The fluffiest and easiest plant-based chocolate cake ever!

  • Oh, this chocolate cake... So delicious, fluffy, eggless, and so affordable and the delicateness of the fudge on top is what make this one of the best chocolate cakes I have ever made!
    INGREDIENTS:
    2 cups all purpose flour
    1 cup sugar
    1/4 cup cocoa powder or powdered chocolate
    1/2 cup neutral taste oil
    1 cup lukewarm water
    1/2 tablespoon baking powder
    1 teaspoon vinegar
    Oil for greasing the baking mold
    For the topping:
    500ml coconut milk or any other vegan milk of your choice
    1/2 cup sugar
    3 tablespoons cocoa powder
    1 tablespoon vegan butter or margarine
    METHOD:
    Preheat the oven to 185C / 360F
    Add oil or vegan butter to a 6,5 X 6,5 inches mold, cover all the internal part of the mold with the oil or butter, reserve.
    Add the flor, the cocoa powder and the sugar to a larger bowl, mix well to combine all the ingredients, then add the water, oil, mix delicately to combine, then lastly, add the baking powder, stir again, delicately, then add the vinegar and stir to combine.
    Add the batter to the oiled mold, then place it in the oven for 30 to 40 minutes.
    Make the chocolate sauce by adding all the ingredients for the chocolate sauce to a pot, mix to combine the turn on the heat to medium and stir until the sauce reduces by half and it Geta thicker. This step will take about 25 minutes.
    To ensure the cake is cooked through, sick a toothpick inside the cake and if it comes out clean and dry, the cake is ready.
    Wait until the cake is at room temperature, the prick it with a fork, then add three or 4 tablespoons of vegan milk all over the top of the cake, and after that, add the chocolate sauce, slowly so the cake absorbs all the chocolate.
    Ready!
    It is also delicious if served cold.

    Wonderful Jana! I've also been baking this since my children started preschool and their teacher gave us the recipe to use for cookie day as it was best for children (no allergies to egg or dairy)! I've subsequently adjusted it to make in microwave!! Even better... and so quick: here you are as a small gift in exchange for all you give us:
    Single layer chocolate cake (vegan) in ring form
    Dry ingredients :
    1½ cups cake flour (or gluten free flour)
    1 cup sugar
    1/4 cup unsweetened cocoa powder (Dutch process cocoa is best. I buy German brand Antigua)
    1 teaspoon bicarb soda
    1/2 teaspoon salt
    Wet ingredients:
    1 tablespoon white or apple cider vinegar (15mls)
    1 teaspoon vanilla extract (5mls)
    6 tablespoons (90mls) vegetable oil
    1 full to brim cup cool coffee (or water) (250mls) (add 2 Tbspns water for microwave version)
    Prep:
    Line a microwave ring pan with paper towel cut to fit the base only.
    Method:
    Mix dry ingredients in a bowl: Sift flour, cocoa, bicarb and salt and stir in sugar.
    Mix wet ingredients in a jug: vanilla, vinegar, oil and water/coffee.
    Mix wet and dry by stirring with a whisk until well combined. Scrape out with a spatula into the prepped baking container.
    For 1000w Microwave: Cook 6 or 7 minutes on high and allow cake to stand in microwave for a further 5 minutes before removing. Slide a knife around the edges and turn cake onto a cooling rack. Allow to cool before topping.
    (Bake in standard oven 180⁰C for 25 mins)
    Top with
    chocolate ganache or boiling water chocolate mousse (see Happy Pear for recipe th-cam.com/video/WcWvnKWjxWI/w-d-xo.html); dust with icing sugar (and cocoa) or just enjoy

    Hello, dear Jana! Thank you so much for this amazing recipe! For this amount of flour I used 1 teaspoon of soda + 2 teaspoons of apple vinegar, it was just fine to get fluffy. We really fell in love with this cake! Thank you!!!❤❤❤

    Hi Jana! This recipe looks delectable. I would like to ask if you think I could skip the white sugar and the oil to use homemade applesauce instead? Also, due to health reasons I am unable to eat wheat flour. Do you think I can use chickpea or coconut flours?

      Try a gluten free flour or oat flour, I use oat flour in all of my baking

      You are trying to replace all the basic ingredients, better look for another recipe. It's a friendly suggestion. It's going to turn out completely different if you replace the sugar, flower and oil. What I like to do is make a kind of fudgy brownie with peanut butter, cocoa powder and banana only. It comes out dense and rich
