I love fennel. I even got heirloom tomatoes from a grocery store once. I saved some of the seeds and planted them. I got a big harvest of tomatoes from very tall plants. I'm originally from a large farm and love tomatoes. That soup looks great.

A lot of people are fennel phobic...But, fennel is not only super healthy, it can add decadent floral notes to any dish in the right proportions. You certainly can't just add mindless amounts of fennel to a dish just like you can't just add handfuls of the most expensive cologne to a beautiful man and expect him to remain beautiful. But, again, in the right proportion, you can really elevate whatever you are showcasing. If all else fails, drink a bottle of Sambuca with a friend before you start cooking and it'll all be all right.

I did it too for about 38 years, because my grandma did it and my mom did it, but then I saw Carla from ba suggesting just cleaning up the dried up bit from where the bulb was cut from its root and to just leave the core in. And, you know what? -it's perfectly fine to leave the core in. Both texture and taste-wise.
Best Tomato Soup I've ever had, the only thing I did different was add the honey near the end when it was almost done cooking. Half the container of paprika was perfect imo, thanks for the great recipes!
This recipe looks amazing! But, unfortunately most vegans classify honey as an animal product and don’t use it. Is there something that I can use to substitute the honey for if I want to cook this for my vegan friends?!
Store in in quart containers (can be found in my amazon store) and freeze, or keep in the fridge for 2-3 days. If freezing, either take it our a day before and put it in the fridge to defrost, or run it under hot water to release it from the quart container, then add it to a pot with a little water to help it steam and defrost and then heat up. Does that make sense? You can microwave, there's nothing wrong with that, it just heats liquids up really unevenly so in that sense heating it in a pot is the best method if you can swing it. I would have let the tomatoes and fennels roast for an additional 10-15 mins to let them rreallyy caramelize and get more flavorful, i think that would have really brought more compelxity to the soup but hey thats just me. Great vid!

One caution I would mention if someone tries to substitute smoked paprika for regular paprika. I used three tablespoons of smoked paprika with this soup and it overwhelmed the soup. My wife stopped buying regular paprika, opting for the smoked version, and in most recipes it adds a lovely flavour. However, with the sort of quantity of paprika used in this recipe, I would stick to regular (unsmoked) paprika .
This will be my next ‘soup’ cooking exercise, I have a couple of firm favourite tomato soup recipes but I’ve never added fennel or honey, I’m really looking forward to this one.

Also, you should start roasting the tomatoes ON TOP of the stove first, at a high heat: otherwise, if it goes directly into the oven, you're just stewing the tomatoes. and onions, not really roasting them. Makes a big difference in flavor.

In addition to dunking grilled cheese sandwiches in tomato soup, I have enjoyed dunking tuna salad or chicken salad sandwiches in tomato soup.
