Just saw this video. My sister used to clean and cook two buckets 🪣 of chitterlings every year for New Years! My father and I would eat them with hot 🔥 sauce. They were pretty good! I remember how the house smelled when she cleaned them! 😖 I miss those times. Both she and my father are in heaven 😇 now, enjoying all their favorite foods!
I cooked chitterlings this week and used the Itialan dressing and marinated them for 24 hrs. They were delicious and most important, no smell! Thank you for sharing your receipe!
As a white boy growing up in the Mexican Barrio of so Cali, I learned about all the ethnic foods of the poor people, because I was one, people don't know what good food is Mexicans make this is called trips Seasoned, but dried well, then fried Almost crispy ! Highly tasty !!! Menudo is also a treat, if kids of today don't learn to cook, all will be lost !!! Blessings today in JESUS NAME.....
Tripe is cow stomach and chitterlings (chitlins) is pig intestines. Mexicans call cow intestines tripe too, but menudo to Mexicans is cow stomach. Other Latin countries call it Mondongo.

The smell is nostalgic to me because it reminds me of my mom cooking them for New Years when I was young and I haven’t had them since she passed 29 years ago.

My grandma use to cook hers for the superbowl and when she did she would say "if you don't like the smell care yo ass outside" meanwhile the street lights came on and it still smelled like it in the house

I passed up on a THIRTY DOLLAR 10 pound bag of frozen chitlins at Stater Bros. Mama would've said to "Go ahead and get them and quit being so cheap!" I might for New Years. Prolly not tho cause My Mom didn't raise me to be stupid with money. Edit: That 10 pound bag looked like 25 percent water/ice.
That's nice the way you cook them but I prefer to clean them, boil them for about 30 minutes in vinger and water and pour that water off and rinse. The last step is to season and cook for 3 to 4 hours with red pepper and salt.
My Mother used to wash, season & boil until done......but She would take some out, drain, flour and fry until brown and crispy for me......I preferred them that way, She would eat them either/both ways.......Thanks for the video Chef.......;)...........

The Christmas my son was born I ate chittlins only all day, that night and morning early my son was born and he loves them so much he said they never struck to him clean or dirty. I think he likes them more than I do..I told him to be careful eating everybody's chittlins and at age 30 he found out what I meant e everybody don't clean like you mom.🤔

My mother grew up on family farm in North Carolina but us children were born and raised on Long Island, NY. When mom cooked chitterlings it was a treat. Very clean, well seasoned. I am definitely going to try your marinade for the New Years, my Grandfather would have hog killings for the New Years amazing memories making sausage, souse, chitterlings. I give a different twist on mine after fully cooked I drain all of the liquid off cut up the hog maws add vinegar, hot sauce & more seasoning to the pot and let them simmer, they come out most delicious as my late mother would say, all wonderful memories Thanks for sharing💚🎄💚🎄❤️

Thanks Chef, just ran across this video. After cleaning, When I cook mine, I was taught to place celery & onion in the pot along with garlic salt and pepper. Let them cook 3 hours then add in vinegar & a tablespoon of sugar. You don’t get that chittering smell either. I will be trying the Italian dressing the next time. Thank you

My family used a nice big onion and a big potato to absorb the smell after having cleaned and washed the chitterlings really well. salt and white pepper (when available) garlic. And we ate them with homemade coleslaw, cornbread and baked beans or mixed greens.

PAM LUNA at 1:24 in the video he states it took him 4 hours to clean them. Is there a special chittlin wash he was suppose to use? The second step after the 4 hour clean was to soak them in salad dressing!

Removing scraps of any debris, husks, foreign (and suspicious looking particles 😁😁). Drain and run new water... repeat the process of removing membrane, debris etc. gently rubbing & swirling like you washing a buncha rags. Repeat the dump and add new water about 5 to 10 times or more (it's up to you) to thoroughly inspect and clean them. The last time you dump, drain the water off real good. Then pour the dressing in.... stir and move the dressing around so all the chitterlings is coated or covered in dressing. Use whole bottle of dressing if necessary. Cover and Refrigerate for 24 hrs. I use KRAFT Zesty Italian Dressing but generic brands work just as good... (as long as it's the oil & vinegarish type Italian dressing ...not the creamy kind.) Like he said, let'em soak 24 hrs. in that dressing then rinse them real good, get all that dressing off of them and then they're ready to cook. He is one of my favorite cooks !!!

Quite honestly, I don't care about the smell. If you don't like the way chit'lins smell, you shouldn't even be cooking them. Just clean 'em, rinse 'em, bring 'em to a boil, then let 'em simmer and stink up your house. It's alright.
I LOVE Chitterlings with hot sauce and greens. Its hard to find Chitterlings now! Its hard to find hog maws. Thank god we still have ham hocks around the holidays but really its hard to find Chitterlings . As least where I live.
Hey Jeff, the first thing is , I tried the new seasonings today that I bought from Steve and lovee it!!! The second thing, your tip worked!! Soaking chittlins in italian dressing to get rid of the smell!! My. Daughter came in and didn't recognize, my other daughter was standing right beside me when I was rinsing the dressing off and couldn't smell it. Lol my aunt invited mom to dinner. Chitlins. T h a w e d them out of the red bucket pour the water off and put them in a pot to boil cook them for about 45 minutes and then pronounced them ready to eat. Mom took them out of the pot looked at them and said you need to take all these and bury them! She then cleaned some and cook them properly for her. Lord my mother's face though!

Tripe is different from Chitterlings. Tripe is the stomach. Chitterlings are the intestines.

I LOVE Chitterlings with hot sauce and greens. Its hard to find Chitterlings now! Its hard to find hog maws. Thank god we still have ham hocks around the holidays but really its hard to find Chitterlings . As least where I live.
Love them! Yes, we spent hours cleaning them after hog slaughtering time. I usually only eat them in the winter months. 👏🏼👏🏼👏🏼👏🏼

Hey Jeff, the first thing is , I tried the new seasonings today that I bought from Steve and lovee it!!! The second thing, your tip worked!! Soaking chittlins in italian dressing to get rid of the smell!! My. Daughter came in and didn't recognize, my other daughter was standing right beside me when I was rinsing the dressing off and couldn't smell it. And of course putting that new seasonings on it with everything else created another delicious Chef Jeff Dish! #Helpsomebodyoldschoolsoulfood

Lol my aunt invited mom to dinner. Chitlins. T h a w e d them out of the red bucket pour the water off and put them in a pot to boil cook them for about 45 minutes and then pronounced them ready to eat. Mom took them out of the pot looked at them and said you need to take all these and bury them! She then cleaned some and cook them properly for her. Lord my mother's face though!
