Rachel, is sharing a canning recipe for potato soup and is creating it based on available ingredients.
She begins by using potatoes that were starting to go bad and chopping them up to make the soup.
Rachel combines the potatoes with veggie broth, chicken broth, carrots, and various seasonings, such as salt, pepper, and Creole seasoning.
She discusses possible variations of the soup, including cream of potato soup and using it as a base for other meals like chicken pot pie.
Rachel prepares the soup for pressure canning and mentions she ended up with 14 jars of potato soup and one jar of potato soup broth.

I have precooked shredded round roast in my freezer and can't help but think how yummy this would be on top after using the broth to make gravy! Thanks Rachel for this I just bought 50 lbs of taters yesterday and was going to can most of them plain but now I will be doing some as soup!😊
I absolutely love your “what’s for dinner” videos! Can’t wait!! 😊 And this recipe looks delish.
LOVED the cameo of the grand baby! SOOO precious!
This looks good. We had an abundant harvest of potatoes this year and I always hate losing so many of them mid winter.
I really like this video on creating can-able recipes. Teaching people how to craft a safe canning recipe without having to follow a recipe in the blue book etc word for word is something I don't see much of. Lots of people are weary of going off script with a recipe and scared of botulism as a result. A video on how to with basic deviations would help lots of people, including things like changes at high elevations, ingredients and uses like you did here. Great video.
This recipe is reminiscent of “loaded potato soup” recipes! Love it!
Love this! And the ideas for how to use them in the future. I see options for some ham and potato soup. Maybe chicken and Poblano stew. Leftover roast into it. Sausage and kale with it. Potato corn chowder. Yum!
Oh my sausage and kale! That sounds delicious
I am going to try this recipe. We love potato soup at this house. Thank you!
Thank you. I love the "what's for dinner" video's. Love all your vidoes❤
You can use instant potatoes to thicken the soup . Bring to a boil and stir some in . Cut off the heat . I use a whisk to mix the instant potatoes as I pour them in
great idea!!!
I don't do a lot of likes on videos so that I can use the "library" for the videos I'll go back to over and over again. This one got a thumbs up, and will join several other of your videos in my favorites!
Hi Rachel nice recipe. I'm going to print this one and make with Mike. We will cut it in half. Blessing to your family. Rochelle
Seems like a great beginning for a kale and sausage or kielbasa soup, with cannelini beans, maybe some canned tomatoes!
Awesome!!
Miss Rachel, will you do a pantry tour since you let your garden rest this year?
Looks delicious, Rachel 😋 love watching your videos ❤🙏🏽🫂
I would love to see a series of videos of just recipes just from your book! How exciting that would be
Leftover mashed potatoes is another great way to thicken. Great ideas and thanks for explaining about how to figure out the time. Your recipes have never failed me yet.
Or some instant potatoes!
Thanks for your great videos!
Yet again I am inspired! Thank you Rachel!
Hi Rachel & Todd., I love Potato Soup., Potatoes 🥔 I can’t have a lot of Carbs., I do make it every-now and again 11-5-2023❤
I should use my roaster for making soup. I have been looking for a stock pot. But I have one of these so I'm going to save$$ and use it!
Looks like a chowder base to me! We'd add corn, chicken and roasted chilies with a hit of cream. Yum!
That’s a great idea. Thanks never thought of doing it.
This looks divine. Thanks for the recipe!!
I have lots of potatoes at the moment. You’ve inspired me to can some potato soup!😘❤🙏🏻✨
This recipe has endless possibilities! I love watching your videos, they get my imagination going. Looks fantastic!!
Love this idea, thanks for posting this video
I’m so happy I found you today because I have about 20 pounds of potatoes and needed some inspiration to can them besides chunks of potatoes
Thanks for this great recipe. I will try this myself. I liked the idea of immersion blending
I really have to know how you can manage to do all of this canning with your sleeves down?!?! Mine would be a wreck 🤣🤣 love your videos 💛
The color of that broth is amazing and looks really yummy!
Looks yummy 😊
Looks delicious. Thank you for the ideas after canning a base soup. I think this would be delicious with lots of different meals.
It looks so good ❤
I’m sure your family will enjoy your home canned soup! Thanks for sharing.
Good to be back in the kitchen with you looks delicious. Love from Virginia ♥️
Great idea, I like it! 👍
new to canning (my third year now) and the idea of "multi-use versatile canning" is a game changer! Thank you so much for the inspiration!
Oh my goodness. Now I want potato soup. Love this.❤
Soup bases are great to have on the shelf!
I love the chicken pot pie idea. Totally going to do this and give some to my daughter who just moved out on her own
Great ideas; thanks for sharing! 🤗💗🇨🇦
Great idea.
Looks good 👍
cookin' /canning video!!!! woo hoo Rachael!!!!
OMGosh. I love this idea. I just got 50 pounds of potatoes so I'm definitely using some for your recipe. Thank you so much.
Hey Rachel, great soup idea it uses many of the items you are not sure how to can all by themselves. I recently found a recipe for using green tomatoes. I found a few recipes for green tomato curry. I took all the best ingredients from each and the best cooking techniques step by step and came up with my own ingredient list, spice mix list and my own methods. My wife said it was a first time hit don't change a thing. This is rare because she is picky. Usually it takes two or three tries!! I did make enough for supper two nights and then 9 quarts which I canned in the pressure cooker. Now it is ready for a fast supper some meat and rice our and serve (9) times. This is in part thanks to watching you with the giant cooker I bought 2 of them at goodwill for $5 each they were barely used musta been a wedding present for some folks that do not cook or have small families. Thanks for the video today. God bless y'all take care.
I can't wait to try this! It's my favorite soup but usually takes me forever to make.
I will be doing this soon!!
Good Job! 👍👍
Super❤
This looks wonderful!
When I make potato soup I add some Basil and Parsley.
Love this , I use instant potatoes to thicken my potatoes soup, 🥰
I like adding potato flakes to thicken up my potato soup.
Another awesome canning recipe, Rachel, Thanks again! It was a disaster year for my garden(we just moved to our original homestead so the kids can have the big farmhouse that we were living at) and goodness, so much work to clean up the yard after renters and no attention. Big plans for the upcoming year for the new garden space! I sure missed having my garden but bless her heart, my MIL told some relatives about my disaster and "boom" my kitchen was bursting with gifted fresh produce.
Another idea: base for vegetable beef soup. Yum
I have 100 pounds of potatoes left to use from 200 pounds that was given to me, I have canned 14 quarts of potatoes and now some will go into potato soup making this recipe and then cut and freeze the rest. Thank you everyone.
Such a good idea.
I saw a spider on the counter! I had one just like that in my laundry room yesterday.
Yes! Please!
I would use it for a squash soup. Same things in it and I have lots of buttercup squash to use up.
Rachel I thicken my soup after it's been canned, is instant mashed potatoes. Yummy
I have chicken broth on low in my giant roaster so this is getting my thoughts going. Thank you for the inspiration. I didnt want to just can chicken broth as I already have 3 cases of quart-sized jars. I have fresh carrots I was going to can with steak in a jar meals but my girls wanted the steaks for home-made fajitas. I also have celery. Eureka!
I use canned chicken stock for sauteed chicken meals, etc. Can you ever have enough put away? 🥰
Never thought of adding carrots to potato soup - hmmm - may have to try this with some of my potatoes awaiting canning.
You are blessed. Extra potatoes. I'm hoping to be successful first time in the ground. Buckets grown were easy but way too few. I'll check your channel for tips.
Whenever I have broth left over from something I've canned, I freeze it in an ice cube tray then pop the cubes into a ziplock freezer bag. I'm going to cook with it, and so far my best has been French onion soup broth.
Sounds awesome! I have both potato chunks & fries canned up. Now I`ll be adding some tater soup to my soup section! Thanks for the inspiration!
I enjoyed this maybe please make a video update on the small barn or shed ya were working on please 🌱 🥔
Your grandson is a doll!
You can also use dried okra for a thickener in soups!!!
Oooh, I'd add red curry paste and serve it over rice!
I made potato leek soup today…. Curious about adding carrots, I’ve never seen that done before. I use instant potatoes to thicken my soup your broth jar could still make it soup. Just add noodles, maybe chicken
How about adding some kale and beans? Oh, yummy!!
I bet you could cook some lentils or split peas in this soup base, add some ham.
My son just took a jar of this out of the cream some instant potatoes for thickener and smoked baby clams for some clam chowder said it was delightful I can't have seafood so I don't know but I thought I would mention it
That looks super dark from the broth. Not like your typical potato soup. Looks fantastic!!!
I just made mine into beef Stew. My husband this year request more ready made meals canned. As it's getting cool, I'm working thur ideas. Did you ever make a slow joe canned mix?
Suppa Toscano soup, clam chowder. Ham and potato, kielbasa and potato . . .
Oh Grammy don't worry about us..go read that book😂❤
I have been wondering how I could get away with canning my potato soup and oh my gosh this is going to happen it is so close to my recipe and for my thickener I add potato flakes so the cream and potato flakes and ham will get added after its canned but I have everything in my pantry minus the potatoes right now I'm so excited. Thank you!
❤❤
Speaking of creating your own recipes based on what you know is safe. I have a question and I've tried to reach out to few people on Facebook and can't seem to get an answer from anybody!
I wanted to can whole berries not just one kind but mixed. I couldn't find a recipe for what I'm making so I kind of created mine own based on what I could find that was safe.
Everything I found said for any kind of berries basically this will work so I used a mixed berry blend with blueberries, black and raspberries then I added cherries because why not.
Anyways it was 3 lbs of berries 1 lb of cherries
They said cover the berries and bring to almost a boil which ended up to be like 14 cups of water which was crazy so I was like lemon juice should help if this is to much water so I added 1 1/2 cups of lemon juice and 1 1/3 cup of sugar
Filled the jars half full of the berries then topped with the juice up to 1/2 head space. I filled as many jars as I could half full of berries but still had tons of juice left also so I did the same filled it to 1/2 head space. Water bathed it all for 15 min 😮
All the recipes I saw brought there blueberries to almost a boil then added them to there jars and topped off with hot water and water bathed canned with no lemon or anything just plain water but I used the water I had brought the berries up to almost a boil and added that extra acid from the lemon juice.
This is my first time ever canning anything and my canning cook books havn't arrived and now I'm just terrified to try it now because I kind of tweaked it
I'm gonna make this, but I'm gonna substitute 1/2 the onions for leeks.❤❤
❤❤❤❤
You could use that as a base for almost any soup! Split pea, ham and potato chowder, sausage and kale, etc.
The tradition at the restaurant I worked at was Potato soup on thursday and Clam chowder on Friday. Don't know that I'd add carrots fo the meal starter if I was heading that direction.
Great video. I've wondered how to can up potato soup. Don't add the cream, duh 😂
Do you have your own cook book for sale. Just ran across you two and just love your views
Corn chowder would be good or add some small pasta and some beans !
You should publish your book. ;)
Potatoes and dumpling kielbasa soup
Thanks, Rachel... I have too many canned potatoes. Do yo think this would work with canned potatoes? I'll be blending it in the end anyway when I add the cream.
What brand immersion blender do you have? I love your what's for dinner videos!
there should be a link to it in the description of the video
Try Shepard pies pie and beef lamb, top with more potatoes but mashed lots of cheddar cheese
Thank you for taking us along inside your mind as you figure out how to make your expiring potatoes into shelf stable meals.
I found this very helpful!
I wish that you would have discussed why you were ok with taking food you already canned (broth, carrots) and open those jars only to use them to can again.
To me it seems like double work
can the broth
can the carrots
couple months later
open the jars of ingredients you canned only to can them again just in a different format
Thanks for creating awesome content
My rigid brain says this this is a lot of extra work-lol. I would love to hear how you look at this situation.
I appreciated how you mentioned about that you were ok with the carrots being cooked twice and that they will still give the carrot flavor.
I also appreciated how you shared the various ways of how you can use the finished product
I can potatoes and leeks together, then when I want soup I simply grab two, one gets immersion blended and one doesn't, it makes the best creamy potato soup, of course season as you want.
Cabbage and your ham
I used the 'soup your way' instructions and made up my own potato soup starter. It is a nice way to save potatoes that would otherwise go bad. Are your grandbabies loving the secret play hideaway you made them?
Thank you.
I have been using your Cowboy Candy recipe. And saved the juice - canned a quart. Is the canned liquid good for the new batch of peppers? Or should I start from scratch for the liquid.
Yes, you can totally use it again for the next batch.
Rachel, What size and brand of roaster do you use? I need to start pricing them. Thank you!
I think it's an 18 quart Oster.
Question! Rachel, you said the ingredient with the highest cooking time was the onions, but I saw you adding chicken broth. Is not the broth the one with the highest timing? I'm trying to create my own recipes, too, but normally I use the broth as my highest time ingredient. Please explain. Thank you!!!
