    just had to laugh, in my house we say Thank You Jesus every time we hear a ping . When you were pulling out jars and they starting pinging I automatically starting thanking Jesus!

    I live in the UK. Have been making jams marmalade pickle and chutney for 50 years and have only ever used jars that previously held food that had been bought in the stores. These I get from friends and family and have never had any problems. You have to do what’s needs to be done. As long as you are confident with your results don’t worry about others. You do a great job encouraging people.

    Mostly all things I ever canned I did in reused jars with those lids. as long as the sealant isn't damaged or looks filthy and the lid isn't damaged either, it shouldn't have any bad consequences. You do you Rachel!
    Also your onions and onion jam look fantabulous.

    I wanted to share how I peeled tomatoes this year. I cored and put on sheet pan and baked at 400 for about 20 minutes and the skins fell off so I made tomato powder with the skins in the dehydrator. Worked beautifully!!!

      I did this method but washed, air dried then froze tomatoes. When I went to bake the tomatoes that's when I cored them - it is a pain when the tomatoes are still frozen. Next year I plan to wash, dry and core before they are frozen. So much nicer to process tomatoes when I want to do them not when everything needs to be processed at the same time.

    Three things: 1) Rachel, my Mom and I also use random jars with the button tops for canning as well and we've had great success with them over the years, so in my opinion and experience there is nothing wrong with using them. 2) It's good to know you didn't have an overwhelming strong odor of onions in your home from roasting the onions for that many hours! Works for me! :-) 3) Todd, how on earth did you manage to cut up all those raw onions without tearing up like mad???? Please, please, tell me your secret, because I can barely cut up one raw onion without having tears running down my cheeks! Todd, you definitely have a super power!! Absolutely LOVE your channel!!     We started saving all of the jars from anything we buy in the store! We use them over and over until they fail and then only use them for quick pickles that last in the fridge! Don't feel bad for showing us all your hard work and awesome canning videos! Thank you so much!

      I keep all commercial glass jars that my canning kids and rings fit incase I run out of jars in a pinch. I keep the others that have the button seal to vacuum seal them.

    Rachel, my Mom has always recycled store bought jars for things we know we will use within a year. You're right, as long as the button is good, go for it. Desperate times, desperate measures 😜.

    I save my button jars amd use them when I need to. I also always use them when I can my homemade Ghee. learned a long time ago not to allow someone to tell me I am wrong when providing for my family. We love onions in any form. You and Todd Be Blessed, Debra

    Here in Australia we havent been able to get anything canning equipment so we have no choice but to improvise and those jars are all we can get, they hold up well to the canning process, we do what we can do Rachael ☺☺

    I've been recycling jars forever, I am 54 and last year was the first time I bought the jars with the two-piece lids and I have used the jars with the orange seals for a few years, my mother used recycled jars and have never had a problem! Maybe a UK thing lol.

    When I was a kid my grandmother canned food from her garden and used whatever jars she had available - mayonnaise, jelly, and so many others. Back then it was all glass. We never had a problem. I am at the same point as you - I’ve used almost all of my available canning jars and will need to go looking!

      Hahaha I about fell to the floor on the don't pay anymore than a dollar fifty or seventy five per jar. I bought my jars for a nickel each when I started canning. I have seen the latest prices and will break down if I have to but if not able to find at thrifty stores estate sales I go and generally I count the jars divide asking price in half and offer to buy em all. I can year around and when I open a new box of lids I purchase 2 more.

    I have watched this video so many times. It's great.
    Yesterday I bought 6lbs of onions and used my crock pot.
    My husband asked me late last night what he was smellingand I asked why?
    He said it smells delicious.
    I don't have a pressure canner so I used muffin tins to freeze them into servings. I made 20 total.

    You can save the onion ends and skins in a freezer bag to add when you are making broth. I would try your method if I needed to with the jars, for sure.

      I also do this, including the peels and ends of carrots/celery... just wash and toss in, once cooked strain the broth...🤩

    You can buy new lug lids and they are supposed to be safe for water bath canning, but not pressure canning. I'd say save all of your best jars/new lids for pressure canning and put the extra risk with high acid water bath canned foods! I also save all of my jars, I even spend a little more to buy things in glass instead of plastic/tin. If nothing else they're excellent for pickling/fermenting! I think I'll have to try canning some caramelized onions. Thanks for sharing!

    My grandma used to make homemade marmalade and water bath can it in a smorgasbord of old shop bought jars. I don’t know of many canners in the UK, usually it’s just jam/marmalade, and all of them reuse store jars x

    Roasting pans are an amazingly useful tool in the kitchen if you can. I use mine to bake in in the summer so I dont heat up my kitchen with the oven. And when my oven was broken I could still bake.

    There’s no shame using perfectly good leftover jars that you have on hand. I was stuck in that situation with no jars and did the same thing. I was thankful that I had them to use. You have to make due sometimes in order to be prepared and provide for your family. I’m an experienced canner and took great care. Pressure canning with those jars worked out fine. I just used them first. I love caramelized onions. I’m going to try your maple onion jam. Thanks!

      I always felt the same way, like it was such a waste to throw them away. For years I’ve used the jars with button tops for storing bulk spices, etc., but I’ll definitely be trying them for canning.

      I've recanned in them several times over with no issues. Give them a good twist on and the heat releases any air under water. And they POP! when they seal like all the rest 😊

      We don't have these jars with 2 lids in Portugal, I can all the tomatoes and jams and beans in reused store jars. We cam buy them new for canning but for home use, I see no point in that.

    I reuse store jars all the time when I’m running short of lids. I use them in both water bath and pressure canning. Never had a problem, and they seal fine. Your house, your rules.

    I've always saved and reused those op lid jars. I use the olive jars for jelly and pickel jars for sauerkraut. I've never had one spoil or not seal. Good for you. I can't see good reusable things thrown in the trash!! You are smart!!

    Same here hun jars are being used up this yr and I do save all jars also. I’ve been blessed by god a few times going into good will and getting .50 cent jars by the case here n there not always thank our lord every time .

    I save all our store bought glass jars, especially after last year, no matter the lid because I use them for my refrigerator pickles and it saves my canning jars for canning! Enjoy all those yummy onions, potatoes, etc.

    People who can in Europe reuse store jars all the time, That is mostly what they have available. I used to can tomato juice in Snapple bottles and I know I used some of them 10 times!

    Thank you for this! P.s. I'm down to 6 jelly jars. I was taught to resuse the button tops for jelly n jam by my other mother who passed away, I also reuse lids up to 3 times as long as they look good. Doesn't look like many jars being restocked.

    Great knife skills Todd!!! Don't forget to make onion stock with the peels. We had a very bad onion crop here in central Texas with the crazy winter storm. We bought 50 lbs from a local farmer and hung in the mud room. We made and canned French onion soup, onion relish, sweet maple onion jam, and canned plain onions. Just ordered a ton of onion sets from Dixiondale today. Here in Texas we plant the first of January. We love watching yawl and enjoy learning. God Bless!!!! Mike and Rochelle

    Definitely going to can some caramelized onions, what a time saver! As for reusing those jars, generations in this family used mayonnaise jars when they were glass, anything with a button lid or that would fit a Ball lid. I honestly never remember my mom nor my grandmother purchasing jars from the store and they canned everything. We never got sick, and we ate very well, thanks to those very wise women. Our homes, our rules. Thanks for the great ideas! You're so right about the tip on husband material. Listen up, little sisters. Good job, Todd! Relationship goals!

    Rachael, your kitchen your rules. I do this from time to time and it is ok. The old mayo jars are my favorite water bath canning jars. Without them I would not be able to do all the things I do. These have been handed down from my grandmother, mother and from my early years married (until they started using plastic jars). When I buy spaghetti sauce I only buy if they are regular mouth button top so go for it! You are awesome!

    I now look for store brands that I know use quality jars that can be reused 😊. Here in Ohio, many local food producers use Anchor Hocking jars. I do save other jars when I buy things for storage. I used to use ball jars for dry storage, and now I’ve moved most dry things to recycled store jars to keep the ball jars for canning.
    Like you, I may run low or out this year - what a good problem!

    I always use store bought glass jars but I do not reuse the lids. I always buy new lids. I do this for years and I never had any issues. Ball Mason jars are currently not available in Australia, and when available they cost an arm and a leg due to the shipping costs from the US.

    I think that re-using the pop top store jars are perfectly fine. They are made to go through really hot temps and to seal just like regular canning jars. It is good to see the recycling of those jars. Really good video.

    I don't know why it's always a problem with canning , the rest of the world water-bath can , and we are still alive , try ask a Italian mama,if she goes out buying new glas every time she cans pasata 😂🤣😂😂😂😂 she would slap you ,and say what the heck, that's a wast ..we need to stay safe but not to be wasteful at the same time ..     I used your onions jam recipe today! Delicious. I did accidentally add 3 tablespoons of cinnamon instead of 3 teaspoons 🤦‍♀️🤦‍♀️ surprisingly it still tasted amazing! Thank goodness.

    Dear Rachel and all on here I am from a country village in Ontario Canada. All my life I watched my mom can in reused Bick Pickle jars. My mom knows what she is doing and never once did we ever get sick. I watched she told me if any rust or damage on jars or lids don't use. clean them well as long as the seal looks good she would use. She used some jars for years and years and years. I only got the store bought jars when entering in competitions as they don't allow reused store bought jars. This my friends is how she learnt to get by in the 1940's during the war when good luck getting or affording new mason jars.She would say hey I have some jars Karen don't waste money on jars if you have good jars that jam pickles etc have some in I stock piled jars over the last 1.5 year and grew 200 x more vegetables so I have tons of jars and won't run out. I also did try for our own consumption to pressure can in a resused jar and they sealed great. Done green beans and peaches and cream corn. Thanks Rachel for being real and no one better not say anything bad about reusing store bought jars. It is the smart frugal thing to do. God Bless and Stay Safe Todd and Rachel!!!!     I’ve watched videos on both sides of the store bought jar controversy. You make an excellent point about what you would do when regular canning jars are not available.

    Hi Rachael I watch other homesteading pages snd I’ve seen many of them use the store bought jars with the lids with button and they also say if the button still pushes in and pops back up they use them and they also reuse glass mayonnaise jars and use a canning ring snd lid and can in them from year to year ! I just picked up a new presto 16 qt canner on Market place for a great price and am I’d excited to start pressure canning soon ! I have only been able to water bath until now cause I could afford a pressure canner , but Thsnks the God I will now beable to ! I love your page and look forward to learning how to pressure can many foods!! ❤️🙏🙋🏻✝️

      24 Cups Chopped Onions
      6 Tablespoons Butter
      1.5 Cups Brown Sugar
      3 Tsp Salt
      3 Tsp Cardamom
      3 Tsp Cinnamon
      1 Cup Balsamic Vinegar
      1 Cup Apple Cider Vinegar
      6 Tablespoons Maple Syrup
      Cook down onions in butter over low to medium low heat until onions have carmalized, stirring continuously to avoid burning onions. This will likely take no less than 45 mins, for my quantity over low heat it took just at 2 hours. Next mix in your spices, vinegars and maple syrup. Reduce down again until slightly thickened, will still appear somewhat running but more like syrup. Jar up in pint sized or less jars to 1/4 inch headspace. Process in water bath canner for 10 mins.

    My grandma reused store jars also. She taught me how to check the seal and the rim, clean and sterilize everything well, and check and recheck seals.

    When your funnel doesn't fit those jars you have leftover from other foods, you can use parchment paper loosely rolled and taped to make a funnel. It won't be very strong, but it will help.

    I have used my glass jars over too. As long as they have the rubber ring inside the lids you are safe. I remember in the 70’s I used miracle whip jars with the flat canning lids & rings. You have to do what you have to do. Now they are plastic so I use them to freeze in, soups, salsa, fruits, tomatoes for soups and for making salsa or paste or salsa in the winter when I have more time to do so later.

    I totally reuse jars. I started before I knew I shouldn't haha, and then didn't see any reason to stop, when they all sealed!

    The old glass mayo jars also work. So long as button pulls down you are golden. I am so glad you are showing them. Real life for many experienced canning hands especially those on a budget

    I am rewatching this while I process my onions. I save my jars also and you can purchase new button top lids. I also purchased new lids for my apple juice jugs. When it comes to feeding my family I'll do what I have to do ;)

    As long as I feel comfortable reusing store bought jars or reusing lids I will do it. I do not like relying on canning companies telling me that they will have supplies on the shelf by canning season and it is still not there. We need to do our own research and find our own comfort level. I have been taking my excess to our church and sharing it with anyone who needs it. Win, win for all. Thank you for the carmelized onion video. I have been looking for some help and again you have come to my rescue.

    I did get me a slow roaster my neighbor didn't want their s so I got blessed with one ❤️😉 they really come in handy when canning.

    Lol ... I get teased all the time about our videos because Matt does so much cooking. The truth is we both love to cook so we both have to do it but we love getting to work together in the kitchen. It is some of the most togetherness you can get! I have an 18 quart Nesco for our Wedding. I couldn't imagine cooking that much as a newlywed and only used it for parties but 4 kids later I use it all the time! That looks delicious.

    I will be putting by some of your onion recipe today, I have saved so many jars and have quite a lot of store bought also, Re Using is a wonderful thing, some products I purchase have very heavy glass and a great lid that I use over and over, I have canned with lids that do not have a button and they seem to take longer to seal, I turn them upside down and if they do not seal It goes into the refrigerator!! Thank You for this wonderful post.

    I’m in a rebel canning group they used saved store bought jars all the time no shame in that it works I’m starting to save all my jars now

    Here in the uk 85% of the jars we use in canning are the store bought commercial type of jars, the American canning jars are not easily available and cost a fortune on average $22-30 for 4-6 pack of pints or quarts in most places and lids are hard to get and expensive too, the commercial types we call lug lid type are reasonably cheap so most of us use these, the lids are reusable multiple times too and reasonably cheap to buy as well. Many of us save commercial jars there the same as the lug type we buy, we reuse them we beg our friends and relatives to save them for us, we waterbath and pressure can in them, we have to import pressure canners from America as there’s basically one stockist in whole of uk and they charge nearly quadruple what they are in America to buy, but recycle them store jars they really are great and you get a great range of sizes too 😊
