It's snowy marshmallow icing looks fabulously festive, even when you don’t get your old Christmas cake decorations out to adorn it, as I have here! The cake it covers (and fills) is deeply, darkly, lusciously chocolatey, intense enough to counter the sweet icing and tartly offset by a layer of raspberries in the middle. True, these are not seasonal, but I don’t expect you to use fresh: give them time enough to thaw, and frozen raspberries do the job perfectly. Tradition is a glorious thing, especially at this time of year, but I’m all for embracing Christmas rituals of our own.”

Hi Nigella.glad your back. Followed you for a long time. First saw you at Christmas one year. I live in the states. And worked all the hrs God sent. Well it so happened that I had worked a 36 straight to finish a particular rough job, and I got home and sat down with a cuppa tea and flipped on the box. Wrong fell asleep, don't know for how long ,but was awakened by your voice . You were preparing a traditional English Christmas dinner. So homesick had to call my mother despite the time difference. And have been following you ever since. I have several of your books . But Christmas dinner is my favorite. Hoping your well and back for a good while.

Haven't seen her in a very long, long while. But I'm always being greeted by tons of her old videos from as far back as the early 2000s... I can notice her voice getting a bit older sounding, but she looks as fab and as young as she can be. Glad to see her again

I have a good recipe for a frosting that shouldn't be too sweet and is easy to eat large spoonfuls of. It's a swiss meringue buttercream. It's just 3 egg whites and 155g sugar stirred over a hot water bath with the stove turned OFF just till it's dissolved completely. I suggest stirring with a whisk for a couple minutes. This is an optional step but you can add either a splash of a teaspoon of white vinegar or a pinch of salt to reduce the sweetness further, just to be safe. After stirring, It should be quite warm in temperature and you should be able to not feel a granule of sugar. You can figure this out by dipping a clean index finger to feel the warmth, and rubbing the mixture from your index finger against your thumb to observe any granules of sugar. If there's none, it's done! Then take the bowl off the hot water bath and whip it for a good 5 to 8 minutes on a high speed. You should be left with a luscious meringue that has stiff peaks. Then add in 155g of SOFT room temp unsalted butter (if your kitchen has a tendency to remain quite chilly, you can pop it in the microwave for just five seconds at a time till you can squash it around with a spatula. (You don't want melted or warm butter, you just want it to be pretty soft. Don't worry about any slightly melted edges, you can just mix them away.) Anyways, you wanna whip it in till the butter and meringue mixture is homogeneous. You can also add flavourings or colours from here. This frosting will pair well with this rather sweet chocolate cake recipe.

@@phattjabba They are very much alike.... They're both white sugar. And one is just finer. Both give the same tasting result of sweetness but granulated sugar isn't guaranteed to dissolve away completely because it's less fine than caster sugar.
