Stocking the Farmstand | Strawberry "Shortcake" Biscuits

- Good morning, friends! 🌞 It's a bright and beautiful day here at 1870s Homestead, and I'm so excited to be in the kitchen with you. My name's Rachel, and today I'm sharing something special-my strawberry biscuit recipe! 🍓✨
Strawberry season is in full swing, and there's nothing better than incorporating these juicy gems into our baking. These strawberry biscuits are a delightful twist on the traditional biscuit, perfect for a summer treat.
🍓 Strawberry Biscuits Recipe 🍓
Ingredients:
3 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup cold butter (2 sticks), grated or cut into small pieces
1 cup fresh strawberries, chopped
1 cup milk (you might need a little more, depending on the dough)
Optional: Buttermilk or thinned yogurt instead of milk
For the Glaze:
1 cup powdered sugar (icing sugar)
2 teaspoons milk
1 splash vanilla extract (or almond extract, if you prefer)
Instructions:
Prep the Strawberries: Chop the strawberries into small, finger-sized bits. Toss them with a couple of teaspoons of flour to help them hold their juices.
Mix the Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Add the Butter: Grate the cold butter directly into the flour mixture or cut it in with a pastry fork or your fingers until it resembles coarse crumbs.
Incorporate the Strawberries: Gently fold in the floured strawberries.
Add the Milk: Pour in the milk, starting with one cup, and mix until the dough just comes together. You can add a little more milk if needed.
Fold the Dough: Turn the dough out onto a floured surface. Pat it out, fold it over on itself a couple of times, and then roll it to about ¾ inch to 1 inch thick.
Cut the Biscuits: Use a biscuit cutter to cut out your biscuits, pressing straight down without twisting. Place them close together on a baking sheet lined with parchment paper.
Bake: Preheat your oven to 475°F (245°C). Chill the biscuits in the fridge while the oven heats up, then bake for 12 minutes or until golden brown.
Make the Glaze: While the biscuits bake, mix the powdered sugar, milk, and vanilla extract to make a smooth glaze.
Finish: Once the biscuits are out of the oven and slightly cooled, drizzle them with the glaze. Enjoy!

When I made my jam , I used a strawberry huller and was amazed at how fast and how little of the berry they removed. Was basically the green and hull .
You can make strawberry syrup with the tops as well.

I used to have that Porky Pig glass. I was on a trip to Ohio and on the way back, I stopped in an antique/junk store in Pennsylvania. There were 2 of them. I can't remember what the other one looked like, but that was definitely the one I remember. That was back in 1996.
I believe those glasses came from Arby's with a certain purchase. There were different cartoon designs.
I have the whole set of those glasses.
Just made these and wow! So yummy, my family wiped them out. I tried adding extra strawberries...yeah, learn from me and don't. Dough does not hold extra, lol, but for my first time making homemade biscuits they turned out amazing. I will never buy store biscuits again.

Side note: I use my strawberry tops to make Strawberry Syrup for pancakes, waffles, etc. So delicious. My chickens used to get them all.

mmm...if I didn't have waffle batter rising on the counter because my first ever waffle maker came today, I'd be making some strawberry scones. Just about like you make your biscuits. That's how I make mine too. ;-)

These look really good and I do have strawberries to pick. However, I just made a double batch of biscuits last night with sausage gravy and I had quite a few left over. Maybe I’ll try strawberry muffins.
Homemade biscuits are still something I'm working on getting right. I've made them, but not sure I'm always happy about the texture. I really want to get away from buying tube biscuits. Maybe you can share some of your tricks about making biscuits with us. Those biscuits look amazing!!
One of the things with biscuits is to not mix them very much. Unlike bread you don't want to develop the gluten. Just like Rachel did just so it's barely blended. The recipe she is using is just like the one handed down from my great grandmother. That looks perfect.

I wanted to do this for my retirement but wow the hoops I'd have to jump through in my municipality to be licensed to sell home baked goods and even plants was such a let down. I can understand some bylaws/guidelines but others were just so unreasonable. I love your farmstand so much and wish you every success.
