Hi i was wondering, with the leftover coffee mixture that you used for the bottom layer. Won't it set by the time you use it for the top layer?

For me, it has not and I've made it many times. Especially during filming, it takes longer and it has been okay. If your house is cold, it might be sooner to set. Just let the heat proof bowl warm up a bit over a pot of boiling water to loosen it up again. Do not boil gelatin though, it will lose its setting properties.
