- Grilled cheese. Tomato soup. But not just any tomato soup. It's one you made. And by you I mean me. And by me I mean us. But mostly me. I made the soup. And it was good. Also the grilled cheese.

Lots of great chipotle tomato soups out there but roasting vegetables for any soup is 🤌
1 chopped red onion
A whole thing of garlic also chopped but no specifically just perfectly
A chipotle pepper if you want some smoky spice
Some olive oil
Baked in a hot room at 425F for an hour ish
Two cans of tomatoes also baked without the juice
Then Those things can go in a pot with some broth and the rest of the tomato juice...I don't know how much broth exactly just some. Make sure it's not too hot
Use your particle maker to turn it all into a liquid
If you use a blender also make sure it's not too hot but they you have to remove the cap on the top and fold a towel over it. If you don't do this the soup could explode everywhere and burn you. You gotta let the steam escape.
Add 2 teaspoons of salt
Some pepper pepper pepper
Some pinches of sugar
cook it
Adjust everything

Add some salt, pepper, and oregano to the inside of your grilled cheese! I also use a little bit of mayo on the inside to help the seasonings stick. So good!

I encourage everyone who tries making this soup to add crumbled goat cheese. It's amazing and the creaminess really helps offset the acidity that some tomato soups can get.
My local Aldi has tomato basil goat cheese crumbles and I found some today after a while without and did a audible "Ooh hehe" in front of a stranger and I'm so glad to see another Artist in the comments.
I encourage you to add sugar to offset the acidity in the first place. I know it’s not healthy, so if you are on a diet of course it’s not the best idea, but if you are skinny like me try putting crazy amounts of sugar in your tomato recipes, soups, sauces etc.
The way sweetness shuts down the tomatoe’s acidity and balances the overall taste is just really amazing. I have worked in more than a few restaurants and trust me, this is the only correct way to control acidity in tomato recipes.

The perfect golden ratio of sandwich to soup, so you always get a nice dunk and mini-soak with your toasted bread cheese, and by the time youre done with the sandwich.. you only have one or two spoonfuls of soup left to clear the rest of the crumbs left in your mouth.

Edit - If plastic wrap is too much work, a ziploc bag works just well.
i keep the non ziploc fold over style sandwich bags just for storing already open cheese, cheaper, easier and works like a charm
have at least three in the fridge in use at all times, and still roommate will just chuck a newly opened cheese in to dryrot
