      This is my go to recipe, but I adapted it a little. Hot sauce in the buttermilk, marinate at least 4 hours.
      In the flour dredge, I cut the salt and replace it with 2 TEASPOONS of Baking POWDER.
      Do Not Use Baking Soda! It will leave an unpleasant metallic taste. Use Baking Powder
      Turn it through the flour mix and let it rest for 15-20 then dredge it again before frying in 1/2 inch of Canola Oil. Crispy. Juicy. Yummy.

    Im from Georgia and i was taught to soak chicken in buttermilk overnight. I use 50/50 flour and seasoned flour mix and add a little salt, pepper and paprika. I use a egg wash and sometimes double coat it depending on my mood. The way my granny taught me was sprinkle a little flour in your grease to check the temperature of it and the chicken floats when its done. Also I cook it in lard. . Never tried the dill pickle juice. I will have to check that out.

      @@richardcaton7334 You're so right, Richard...we love our kids fiercely but there's something about grandbabies that takes our love to a whole 'nother level of love...what you said was really really sweet...my grandson was a wrestler 🤼 in high school and I never missed a single match or tournament in four years, which were the highlight of my week and I was the team mom/grandma and it was an honor for me as all the kids (both boys and girls) on the team always called me grandma B...now, my grandson is one of the wrestling coaches for his alma mater! Growing up, my grandmother used the paper bag method and a large cast iron skillet. Never used buttermilk but I'm gonna try this. Still have the skillet from my Grandmother too.
    Great video. 👊

    • @brendafoster4712
      @brendafoster4712 3 ปีที่แล้ว +9

      I always use buttermilk and learned that from my grannie, God rest her soul❤️...it adds a whole different level of deliciousness to your fried chicken...I learned from my grannie...first soak in buttermilk for an hour or two or however long you want, then your spiced-up flour (I shake mine in a brown-paper bag), then an egg wash with a little cream/milk in it, and finally another shake or roll in the flour...makes for really really mouth-watering chicken! If you're going to make gravy for those mashed potatoes you're serving with that chicken, be sure to take anywhere from 3-5 tablespoons of your spiced-up flour and set it aside to make your gravy...be sure to do this before your first shaking of the chicken in flour right after the buttermilk soaking so that there is no raw chicken in the flour when you make your gravy...I always use milk to make my chicken gravy and you get this nice lucious thick white gravy with loads of little bits of chicken drippings (I think Emeril calls them the "yummies") that are left over in your skillet after you're done frying your chicken...be sure to dump out any excess grease, but leave a little for mixing that spiced-up flour with that you set aside to make the roux for your gravy...trust me, you won't be sorry because you're gonna be lovin' that fried chicken! I use a combination of olive oil and butter for frying my chicken and just enough for frying (in a cast-iron skillet)..no deep frying for my chicken unless I'm using my deep-fryer and then that's a whole different ball-game. Enjoy!

    Absolutely amazing. He really is out here simplifying these recipes? What I liked most is there wasn’t any waste! A lot of these recipes have us using several cups of flower and spices for a basic amount of meat…. Looking crazy at the end. Noy this time! Love it!

    Okay, well now I know what Sunday dinner is going to be. lol. I have to say, since finding AB, my kitchen is better stocked because I've learned from AB the things it's good to have on hand. I never thought I'd see the day when I'd consider having chicken stock as a regular part of my pantry...lol. Seriously though, if you all haven't gotten some of that infused Olive Oil as part of your pantry, you are missing out hard. Today though, it's going to be Southern Fried Chicken, gravy and mashed 'taters, corn on the cob...mmm. Thanks AB, you are my favorite food angel!!

    You are making me want to make a batch of fried chicken!! My mom used to coat the chicken, put it in a plastic bowl with lid, and shake it good. Once, she put it in the refrigerator for a few hours, and oh my word, it was so crispy and good!!

      Or one of the many people who know "when dat shimmer pop up on the oil" isn't an accurate measurement of temp, seeing how "dat shimmer" appears when the oil is less than 300°. Which means adding the chicken to the oil at 300° is actually the better method than waiting till a thermometer tells you the oil is 360° because when you pan fry chicken you should always cook "LOW AND SLOW". Honestly I'd give him a thumbs down for the simple fact he didn't say the phrase "LOW AND SLOW" seeing how that is the golden rule of pan fried chicken. He contradicts himself by saying the oil should be 360° AND ALSO SAYING you should cook on MEDIUM HIGH heat. Medium high heat on most stovetops get oil to over 400°. Which will leave you with burned skin and raw meat. Pan fried chicken should be cooked on Medium heat at the MOST. That's for small pieces of chicken. The majority of chicken nowadays is on steroids so they are HUGE pieces. This chicken should be cooked, AGAIN, low and slow.
      That would warrant a thumbs down I believe. Of course he is a Northerner posing as a "dOwN hOmE sOuLfOoD cOuNtRy cOoKiN gOoD oL' bOy" so I wouldn't be surprised if he's never even heard the phrase "Low and Slow". 🤣
