@Jefferson Mason I don't believe it's the chitterlins that is the problem, because I just about guarantee you that most Black people eat chitterlins maybe one or two times in a year. That's most Black people. It is too much work and is generally eaten as a treat for some holiday and maybe one other time during the year. So calm yourself down. It just might be that good old red meat called steak that is to blame. Or, just plain old overeating. And heaven forbid you eat all those pies, cakes, cookies and other desserts that you don't complain about. And spaghetti, rice, and potatoes. I come from a family that eats chitlins mainly on the holidays now, the youngins really don't like them and don't eat them. So its Thanksgiving, Christmas, and New Years that we get to eat this delicacy. You don't know how good they are until you at least give them a try. For sure, you can't eat just anybody's chitlins. I just came to learn about chitlins to distract myself from a horrible couple days and ended up getting the simple verse that would touch my heart and change my feelings. Oh my goodness! I'm going to make this and I'm going to make it EXACTLY the way you instructed! I'm Filipino, this is similar to a dish called sisig but sisig has liver, pork belly and/or parts of the head too. My grandmother used to emphasize the importance of cleaning the "bituka"/chitterlings and she used only salt to clean them and she par boiled them too. I like the tip to use baking soda to clean and tenderize, and half a potato to help with the smell. Thank you for this video!!! Also, you have a great voice, I can tell that you are truly happy cooking this dish and sharing your recipe. I like to hum and sing when I cook too. Food safety at its finest. This lady was very clean and thorough. I am 34 years old and tried a piece of chitlin for the first time at a Thanksgiving dinner I was invited to this year. It wasn't bad, I thought it would be terrible. The 80 year old woman who cooked them was also very clean and precise. And the only reason I attempted it, other than the fact that the preparer was clean, was because this dish was something that at some point in time kept my ancestors alive. I wanted to connect. I fell into the hype of people down-talking this dish because it is pig's intestines, but these same people eat sausage (which is meat stuffed into an intestine), tripe, stomach or a variety of any other food which is considered unclean/un-natural by someone. (Including processed, gmo, fast food, etc.) On top of that, I'm pretty sure my ancestors didn't get their pigs (or chicken, beef and fish) from feed lots where animals were fed unnatural diets... which means they had a better quality animal/product. Anyhoo, once that little piece was on my plate I thought, "You only live once... so grow a pair and try it." Glad I did. Well, my testimony is over... great video. Blessings to all. ❤

Happy day I tried to eat it as a kid... And the smell from the chitterlings would be on the cup I drank out of. No gum... Breath mints help me. Only toothpaste did. Lol.
Love Chittlings. I'm used to my dad just cooking them with onions salt and pepper. He would let them cook down until they were like gravy and serve over rice. Also, fried chittlings are good too. Dip them in pancake batter with lipton onion soup mix and fry in oil. Best things ever!
YES, it takes a LOT of work AND seasonings for chitterlings. I leave the vegetables whole and I haven't used bouillon. That's an AWESOME idea since the first water is poured off! I'll have to try this the next time! I like to have candied yams and greens and cornbread with mine. Thanks for sharing!

Ok so, ALMOST ALL of the comments are either questions or comments about chitterlings. Ms Gina, you’ve CHANGED MY LIFE with this recipe. I followed your instructions exactly and I added in one more rinse to be sure during cleaning. Full disclosure I have NEVER cooked or even remember having chittlins’ as a kid. Mom never cooked them as we did not eat pork growing up. All I can say is that they turned out Fantastic! I got thumbs up from all who tried them on Christmas even the elder ladies who’ve cooked them for years! I am honored and humbled. THANKS SO MUCH! Will keep these in the rotation next year 👍🏾

My husband always spoke of chitlins, I didn't know how to clean or cook them so he only got them when vacation time came & we went to MS, no I have never ate them, the smell of them cooking or something had an ODD smell. Then I found out they were pig intestines. Now, if I'd seen your way of doing chitlins I'd give it a try just because he loved them. I did make him boiled peanuts, which I love. Rest in Peace Bill.
That's because whomever cooked them didn't use the potatoes or onions. The smell is horrible and stays in your house for days. My condolences to you and your family.

You know what? I agree to some of the comments, some don't believe that pork intestines are being eaten and that they equate to slavery is just being racist to the highest level. What if I tell you that here in the Philippines, every part of a pig is being eaten and nothing goes to waste (EVEN BLOOD, INNARDS, REPRODUCTIVE SYSTEM, EVERY BODY PART EVEN THE EYES, ETC.). I used to watch my favorite auntie clean her chittlins when I was little but I refused to eat them. The texture turned me off. I was just mesmerized by how she went through them like she was looking for a golden ticket😂thank you for the memories Gina❤️
Hi Gina. Just a suggestion, when separating the membrane from the chitterlings, try doing that under running water or use the water in the sink. The membrane separates much easier. My dad taught me that several years ago. Now I clean chitterlings for him because it got too time consuming for him. He'll cook them, but I clean them. Happy Holidays to you and your family! :)
Two things missing hot sauce and cornbread! Cornbread to sopped up the juice! In my opinions the side dish to go with those chittlings is collard greens yams and potato salad with cornbread dressing and bake Mac and cheese purple hull peas and cornbread muffin! These have to be the cleanest chitlins EVER!!! I wish I had the discipline and patience to try to do this. I haven't had chitlins I wasn't afraid to eat in 50 years since my grandmother died. I don't remember if I ever watched her clean them. They were good but I ate them holding my nose so maybe they were not THIS kind of clean. I've heard people say don't over clean them but is that really a problem? I have never seen chitlins look so pretty.

@Jefferson Mason I don't believe it's the chitterlins that is the problem, because I just about guarantee you that most Black people eat chitterlins maybe one or two times in a year. That's most Black people. It is too much work and is generally eaten as a treat for some holiday and maybe one other time during the year. So calm yourself down. It just might be that good old red meat called steak that is to blame. Or, just plain old overeating. And heaven forbid you eat all those pies, cakes, cookies and other desserts that you don't complain about. And spaghetti, rice, and potatoes. They are full of starch and high in carbohydrates. Corn is also not good along with the rest of the things I mentioned in my previous response.

I come from a family that eats chitlins mainly on the holidays now, the youngins really don't like them and don't eat them. So its Thanksgiving, Christmas, and New Years that we get to eat this delicacy. You don't know how good they are until you at least give them a try. For sure, you can't eat just anybody's chitlins. Oh my goodness! I'm going to make this and I'm going to make it EXACTLY the way you instructed! I'm Filipino, this is similar to a dish called sisig but sisig has liver, pork belly and/or parts of the head too. My grandmother used to emphasize the importance of cleaning the "bituka"/chitterlings and she used only salt to clean them and she par boiled them too. I like the tip to use baking soda to clean and tenderize, and half a potato to help with the smell. Thank you for this video!!! Also, you have a great voice, I can tell that you are truly happy cooking this dish and sharing your recipe. I like to hum and sing when I cook too. How can you not be happy when cooking for family and friends! Sharing the love!

Food safety at its finest. This lady was very clean and thorough. I am 34 years old and tried a piece of chitlin for the first time at a Thanksgiving dinner I was invited to this year. It wasn't bad, I thought it would be terrible. The 80 year old woman who cooked them was also very clean and precise. And the only reason I attempted it, other than the fact that the preparer was clean, was because this dish was something that at some point in time kept my ancestors alive. I wanted to connect. I fell into the hype of people down-talking this dish because it is pig's intestines, but these same people eat sausage (which is meat stuffed into an intestine), tripe, stomach or a variety of any other food which is considered unclean/un-natural by someone. (Including processed, gmo, fast food, etc.) On top of that, I'm pretty sure my ancestors didn't get their pigs (or chicken, beef and fish) from feed lots where animals were fed unnatural diets... which means they had a better quality animal/product. Anyhoo, once that little piece was on my plate I thought, "You only live once... so grow a pair and try it." Glad I did. Well, my testimony is over... great video. Blessings to all. ❤

Love Chittlings. I'm used to my dad just cooking them with onions salt and pepper. He would let them cook down until they were like gravy and serve over rice. Also, fried chittlings are good too. Dip them in pancake batter with lipton onion soup mix and fry in oil. Best things ever!

YES, it takes a LOT of work AND seasonings for chitterlings. I leave the vegetables whole and I haven't used bouillon. That's an AWESOME idea since the first water is poured off! I'll have to try this the next time! I like to have candied yams and greens and cornbread with mine. Thanks for sharing!

Ok so, ALMOST ALL of the comments are either questions or comments about chitterlings. Ms Gina, you’ve CHANGED MY LIFE with this recipe. I followed your instructions exactly and I added in one more rinse to be sure during cleaning. Full disclosure I have NEVER cooked or even remember having chittlins’ as a kid. Mom never cooked them as we did not eat pork growing up.
All I can say is that they turned out Fantastic! I got thumbs up from all who tried them on Christmas even the elder ladies who’ve cooked them for years! I am honored and humbled. THANKS SO MUCH! Will keep these in the rotation next year 👍🏾

My husband always spoke of chitlins, I didn't know how to clean or cook them so he only got them when vacation time came & we went to MS, no I have never ate them, the smell of them cooking or something had an ODD smell. Then I found out they were pig intestines. Now, if I'd seen your way of doing chitlins I'd give it a try just because he loved them. I did make him boiled peanuts, which I love. Rest in Peace Bill.

You know what? I agree to some of the comments, some don't believe that pork intestines are being eaten and that they equate to slavery is just being racist to the highest level. What if I tell you that here in the Philippines, every part of a pig is being eaten and nothing goes to waste (EVEN BLOOD, INNARDS, REPRODUCTIVE SYSTEM, EVERY BODY PART EVEN THE EYES, ETC.).

Just a suggestion, when separating the membrane from the chitterlings, try doing that under running water or use the water in the sink. The membrane separates much easier. My dad taught me that several years ago. Now I clean chitterlings for him because it got too time consuming for him. He'll cook them, but I clean them.

These have to be the cleanest chitlins EVER!!! I wish I had the discipline and patience to try to do this. I haven't had chitlins I wasn't afraid to eat in 50 years since my grandmother died. I don't remember if I ever watched her clean them. They were good but I ate them holding my nose so maybe they were not THIS kind of clean. I've heard people say don't over clean them but is that really a problem? I have never seen chitlins look so pretty.

I am 43 and have never had chitterlings. I heard about it growing up but no one in my family ever made it. I am very curious as to what it tastes like. Your recipe looks very good, maybe I’ll work up the courage to try and make it lol. Thanks for making this video. 😋💙

I feel like a pressure cooker would knock off a heck of a lot of time on this recipe and tenderize quickly, but I totally understand the patience in cooking aspect....time and patience add love and FLAVOR
No wonder my mother in law only makes chittlins on Christmas OR Thanksgiving. This is a lot of work. lol.

I can't believe people on here has turned This Woman's video into a race thing and talking about slavery. I'm pretty sure she just wanted to share some good cooking and things that she likes to cook. And so many of y'all have turned this entire thing into slavery black people black women slave masters and so much other foolishness. When you see the video you see the title and she is talking about making chitlins if you don't eat them then don't click on the video why waste your time speaking so negative about somebody else's video. What people eat is what they choose to eat what is the big deal. if you're a vegan more power to you if you are a meat eater more power to you when are we going to start just learning to get along with one another. especially us black people cuz we are the first ones to criticize another black person on what they choose to wear eat sing and worship. Some of y'all need some lives
Exactly, I don't think I could ever eat this, to be honest, but I can appreciate her sharing the culture, her passion and ethic into preparing this.

The only thing that I was bothered by. She threw half of her chitlins away.. thin layer of film or membrane as she said she was pulling off. You shouldn't pull all of that off. only the chunks of fat that are left on them. The chitlins that she had had already been picked. The real nasty stuff was going. She threw away just as many as she kelp. She bought three beds and ended up with 2.
Exactly! It's American and deserves respect! It is extremely helpful for those who can't clean them right. My grandmother was a little careless when she use to clean them, old age I guess.
Exactly! Tbh if our ancestors didn't eat them not for nourishment, but for survival a lot of us wouldn't be here! To each their own! If you don't like them, don't eat them! If I don't like something I won't eat it and go on about my business!
