I made this today and it was amazing! The only tweaks were to add an extra jalapeno and use my wife’s homemade Serrano based salsa for the rice (we like it spicy). Everyone absolutely loved it and I’ll be making this again!

This looks amazing! I have made Meat Church's Mexican Chicken, and I love this idea. I make Asian Fried Rice about every other week as part of my regular rotation and your method looks great!! i always have bags of Costco bone-in, skin-on thighs, and boneless, skinless thighs in my deep freezer so I intend to make this on the next fried rice rotation. Thank you very much, and I know if Amy likes the chicken, my wife will as well. They both share a heat level (wimpy!) tolerance I believe :) Very nice work folks!
Hello Neal and Amy. To get that same charcoal flavor, you could do a low temp smoke on your smoker and then finish the chicken on the flat top. Lumberjack has a Char/Hickory pellet that you would swear you cooked the meat on charcoal. I also follow Church BBQ, Matt has a great channel like ya'll(threw in a little Sothern there.) Give it a try. I have never thought about flat top mexican rice. That would be great with my Birria Tacos.

Neal, when doing any kind of Mexican style dish. Pablanos to me are always better than green bells. They really give you that SW and south Texas flavor.
I made the chicken sandwich a few weeks ago and defiantly wasn't impressed with the canned jalapenos. But your looks so much better. Will give yours a try.
Hint: Chop the canned peppers into thirds before tossing into marinade. That way you can just toss the stem ends with seeds and cook alongside on the griddle to sanitize. Use now or save the remaining pieces to add to whatever. A lot easier to work with when not coated in chicken fat and spices and no leaving them with biologics growing on them.

I have not had my Camp Chef in over 2 years..ahhahaha As far as the Blackstone..i have had 2...the last one was the new one and didnt like it...it was being outperformed over and over again by other griddles..since i only have so much room...it had to go...

I did meat church chicken and it sat 24 hours in marinade and 1to 10 about 4 on spice but was good i will be trying your recipe also
