Yes, this recipe brings out the inner 5 year old, doesn't it. I sometimes wonder how this got passed by the nchfp. Let's face it, Campbell's cans "cream of" soups, so obviously dairy and eggs are safe to can. But Campbell's isn't divulging any "how to" tips, and I can only shudder at the cost to investigate a safe method. But the curd - yum. I made some recently because I was using a lot of egg whites to create a "raft" to clarify a broth so I had all these yolks to use up. A dollop of lemon curd in a bowl, topped with sliced strawberries, and add some whipped cream to the top. I have used it in a rolled sponge log cake - wonderful filling. The nchfp also offers a version with lime juice. I am very tempted to try that sometime.
I just made and doubled this recipe. It is legit! I live in AZ so lemons are abundant. I juiced and canned my whole harvest this year. Now I need to talk my chickens into increasing their production so I can keep making more lemon curd. Thank you Rachel.

ForJars has great lids , I live in BC Canada and have lots of GEM jars and ForJars is one of the only places I feel safe for buy lids from . They have a pressure canner that I would lie to get for my daughter . I have 2 All American canners that I have been so fortunate to have been given them l

Omgosh I can’t wait to make this. I make a Christmas Lemon Curd cake. It would be so nice to make this when I have time. Then just be able to go get it from the pantry at Christmas. I make about eight of these cakes. Four as gifts, then one for our family and sell the remaining! I’m so excited!!

I'm still trying to get over the strawberry marmalade girl.! OMG is that good! I think I'm going to try blueberry marmalade as soon as the blueberries come in. Between the lemon curd, blueberry marmalade and strawberry marmalade some of my Christmas gifts will be done.

Oh, you have to get a steam canner, they are so much easier! They’re only for high acid foods, like a water bath canner, but much less water. The only thing is you have to top up the water between loads so it doesn’t run out and burn.

Rachel, my friend and I made this today and really doubted the 3 tablespoons of lemon extract. We used it anyway. Our lemon curd came out really, really bitter. What brand of extract do you use?

I've made lemon curd in the Instant Pot before and it's delicious in yogurt....I'm really going to have to try this recipe. It sounds delicious.

We LOVE lemon curd! A favorite with our family is to make Ina Garten's Challah French Toast and top it with fresh blueberries and lemon curd.
