often than broccoli, cauliflower, onions and garlic.
Avocado is something I go back and forth regarding…. Sometimes I eat a fair amount of it, sometimes not so much.
I think I get a lot of potassium from egg/poultry/meat, fruits and nuts/seeds…

Garlic gives me a stomach ache every time I try to eat a little bit of it. (Worst when fresh, but also when roasted or cooked)
(It is interesting that the Hindus forbid eating garlic and onions, I do not know of a medical explanation for this prohibition.)
I also have a problem with the nightshades fruits (tomatoes, peppers and eggplants). In retrospect, it turned out to me that they were responsible for leaky gut, as soon as I stopped eating nightshades, most of the symptoms disappeared. So I suggest being careful with the recommendation to eat nightshades.

Question regarding Lectins? Thank you so much Dr. Ekberg for your very helpful and precious videos :) I have a question to your list: Tomatoes an peppers are known to have high quantities of lectins?
