    I live in Ivory Cost we have plenty of coconut tree here.
    I tried to collect coconut sap but it didn't work...
    Maybe it isn't the right kind of coconut tree ?

      The sap is extracted from the flower. As shown in the video, it looks like a whole stalk (not the one that starts to break its casing or that shows its tiny flowers inside). As far as I remember, early morning or early in the evening, they slice the flower thinly to bleed (1-3 slices or when sap starts to swell) and hang a container underneath the flower to catch the sap and leave it. After 6 hours or more they take out the container with sap already in it and then make another very thin slice of the flower for another batch of extracts. I'm not an expert about coconuts but I guess all has sweet sap either the tree grows near the sea or not. I've tasted 2 variants (grow either near the sea or not) and both have sweet sap. As I've observed, once the collected sap is brought down from the tree, it should be consumed within 1 hr (or 2 hr - I'm not sure) or before it start to show tiny bubbles. The sap is very sweet and is not clear like water (somewhat less milky or white powdery). It slowly loses its sweetness once bubble starts to form (fermentation starts) and bitter-taste takes over.

    These videos did nothing to answer the questions raised in my mind when I first heard about coconut sugar. What part of the tree, flower, shoot, fruit, is tapped into to produce any kind of "sap"? In response to Dana M's question about whether it is "the right kind of coconut tree," all I have to say is that, like Dana, I also am VERY FAMILIAR with coconut trees. I am also very familiar with charlatan practices. I watched every video I could find which might actually show me a live tree, with a living flower which could actually produce any sap with a sweetish taste. All I saw looked like badly constructed remnants of low-budget Hollywood props where the junctures between the tree trunks and the flower "stalks" bore no resemblance to ANY COCONUT TREE I have ever seen. And, like Dana M, I have seen a lot. WHATEVER CLAIM is made about the collection of coconut flower "sap," I just want to have a camera scope out the tree, without all the PR charlatanism.

      This video was not made to answer the questions raised in your mind. This video is geared towards the Filipino public to both inspire and raise awareness of the many agricultural opportunities that can be ventured into by Filipinos. And I don't get what you are saying about charlatan practices. What charlatan practices are you talking about? Although they featured a particular group, they are not even out to sell any coconut products. As this is geared towards the Filipino public, more or less Filipinos know about sap collection from coconut trees as they are very common in the Philippines. Albeit, the sap is usually made into liquor or vinegar and not sugar. It is only recently that coconut sugar made waves in the Philippines.
