Great Video. The membrane can be taken off or left on, as you indicated, it’s simply a matter of preference. The membrane is the “natural” casing used to make most sausages. When left on the chittering it makes them more “chewy”, The Aunt Bessies Chitterlings are hand cleaned from the country of Denmark in Northern Europe that’s why they are so clean. Many countries in Europe and around the world eat chitterlings. However, here in America it is assumed that only black people eat them, so they are treated like garbage and sold as such. Meaning they leave all the unwanted stuff in them, and chop them up so bad that you have to spend way too much time just to get to the good part. The least they could do is leave them “whole”. That’s what I remember about the ones in the red bucket. JMO.
I clean mine 2 days! 6 rinses lemon juice and vinegar! Checking for membrane each rinse! Just the way I was taught!! No membrane!!!💋Thanks for the right way!💋
They are easier to clean but I still clean 5 or 6 times they are so worth the extra money I stopped making them for anybody but myself because no one wants to contribute to them but want to eat them up when they done

My sis cooked and cleaned some for a person and they got mad because she took that membrane off . They told her she did them wrong . We were taught as little girls by more than one person and they cleaned them the way that you do . Thumbs up!

Yes! I used to buy the fresh chittlins. When I came across Aunt Bessie's (my mom's name) I had never seen chittlins so clean. I clean and rinse mine 3-4 times as well. They are so easy to clean.

I also add celery and a whole peeled white potato.. 😊.. some folks take the potato out after cooking, but on my very last plate of chittlins I eats my potato too!!! Lol...good job. and I'm glad you take the lining off... This is why we appreciate Aunt Bessie's because those back in the day Red Pails broke our backs, standing over the sink for hours!!! You ain't NEVER lied! I finally got some and they were the EASIEST to clean EVER! I paid $15 A bag for mine in Miami but it's worth it not to have such a tedious and time consuming task to deal with like it is with other brands.
Looking forward to preparing some for the Holidays. I live in the midwest (IL) and we get the red bucket (Smithfield), Uncle Lou's and Aunt Bessie''s which is my choice only. They are pretty clean but I too do a thorough cleaning and washing. After seasoning not much oder from Aunt Bessie's. My grandmother only option was to get fresh ones from the "stock yards" up here or get the Red bucket. They did stink and she use the potatoes to cover the smell. She was a Georgian woman who loved them with my grandfather but since they stunk I turned my nose up and didn't eat them until I was introduced to them again as a grown up from a woman who was a great southern cook. She boiled, baked and fried them...so good. BTW, you (T) are cleaning them correctly. The membrane is the side where the feces and mucus slide down. These are the best chitlins ever!!! These are the only ones I will buy. I hope they will always be available. I remove the membrane but I don’t cut mine. Love them so much!

T, you cleaned them the way my mom cleaned hers, except way back in the day you had to get the bucket of filthy dirty chitlins. I remember my father complaining she was throwing most of the chitlins away! Thank God, she would pay him no mind and really clean them till nothing but chitlins looking like yours you cooked was left. Wow wish I would have watched this before I cooked mine. My dad used to make these for us every holiday, he passed in May and my first time making them was yesterday. I was wondering why mine didn't look like his or other ppls smh I didn't know I had to pull the membrane off. Now I dont think there is no turning back lol. Thank you for the video very thorough.
Those are really clean. Will have to try them. After cleaning them I boil them for about 15 minutes. Dump the water and do it again. Then it's time to put them on and season them. You wouldn't believe the amount of grease that comes off of those things. I also put a little bit of vinegar and lemon juice in mine! They go off!!!!
The two brands of Chitterlings that are very clean are Aunt Bessie's and Queenella's. They both still cost too much. Chitterlings used to be cheap, until white people started eating them too.
You got that right. There are a lot of things that they thought that they would never eat but now they are eating what we eat and they have driven the price up for all of our holiday and everyday foods

I have been cooking Aunt Bess's chitterlings for over 23 years. It was the best kept secret. When I first started cooking them, they cost 5.99 for a 5 lb bag. Over the years they have gotten quite expensive to buy, but it's ok, because they are so clean and not hard to clean. Also, here's a little info regarding them. The are from Denmark and they are the upper intestines, (stomach) instead of the lower intestines, and that is why they are so easy to clean. Enjoy!!!

Great video! Honestly, I only eat my mom’s and I never had the desire to learn. However, I know my mom cleans them thoroughly and removes way more than most. Which is why I eat hers. That being said they looked so delicious at the end. Who knows I might try to cook them one day.☺️
I let my chitterlings make it's own juice, if I add liquid, it's chicken broth, But I put the chitterlings in an empty pot on low and it makes it's own juice, then I chop up my onions, minced garlic 🧄Green Bell peppers,red pepper, AC vinegar, Lawry's, onion powder, garlic powder then at the end I add a can of cream of mushroom 🍄 and baybeee! My chitterlings make you wanna sit down and count ya blessings 🥰💃🏾✌🏾😏😎I ain't trying to toot my own horn but beep beep 💅🏾
I have found that if you remove the membrane first, then soak in a diluted white vinegar solution for 15-20 min or so, THEN flash boil only for 10-15 sec, then drain right way again before cutting up, not much smell then at all. Also, add REAL garlic to your final mix of other stuff when you begin cooking. I put the equivalent of 6-7 cloves minced. No over powering garlic taste in the end, trust me.
I bought them last Thanksgiving and they were so easy to clean and you got more , the red buckets are nothing but TRASH i will never buy nothing but this one 💯

I buy Aunt Bessie n MD and for 5lbs they are $13.99. This year I saw some name Queenie ($6.99 lb) I was like ok I'll try these for $6.99. Never again after thawing out and a clean up, I had about 2lbs. Aunt Bessie not too keen on Uncle Joe's (they're ok). The redbucket is just too much cleaning and I see polyps, etc., so Aunt B #1
My grocery store did not have the Aunt Bessie's that I love this Thanksgiving. Oh well I will try for Christmas. And yes, that is how I clean my Aunt Bessie's but I use a knife to open them up so that I can clean them the way I like. And like you when I clean them. I will have some left over for Christmas so I don't need to do them again for Christmas.

She is definitely telling the truth. In NYC they are $16 a bag but its worth it. When she says they are clean they are clean. I do soak mine, and I do go over them once to clean and then they are ready for the pot. I’m actually cooking my last two bags of chitterlings. And girl, be thankful your husband doesn’t eat them, that means they are more for you. Its just me and I cook 10 pounds, freezing half and eating half.

I like Aunt Bessie Bessie chitterlings and they are super clean but yes pull that membrane off I get two bags it doesn't take long to clean I still rinse them at least 3 times and I don't add water cause it will have enough water once you rinse them a couple of times then I add 3 chicken bullion cubes a medium onion a medium potato 1 stalk of celery cut in 4 pieces then some red crushed peppers. The reason that I don't add salt is that the chicken bullion cubes has enough salt in it I start it out on medium high once they start boiling I turn them down on medium and let them cook slowly for about 3 to 4 hours depends on how many pounds and once finished you got to have a bottle of Texas Pete and for me I use jasmine rice and the Hawaiian dinner rolls. Oh so good
The chitterlings you have are better than the ones that I bought about 2 yrs ago. I had bought the Aunt Bessie chitterlings and my bags had a lot of scraps and membranes, there were not a lot of whole pieces.
No sazon packet? I'm start buying Aunt Bessie. They are high ass hell but it looks like it worth it. I buy the other bag chitterlings cause that red bucket been got on my nerves😳. I also drop a Bouillon cube in mine.

White northern English people used to eat this a lot when I was a kid, I'm 53 now and I don't know anybody really that still does. My grandma loved them, she used to buy them pre-cooked from the market (She always called it chicklins and bag, I once asked about the "bag" bit, and in her old school, dry jokey way she said, "shit bag! 😂) She ate it cold with salt and vinegar on with bread and butter. The old white northerners also enjoyed tripe and cow heel, are they african American delicacies aswell?

T, you cleaned them the way my mom cleaned hers, except way back in the day you had to get the bucket of filthy dirty chitlins. I remember my father complaining she was throwing most of the chitlins away! Thank God, she would pay him no mind and really clean them till nothing but chitlins looking like yours you cooked was left. You were taught well and thank goodness for the better-cleaned product of today. I will subscribe and ring the bell too.

Wow wish I would have watched this before I cooked mine. My dad used to make these for us every holiday, he passed in May and my first time making them was yesterday. Those are really clean. Will have to try them. After cleaning them I boil them for about 15 minutes. Dump the water and do it again. Then it's time to put them on and season them. You wouldn't believe the amount of grease that comes off of those things. I also put a little bit of vinegar and lemon juice in mine! They go off!!!!

The two brands of Chitterlings that are very clean are Aunt Bessie's and Queenella's. They both still cost too much. Chitterlings used to be cheap, until white people started eating them too.
You got that right. There are a lot of things that they thought that they would never eat but now they are eating what we eat and they have driven the price up for all of our holiday and everyday foods

I just cooked some of Aunt Bess’s today 1/1/19. 5 lb bags. Here in Detroit $8.99 a bag. She has hog Maws to. I did clean them my way but they were cleaned damn good. Less work, more time to enjoy the family.

I have been cooking Aunt Bess's chitterlings for over 23 years. It was the best kept secret. When I first started cooking them, they cost 5.99 for a 5 lb bag. Over the years they have gotten quite expensive to buy, but it's ok, because they are so clean and not hard to clean. Also, here's a little info regarding them. The are from Denmark and they are the upper intestines, (stomach) instead of the lower intestines, and that is why they are so easy to clean. Enjoy!!!

Great video! Honestly, I only eat my mom’s and I never had the desire to learn. However, I know my mom cleans them thoroughly and removes way more than most. Which is why I eat hers. That being said they looked so delicious at the end. Who knows I might try to cook them one day.☺️

I let my chitterlings make it's own juice, if I add liquid, it's chicken broth, But I put the chitterlings in an empty pot on low and it makes it's own juice, then I chop up my onions, minced garlic 🧄Green Bell peppers,red pepper, AC vinegar, Lawry's, onion powder, garlic powder then at the end I add a can of cream of mushroom 🍄 and baybeee! My chitterlings make you wanna sit down and count ya blessings 🥰💃🏾✌🏾😏😎I ain't trying to toot my own horn but beep beep 💅🏾
I have found that if you remove the membrane first, then soak in a diluted white vinegar solution for 15-20 min or so, THEN flash boil only for 10-15 sec, then drain right way again before cutting up, not much smell then at all. Also, add REAL garlic to your final mix of other stuff when you begin cooking. I put the equivalent of 6-7 cloves minced. No over powering garlic taste in the end, trust me.

I buy Aunt Bessie n MD and for 5lbs they are $13.99. This year I saw some name Queenie ($6.99 lb) I was like ok I'll try these for $6.99. Never again after thawing out and a clean up, I had about 2lbs. Aunt Bessie not too keen on Uncle Joe's (they're ok). The redbucket is just too much cleaning and I see polyps, etc., so Aunt B #1

My grocery store did not have the Aunt Bessie's that I love this Thanksgiving. Oh well I will try for Christmas. And yes, that is how I clean my Aunt Bessie's but I use a knife to open them up so that I can clean them the way I like. And like you when I clean them. I will have some left over for Christmas so I don't need to do them again for Christmas.

She is definitely telling the truth. In NYC they are $16 a bag but its worth it. When she says they are clean they are clean. I do soak mine, and I do go over them once to clean and then they are ready for the pot. I’m actually cooking my last two bags of chitterlings.
And girl, be thankful your husband doesn’t eat them, that means they are more for you. Its just me and I cook 10 pounds, freezing half and eating half.

I like Aunt Bessie Bessie chitterlings and they are super clean but yes pull that membrane off I get two bags it doesn't take long to clean I still rinse them at least 3 times and I don't add water cause it will have enough water once you rinse them a couple of times then I add 3 chicken bullion cubes a medium onion a medium potato 1 stalk of celery cut in 4 pieces then some red crushed peppers. The reason that I don't add salt is that the chicken bullion cubes has enough salt in it I start it out on medium high once they start boiling I turn them down on medium and let them cook slowly for about 3 to 4 hours depends on how many pounds and once finished you got to have a bottle of Texas Pete and for me I use jasmine rice and the Hawaiian dinner rolls. Oh so good

The chitterlings you have are better than the ones that I bought about 2 yrs ago. I had bought the Aunt Bessie chitterlings and my bags had a lot of scraps and membranes, there were not a lot of whole pieces.

White northern English people used to eat this a lot when I was a kid, I'm 53 now and I don't know anybody really that still does. My grandma loved them, she used to buy them pre-cooked from the market (She always called it chicklins and bag, I once asked about the "bag" bit, and in her old school, dry jokey way she said, "shit bag! 😂)
