Recently, I discovered that there are a few SECRETS that nobody shares: first, NOT EVEN THE FIRST PANCAKE goes awry, as I, too, had been told by many! There are Swedish pancakes, there are crêpes in France and there are palacinki or palatschinke, in Austria, Hungary, and Bohemia( Czechia). I've been cooking and baking for 65 years of which my palatschinke-making takes about fifty. I found out that even in my family recipes "my" women "omitted" some details. My nonagenarian mother chuckled when I pointed it out the other day: "You really didn't think that after all struggles someone would hand it to you?" HERE is the FIRST DISCOVERY: EGGS ARE MIXED WITH FLOUR AT FIRST! It's done vigorously, until a smooth paste forms. NO LUMPS HERE!! Some LUKEWARM MILK IS ONLY THEN WHISKED IN, and salt and a dollop of oil are added. After you pour the batter onto a shallow well greased, hot pan, KEEP MOVING THE PAN, lightly shaking it, and OBSERVE STEAM coming out of the pancake. If there's none, that's when you flip it. That way you'll get safely the full batch. Have a great weekend!
Fun fact: Sweden have “pancake thursdays” where we eat pancakes with strawberry jam and whipped cream together with a bowl of yellow pea soup. And pancakes arent actually considered a breakfast food over here.

Crepes is a dessert and Swedish pancakes is considered a dinner/lunch food because of the things theyre usually served with. Theyre also thicker and traditionally not made with any sugar in the recipe
If y'all want the authentic Swedish experience then eat it with a smear of butter (let it melt) and then caster sugar on top of that, roll it up and enjoy! Jam and whipped cream works too (but absolutely not out of a can, that shit is sweetened). Never had almonds on a pancake but guess I'll have to try now.

Plättar are just smaller pancakes. Like the size of a glass, usually made in a special type of frying pan that can fry like 6-8 at a time. So no inspiration from them :) These are just regular old Swedish pancakes.

Goodness me, that is exactly how my own goodwife makes us pancakes. A bit of this, some of that and splash of milk, a couple of eggs, butter and into a buttered pan. I likes 'em thin and she has thick so we compromise and haves 'em thick. With clotted cream and jam of the week and just for fun to add a zest , there is a squeeze, sometimes of lemon and sometimes of....her tender hand.
“Whipped cream” from a spray can?!,!!! Yikes! It takes no time to make small amount of real whipped cream. I’ve lost some respect for Nigella on this one.
