    I’m 62 years old and I’m not criticizing anyone. My grandma made the best fried chicken I’ve ever eaten. All she did was flour, salt and pepper a paper bag lard and cast iron skillet. I wish I could go back in time and be in her kitchen eating her chicken and everything else that she made. I would tell her again how much I loved her cooking, and how much I loved her. I miss you grandma Irene.

      Thats alright everyone has their own secrets My mother uses mayonaise, mustard, thyme, fresh rosemary, garlic, salt and pepper and last to the flour adds up garlic and onion powder OMG i prepared like hers but trastes different every perdón has their own seasoning and flavor differs don't know why.       I'm 72 & my mamaw fried chicken the same way... she fed her family or preachers her fried chicken & biscuits most every Sunday. I love & miss my angel Mamaw Zella.

      No see my mother always soak the chicken and milk 1st. To this day I swear that makes all the difference in the world.Ironically I used the identical seasonings Paula does, Or I should say my mother did because I make it the exact same way but I put them in the flour. Mine is the hot sauce in the eggs. (Edit, not sure what my dictation cut off, but I'd NEVER put hot sauce in...not a huge spice fan. I like flavor). .But as someone wisely said we all have our own way. I often with try something another way To see if I prefer it but personally I think my mother's fried chicken is perfect!And when I make it. It brings back such happy memories so this is 1 recipe as much as I adore Paula, that I won't be trying

    My grandmother lived with us and I always thought she loved the back and neck but later on I found out she was saving the best pieces for us! Broke my heart😥

      It's what we do! I always eat the smallest piece or sometimes just veggies and cornbread because it's "more healthy". I have five children and nine grandchildren and I don't mine the sacrifice. So many blessings,❤❤

      I was at an Aunt's house and she had lots of company coming. She fried 1 chicken and I was shocked. Then she and her daughter in law put together a huge spread of salads and vegetables. And desserts. No one cared if they had chicken.

      I miss her too. I don't enjoy food network anymore. Barely any cooking shows, but alot of contests. Wish they would go back to the old ways.

      Since they took her off i was watching pioneer woman but now she has her kids all involved in video recording and i am no longer interested i think its greedy of her to make sure her older college kids are now horning in when ree drummond is married to a cattle ranch owner that owns half of thestate and land and they own stores in town that are huge tourist sites and their lodge they rent for weddings and they have a catering business a bakery a diner ree goes on food network bake offs and she has her own line of cookware and serveware in walmart stores come on! Does she really have to make sure her daughters who are attending university paid for no big deal and her own cooking show and she is supposed to be starting on a tv show soon!

      @@gritskennedy5007 I used to subscribe to Theresa Roemer's site but she was another one that brought in her daughter and that's when I lost interest. Her daughter adds nothing to the show since she appears to simply ride on her mother's coat tails, but that's just my opinion.

    When I was a little boy my Grandma always ate the back and the neck. I thought it was just because those were her favorite pieces. I didn't realize till I got older that she did that so the rest of us could have the good pieces. Even then she would always give one of us kids the "Pin cushion or Parson's nose." I learned more about frying chicken in 20 minutes watching this video than I have in 50 years of trying to cook it like she did. Thank you Paula. That chicken looked just like Grandma's.

      My mother used to that too, get the part of the hicken the neck, back and the good parts of the chicken is for us kids. That's how Mother's love, and now I have two adults children and I think I carry that on as a mother. Thanks Paula, and BELATED HAPPY MOTHER'S DAY. GOD BLESS YOU.

      My Auntie always cooked the backs and necks when all of us kids would go to her house in the summer. She did it because they were super cheap at the meat market and there were a million of us lol! She'd fry them in the morning and we'd run in and out eating chicken all day lol.     Back in the 90's I remember Paula seasoning her flour with black pepper. That's what I do whenever I make her fried chicken recipe. She's the one and only woman who taught me how to fry chicken. I am so grateful

    I use buttermilk in my marinade and soak it in the fridge overnight. It helps the chicken to stay very moist.

      I do the same. Very tender chicken! And I do season my flour. Celery seed is my secret ingredient, along with the usual salt, pepper, garlic powder.

      @@HappyCats17 I use overnite soak in buttermilk too.Do you crush the celery seed? I grind my celery seed with a few leaves of thyme in my mortar & pestle or use celery salt, onion powder, paprika, a pinch of cayenne and s&p. I add that to my flour.

    Thank you! Now I know why my fried chicken never cooked completely and thoroughly. Monitor the temperature of my oil and don't put cold chicken in hot oil.

      My friend uses two eyes since she doesn’t have a gas stove. That’s how you can maintain the right temperature with a glass top stove... go between the two eyes at different temps :)

    My mom would always cut up a chicken, season it, and coat it in flour ! She would always fried it Crisco cooking lard ~ it was EXCELLENT crispy out side, and juice tender inside ! YUM I tried it way she done it, and NO WHERE AS GOOD AS HERS ~ HERS WAS EXCELLENT

      My Mom used to fry her chicken with buttermilk. She slways kept buttermilk in the frig bc she would prepare biscuits with it also. Would've loved to see these two in the kitchen together. I miss Mama's cooking. Miss Mama period.😊

    I remember my momma watching you as a child, I learned to cook more independently from the kids cookbook. But I’ll say it was my momma, Mamaw and you that ignited a love for cookin but love getting to make it for everyone. Sure glad I can still watch you ❤️

    We pasture raise heritage, slow growing chickens and turkeys. Out of 100 chickens, we harvest 50 at a dressed weight of 3 pounds, 25 at 5 pounds and the last 25 at around 7 to 8 pounds.

      375° is a helpful temp. Then only fry 1-2 pieces at a time rather than all at once. This makes sure temp stays right.

      Pop overs?? Strata? Lots of yummy breakfast ideas. But my go to for a yummy breakfast is eggs rancheros. Pork chorizo, minced onion, a can of fire roasted tomato, poached eggs, yellow corn tortillas, sour cream, fresh avocado and cilantro...are all components to a hearty breakfast! I'd love to show you how I fix this!!

    I have made this twice and it is by far one of the best I’ve ever tried! I cannot keep enough of Paula Deen’s hot sauce, seasoning mix and now biscuit mix! Tomorrow, I’m cooking it again in my new T-Fal deep fat fryer with automatic oil cleaner built right in. There are several You Tube videos on this product, so I hope Paula Deen’s Southern Fried Chicken will be better than ever!

    I'm 31 and a mom of 2 picky under the age of 8,children and have a 5 month old baby girl. I'm a stay at home mom and I homeschool. EVERY recipe I need I come HERE. My mom always made "Paula's" recipes and her only just about for everything we can find one for. My children start their morning with breakfast and Paula Deens voice walking me through today's recipe. I love you Paula.       I remember her saying years ago that she didn't like her food to hurt her. I'm similar, I like enough spicy to be interesting, but not brutal. But dang, a whole bottle?! It must be pretty mild.

    My husband was raised by his grandparents and they dressed and sold fresh chickens, also sold fryers as 2-1/2 to 3 lbs, never larger. Now they make them 7-8 lbs, tough old birds too.

    I’m just starting your video so I’m not sure how you do yours. I leave my chicken set out for about 30 minutes. Once I bread my chicken I sit it on a cooling rack for 10 minutes. I preheat my oven to 350, I line a sheet pan with foil and put another cooling rack on that pan with foil. I fry my chicken in batches. As I take one piece out I add another one to the frying pan and put the cooked ones in the oven to stay warm. By adding a piece as you take one out it keeps the oil at a more even temperature. And what you’ve fried is staying warm in the oven. I like just salt and pepper.

    Paula has 3 dogs and it’s so fun how animals can be such a hoot to watch in the house ...I’ve got 3 cats a very intelligent momma gray cat that use to be a feral I took in and her kids two beautiful black cats ...a tomcat and his sister a sweet female cat... it’s amazeing how their personalities are so different and how sweet and funny they can be interacting with each other .

    My grandmother would put the lid on the skillet. Now you have to take the lid off at the end of the frying. It makes the chicken soft and crisp on the outside. She could here the grease and tell how hot it was

    My mom's fried chicken is awesome. She uses a flour mix similar to Paula's but she doesn't deep fry it rather she fries it in a pan with a couple of inches of oil that
    is mixed with bacon fat. She'll brown one side well, then turn it over and brown the other side then cover the pan and let it cook for awhile until the chicken is done.
    Then at the end she'll turn the heat up high and bring that grease to a rapid fry and that crisps off the chicken at the end... drain on paper towel and then serve to
    hungry Christians at Sunday supper.... along with mashed potatoes, chicken gravy, green beans from the garden, sliced fresh garden tomatoes and cucumbers, and
    ears of corn drippin' with butter. Dessert will be a fresh baked lemon meringue pie piled high with meringue and ever-so-slightly browned off.... all served with big
    icy glasses of tea with a big ole chunka lemon so sweet you'll be energized for days :)

    I've been frying chicken for a few weeks in a pot before I bought a deep fryer. I learned that cutlets, thin pieces, cook well at 350. They cook, and sometimes over cook at the same time the breading is browned and crispy and done. Big thick pieces do not cook through at 350 before the crust is well burnt. Got to cook it at a lower temp. To slow the crust from burning and the longer time with lower heat will cook the inside. Stick a thermometer in the center and go for 165 internal temp. You got lucky your temp dropped so much. I think I'm cooking chicken in the fryer at 320 now.

    When I cook chicken I use about the same seasonings, but I add paprika and chili power, set the meat out and let it come down to close to room temp( cold meat seizes up and becomes tough when you heat it up). I use two cast iron skillets at the same time, one for the big pieces and one for the smaller ones, because they take diff cooking times and over crowding the skillet makes the grease bubble up and makes a mess.

    I've lived in Alabama for 67 years and although Paula's chicken looks good and probably tastes good, it's "fried chicken" not "southern fried chicken". True southern fried chicken is not deep fried it's pan fried with about 1/4 inch of oil in a skillet. It should be lightly moistened and breaded and not battered. Flour, salt, pepper and if you want put in paprika for a pretty color. Then shake it around in a bag throw it in a large cast iron skillet with about a 1/4 inch or slightly more of pre heated oil and pan fry it. That's it, nothing else is needed. I don't use a thermometer in the oil so I don't know what the actual temp. is. I've done it so much like my grandmother used to do it that experience is what I go by. Paula is absolutely right about the chicken size. I like 2.5 lb. whole chickens. I refuse to buy a chicken over 3.0 lbs. I'm not going to fry hens. Hens are for baking not frying. I also won't buy a pre cut chicken because they don't cut them correctly for fried chicken. The store splits them in half then cuts the pieces from the halves. When you do it that way you have no whole back pieces and no pully bone. If you don't know what a pully bone piece is you're not southern enough. LOL! Great video and I may try this " fried chicken " sometime. It looks good!!

    We went to Branson three weeks ago, we ate at your family restaurant. There were four of us. We had catfish, meat loaf, pot roast, and fried chicken. We decided when we go back, we will have roast and the chicken. We will add pork chops and ribs. Great place to eat.

    Thank you! My Mom taught me the same thing...buy small chickens! We are doing fine here in Conroe, Texas ( just outside Houston). Mom is 93 in Assisted Living . One lady was sent to the Hospital with covid, but is doing well and expected to be able to return soon. Love to you and yours

    Agree with her on the flour - If the chicken is seasoned well, seasoning the flour is unnecessary. And her recipe requires no double dipping/flouring to make the coating stick or crunchy. Good recipe.

    Ma'am Paula Deen I lost my mother when I was 12 so I never really learned to cook her favorites and my favorites from her but one of her dishes she called it chicken fricassee because she didn't know what else to call it. It was a greenish color with broth with a wonderful taste and then floated biscuits on top and baked until they were brown. Most delicious mean from childhood. Are you familiar with any recipes you make?
