Rachel, I have tons of tomatoes from the garden and I made the roasted tomato soup today with the sweet potatoes. It was absolutely delicious. As a child, I HATED tomato soup because my only experience with it was with the Campbell’s Tomato soup. I couldn’t even stand the smell of it and have never tried tomato soup in 60 years until today. I figured if I didn’t like it, I’d just toss it. What an amazing surprise. Thank you for blessing us with your creative culinary wisdom. I can’t wait for your cookbook to come out. ❤
Another great video- I just put all my roasted vegetables in my blender skins, seeds disappear saves time and adds flavor. I then add chopped vegetables and cook in roaster then pressure can. It tastes great over pork and beef roast’s cooked in a crock pot. Blessings everyone- happy preserving 😁
We started making marinara this year, and one thing I've learned is that a bit of ground fennel seed actually makes the tomatoes taste sweeter. I'm going to try it with our tomato soup to see if we can skip the sugar.
That tomato soup looks absolutely delicious! I made tomato soup for the first time this year with fresh roasted tomatoes and roasted garlic! I used a recipe from Freedom Homestead that she posted that was an Amish recipe and then I also used part of Linda‘s pantry‘s recipe of roasting the tomatoes and garlic and then added a few of my own seasonings and fresh basil from my garden and it turned out absolutely delicious! I have to write it down so I don’t forget next year! So much better than store bought!
I did tomato soup for the first time this year. I tried 4 recipes but I like the one from Allrecipes the best. Only 4 ingredients (tomatoes, onion, whole cloves and chicken broth). Boil all together for 20-30 minutes and then use immersion blender to blend. After that I put the soup through a sieve. Add salt and sugar and done. It is so tasty. And so easy.
An idea for you Rachel that i think you'd love, with all your mexican cooking. A restaurant near me made a soup called "Life is oh so good soup" In brackets on the menu it said roasted red pepper and tomato soup w/chicken. I experimented making it because YES life was so good eating this soup! lol i just made a roasted red pepper and roasted tomato soup and added the usual type mexican spices. Cumin, chili powder etc. The chicken was shredded into it. I never tried canning it just made fresh but with your wisdom and know how, i'm sure you'd do a splendid take on it. Rachel tomato soup and grilled cheese has always been my favorite even as a adult and yes I buy hamburgers at a steak house but I eat like a kid and no one says you have to eat certain things as a adult and my grandson loves it, yummy 😂😊
I roast everything. Just made roasted pepper hot sauce. Roasted root veggies, roasted tomatoes anyway, it’s just so easy and not as messy as the stove top.
Totally trying canning tomato soup this year! And I love the idea of putting sweet potatoes in it which would totally help thicken it and make a nice creamy texture and natural sweetness instead of sugar! Thanks for sharing ❤😊

I never knew you could freeze tomatoes whole like that. I love that! I have a hotel pan that I use for roasting my turkey and water baths... I think that might help with the overflow of juices. :) love all the tips and info in a very calming and real tone. Thank you!

I just made a trip to the Amish farm(they sell plants, fresh produce plus bulk dry goods-Heavenly!) I have baby potatoes, honey butternut, regular butternut squash, & zucchini (to sneak into my last bag of frozen tomatoes for soup). So excited! Been canning since ‘94 but my mom got me a digital pressure/water bath canner after Christmas & I’m finally able to pressure can in a pot a I can manage by myself! Can’t lift the heavy pots full of anymore & I absolutely love this canner.
Definitely making this! I take care of my grandsons and my 6 year old grandson could eat tomato soup and grilled cheese daily. I was going to make your spaghetti sauce but will now only do this recipe. Thank you for sharing this with us!!
I can't wait to make this! I have many tomatoes in the freezer that I need to get out. I need to go get some fresh celery because all I have is what I've also got in the freezer, unless you think that will work okay as well. I didn't have as big a harvest with my sweet potatoes this year, but I can't them up this past weekend...so I will have to use carrots in mine.

I love roasted tomato soup! Yours is thick because of the sweet potatoes but I bet it tastes great. I will also throw some sweet red peppers on the roasting pan with the tomatoes. This soup with a grilled gruyere and onion jam sandwich...oh my!
Definitely going to try that recipe. I added a new thing to my preserving this year, cream of mushroom soup with lots of cream in. It canned so nicely and I'm thrilled to not be buying that in future.
Why does everyone remove the cores? Are they bitter?? I havent ever done that and i have been wondering lately whether perhaps I 'should'. You really look so energised Rachel - its been a tough year for you with everything you have had going on. You must sooooo be looking forward to a little more down time over fall and winter. If you are looking for things to share with us during the cold months, I would love to see more of your home remedies that you make for gifts etc. I did your foot bath/scrub one two years ago and gave them as gifts to family and friends and they were a big hit :) xxx

I love the texture of your soup and how you throw everything in but the kitchen sink. I made roasted tomato soup and blended my skins not the cores with my vegies. I love the idea of adding sweet potatoes. I have those little potatoes so now I might need to make more. I roast my vegies with a couple teaspoons of brown sugar

I had to stop in again and tell you that we opened the first pint of roasted tomato soup for lunch and my husband can not stop commenting on how “restaurant quality” it is! And did I keep the recipe so I can make it again? Ha! have to agree, it is the best tomato soup I have ever had. The only thing that wasn’t grown here was the celery and that makes it all the more special. I also wanted to thank you for including the info on your pans flowing over! I avoided that by using a turkey baster and siphoning it into a bowl. If not for your warning I wouldn’t have noticed until the steam started billowing out of the oven! 😮I didn’t add sugar or stock so it stayed nice and thick.

Great recipe Rachel! I just roasted tomatoes with salsify ( no celery this year) onions, carrots , garlic and now I will make it into soup instead of sauce, with a little chicken stock.
Love roasting tomatoes! Just can’t beat the flavor. Have a tip for you so you keep all that valuable juice in the pan and not risk burning yourself or the bottom of the oven. Get a couple of steam table pans that are shallow. They are wonderful at about 2” deep.👍

I have an idea for you about tomato overflow liquid. It's what I do, mostly for a pasta sauce base. So the pans of frozen tomatoes, but just the tomatoes, in for 30 or whatever mins to start liquifying. Prep a 3rd (maybe also 4th) tray of onions, carrots/etc., celery, paprika/seasoning peppers, etc. one to two pans depending on depth, and condition of the veggies. My carrots are always grated and frozen, so I'm just tossing those from frozen under onions. Which may also be frozen, depending on how curing went. Celery, also frozen... The theme I have is always freezer emptying. Ladle/scoop as much of that tomato liquid into the onion tray/s. Do that at least twice (I like one roasting cycle after pulling off the skins), unless it's all paste tomatoes. Especially if pans are ahem, overloaded. Can flip large tomatoes, after a good liquid lowering, to get more of that roasted effect. While the tomato pans are cooling, pop the onion, carrot pan/s in to roast. Result, overstuff pans don't end in oven cleanup on an already busy day. (Can you tell I tend to not grow that many paste tomatoes?) I'm actually trying your new to you recipe right now because I have no space for all these recent tomatoes. When you write that 'canning and what to make with canning' cookbook, I'm in! Don't forget a junk food spinach pie made with canned Malabar spinach. The files on my laptop are less than portable (erm, massive gaming laptop), and not the most inspiring without pictures. :) My recipe journals look crazy with edited recipes too. Hard to puzzle out what on earth I wrote when it's all a distant memory! I get them sorted out on new blank pages very slowly. lol

Tomato soup cake is FANTASTIC! It has raisin, ground cloves, and cinnamon. It's moist and delicious with chocolate frosting!

Red sweet peppers could also be a wonderful addition. It looks divine! Soup (of all kinds) is my absolute favorite food, all year long.

The cores of the tomatoes? I suppose it's because they're tough and they don't get soft when cooking.

I roasted some of my fresh picked butternut squash and added to my tomato soup. I freeze a good portion of my tomatoes too..... so versatile.

So the pans of frozen tomatoes, but just the tomatoes, in for 30 or whatever mins to start liquifying. Prep a 3rd (maybe also 4th) tray of onions, carrots/etc., celery, paprika/seasoning peppers, etc. one to two pans depending on depth, and condition of the veggies.
My carrots are always grated and frozen, so I'm just tossing those from frozen under onions. Which may also be frozen, depending on how curing went. Celery, also frozen... The theme I have is always freezer emptying. Ladle/scoop as much of that tomato liquid into the onion tray/s. Do that at least twice (I like one roasting cycle after pulling off the skins), unless it's all paste tomatoes.
Especially if pans are ahem, overloaded. Can flip large tomatoes, after a good liquid lowering, to get more of that roasted effect. While the tomato pans are cooling, pop the onion, carrot pan/s in to roast. Result, overstuff pans don't end in oven cleanup on an already busy day. (Can you tell I tend to not grow that many paste tomatoes?) I'm actually trying your new to you recipe right now because I have no space for all these recent tomatoes.
When you write that 'canning and what to make with canning' cookbook, I'm in! Don't forget a junk food spinach pie made with canned Malabar spinach. The files on my laptop are less than portable (erm, massive gaming laptop), and not the most inspiring without pictures. :) My recipe journals look crazy with edited recipes too. Hard to puzzle out what on earth I wrote when it's all a distant memory! I get them sorted out on new blank pages very slowly. lol
Those jars are so cool!! Does anyone know the lifespan of the rubber gaskets?
