I had this for lunch today, improvising whatever I had available, but sticking with your proportions for the basic ingredients, and the recipe is solid. The regular coconut yogurt I used (milk allergy) with lemon zest and frozen artichokes (sitting in the freezer doing nothing for quite a while) blended beautifully together taste-wise. It tasted like a lemony cream sauce, which is a gorgeous combination. I didn't have any spinach, so I added chives and fresh herbs, and it still worked, at least I liked it, fast, easy and happy it's healthy too! Must find your book!

Where do you find vegan yogurt in Spain? Carrefour doesn’t have it. Hopefully when I get to a bigger city I can find some.
