EPIC Chicken and Cheese Quesadillas on the Griddle - 2 Ways - Worth the extra effort?

- Let's make some chicken and cheese quesadillas on the griddle, but let's do it 2 different ways to see if it's really worth putting in a little extra work for maximum flavor!
For the first griddle chicken quesadilla, we're just using regular boneless skinless chicken breasts, seasoned with taco and Mexican seasoning, and cooked on the griddle.
For the other chicken cheese quesadillas, we smoked a half a chicken on a bed of stewed Mexican tomatoes, poblano peppers, and onions. Then, we shredded the chicken and chopped up some of the stewed vegetables for the griddle quesadillas.
Look out for the few other tips that I show you to add extra flavor - like cooking the seasoned chicken skin on the griddle to get it crispy and add it to the quesadillas on the flat top grill. Enjoy!

Yes that the way you would probably ask for one in central Mexico but here by the border the language is a little different. It’s kinda like a border language. I was born in the USA and I don’t understand the perfect language because it’s different.

I did this recipe, but I pre-cooked my chicken in the Instant-Pot and shredded it. Always cooks it real moist. Turned out great.

I made these last night… don’t have a smoker, so I added a bit of liquid smoke and cooked them in the oven like you said at 275. My brother, my sister-in-law, and I agreed these were the best chicken quesadillas we’ve ever had by FAR! Can’t order them at a restaurant any more for fear of disappointment!

Had I been there when you pulled that pan out of the smoker, I would have asked you to pour me a shot of that juice! I also liked your idea of frying up the skin and chopping it up. Those quesa dillas looked absolutely amazing!

Another crankin-up of flavor to the chicken Quesadillas. We are getting hooked on making these on the griddle thanks to your videos, the taste of everything is always super. Thanks for all these great ideas and tips. It looked like you were using the 8 inch so we have those in the pantry for a quick try this week.
When doing videos we try to find the bigger ones....however we have to go to another store to get em...so sometimes we dont...if not for filming....we would use any size

I would not buy again...i would just use your favorite hot sauce...I did however like the thickness...

Yes sir..so a quick few things...the Chicken Skin was bacon idea...its smoked and then fried to render the fat...
as far as the smoke we just used Pit Boss Competition Blend..

When you were parting out the chicken and I saw you pull off the skin and toss it to the side I was thinking, "OH NO! Throw that on the flat top!" Crispy chicken skin crumbles are great on salads. I never toss the skin.
The smoked / stewed chicken could be done well in advance and used for many things. It looked fabulous.

Love that stewed option, but will bypass the “smoke”, but may try it at a later date. Remember, I have the east European taste!
