I’m a white teen who’s never had soul food before. I was interested in expanding my food palate (I have a passion for trying different foods) so I followed your recipe without any changes and o…m… g… I was immediately in love. The flavors were dynamic, there was just the right amount of a kick but it was still warm and comfortable and homey. Everything I could ask for in a comfort food. (Tip for the Mac and cheese: if you have the ability, try to not use any shredded cheese. Use fresh grated from a block! The shredded cheese has a powdered anti clumping agent that prohibits that glorious melty, pizza commercial level cheese stretch when it’s baked on top :))

story time: my cousin got married a couple years ago and my husband has never been to a Portuguese wedding. They had food coming out for 6 hours straight and most of us ate the entire time. (But there was a little dancing here and there too)
Well my man can EAT but he looked at me at one point and said, “you guys have a problem”

Love my mother to death. I didn't know how much work she used to do cooking like this EVERY DAY. I kid you not. She cooked full-course soul food meals...breakfast, lunch, and dinner...daily. We only ate out every other month on Sundays to give her a break. I didn't realize how good we had it until I went to college and heard kids say that spaghetti was a full-course meal. Spaghetti was a side item in my home. None of us were overweight because we ate soul food because we also didn't eat McDonald's, Popeyes, Wendy's, or any fast food really at all...very rare. I appreciate my mom seeing how much work she did over the years. She was able to do this because she was a housewife and didn't have a job with a paycheck, but she definitely put in work raising 5 kids, cooking, cleaning, teaching, and everything else.

I lived with my parents, 5 siblings and my grandma and she was the same way. She'd whip up huge meals 3 times a day. We'd joke that she could create a meal out of thin air because I swear there'd be hardly any food in the house and then next thing you knew, she'd whip up a huge meal. None of us were fat, either, because the food wasn't full of artificial preservatives and we walked a lot, too. My grandma, who was from the Caribbean, was the world's best cook, no exaggeration 😊

Try it out and enjoy. I’m not trying to change her recipe but try salt free Tony’s seasoning to cut back on the salt. I’ve never seen anyone season with a buillion cube on the meat either but Imm sure it’s good added on. Don’t wait for a holiday to make it on a Saturday for Sunday dinner as it will take all day to make. Then once you like it make it on a holiday for the family.

You'll never fully clean that dirty bird. Slave food turned into soul food. Black people traditionally and naturally didn't eat swine nor dead birds. They call poultry "fowl" because it is "foul" to eat. Chickens eat their own shit, eating one is like eating a vulture or a buzzard. Wake up people, we are natural herbivores.

Love to see there are some people, like myself, who still cook this way. This is the food I was raised on, learned from my mom and my granny, now I am teaching my son. No better food than good homemade country cooked soul food! Raised in Appalachia and still here, for me it's heaven.
I love your videos there's nothing more comforting or filling than food like this, sadly, with all these people nowadays eating like rabbits, this style of cooking is almost a dying art. 👍👍❤❤❤❤❤

I was taking notes like a fiend when you were doing the chicken. I've been cooking for decades but I always recognize someone I can learn from. The flavor combination on the chicken marinade (and your explanation) are proof alone that soul food can be sophisticated and nuanced while still delivering that "comfort food" joy. I love to hear real chefs talk through their thinking and I really enjoyed what you had to say.

Contrary to popular belief, chicken marinade (no matter how long you leave it) doesn’t penetrate further than the chicken skin. The chicken surface gets a lot of flavour but there’s not much you can do to season the ‘inside’. Using an acidic medium like buttermilk helps tenderise the meat though, and it is worth leaving that overnight. This looks absolutely delicious and I wish we had this kind of food in the uk 😊

Yum. Like your style. 🧚🏾 I was taught how to burnnnn by women and men who can cook- cook. I add a different season for savory sides, each to distinguish the flavor. I don't use Lawry's. It makes everything taste the same. I create my own base season without salt for the chicken. I brine chicken in salt water, and herbs, garlic cloves bay leaf (talkin bout flavorful & juicy!) then i season & marinate in the buttermilk. The season I use for the chicken is spicier than the base season I use in my veggies. My dad taught me how to make bechamel sauce from roux for Mac & cheese, homemade Alfredo sauce when I was about ten. My veggies I prefer fresh or frozen. I like to tease the palette and marry the flavors from each item on the plate and keep ya mouth watering for more. This video made me hungry sis 🌹I want them yams!

Everything looks so delicious. The yams were a revelation. Confession: I usually buy those big cans of yams for thanksgiving and then try to doctor them up, but they're always too sweet and too mushy. I'm going to try your way because they look perfect!

The reason why I don't cook canned vegetables, because they are mushy and they taste like the can. I like fresh green beans as well as frozen green beans.

I make my Mac n cheese like yours but something I just tried was melting some cheddar on the bottom of the pan before you add the noodles, it’s so amazing gives you a crispy cheesy bottom. So good.

My family always adds a little yellow mustard to the mac n cheese roux and its great! Even if you dont like mustard, it doesnt really taste of it, just enhances the wonderful cheese flavour

Yes for years my grandmother added yellow mustard and cream of mushroom soup to her famous Mac and cheese. She used to have to make soo many pans of it because ppl will be tryna take plates home lol
