You are possibly the best vegan chef out there!! In the world of reels and shorts your long form, rich and detailed content stands tall 🗼🗼🗼 Such a fabulous video 😍😍😍
That means so much to me! It is hard to navigate this world of short form content because I love making TH-cam videos and sharing all the little tips, so this made my morning 🥹
Things about this video I absolutely adore, ranked in reverse order: 4. The gorgeous morning light shots (seriously, wow) 3. The completely unexpected accent 2. The cameo from your dad 1. The actually creative seasonal recipes. I'm already making my grocery list for the week. Thanks, Nisha!!!
And another thing, I've concluded Nisha is the most endearing of all the vegan TH-cam chefs, just so pleasant to watch and listen to. Always looking forward to the next video. Byeee!
So I tried the Lemon Asparagus pasta and let me tell you, capers and beans are NOT optional, this food is fucking amazing!!! I had so many doubts because my husband doesn't like strong lemony flavors, but the whole pack of pasta was gone by the end of the day with just the two of us!! :D Thanks for the recipe
I love how accessible and approachable truly all of your recipes (these included) are. Whenever someone asks me for vegan meal ideas, I always direct them to your blog and social media-admittedly, the mushroom stroganoff recipe. I’ve turned several non-vegan heads over the years with that one 😂 Of all the vegan content producers I’ve found online, nobody comes close to how entertaining you are while simultaneously offering 100% free meal and recipe ideas that a home cook can pick up with ease, all with realistic ingredients that you don’t need to spend $1000 on. Thank you for all you share!
Thank you so much for this kind and lovely comment - it truly made me smile and feel grateful for my job! And of course thank you for sharing my content and recipes with others - that is the best thing I can ask for! So happy you have been loving the mushroom stroganoff and sharing it with others.
You are so refreshing to watch! As well as tour recipes!!! You have a very down to earth and natural look that I love and relate too!! Your recipes reflect your style!! Love it.
I tried the lemony soup (last recipe) and it was amazing! My new obssesion. Also, my 3 year old loved it, he was asking for more, so thats a big bonus point :)
Because I was going to the grocery store today anyway, on a whim I decided to make that tofu "ricotta" toast with spring pea salad, and it was SO good! I used some thick-cut rosemary sourdough loaf from the grocery bakery as my toast. Only adjustment I made was cooking the peas a few minutes longer.
I have been following you for years and I just love your recipes! I was raised vegetarian and I like to experiment with a lot of different things in my cooking, and I love the flavors and ingredients you incorporate in your recipes. I'm also Indian and find some vegan recipes to be more "new american," and it's just lovely to see you incorporate indian flavors and cooking techniques in some of your other recipes. It makes me feel more connected to my culture and family while still cooking in my own special adventurous way.
Another tip for preparing asparagus...much of the toughness is the outer skin. If you use a peeler to take it off of the lower section of the stalk, it makes it edible and saves food waste. You can also use whatever you have left to make soup either the bits or peels. I just cook it down, blitz it up and filter what's left to get rid of the tough fibers. That way you waste even less.
Really like the video format (lighting, venue, close ups of ingredients), cute and humorous interjections, and especially the recipes! I agree with another commenter that you are the best vegetarian/vegan food creator chef!
My husband and I made this soup for dinner this evening. It is absolutely delicious! We both said it’s one of the best soups we’ve ever had. ❤ Thanks for sharing!
Second comment---the soup, oh you have outdone yourself!!! I make so many of your recipes because they are always tasty!! My meat-loving husband loves your curry, and your tofu ricotta. He's coming home from a very stressful time at work (tax season in Canada and he's been working very long hours since mid-February!!) and I am surprising him with this soup. Delicious!! I have sourdough bread rising, can't wait to eat it with this soup tomorrow. You're the best, thank you =)
You da best, Nisha. I LOVED your Meal Plan and only stopped because a new project has taken over my life. While I appreciate that you're sharing and not always shilling your Meal plan, I do think it's a Public Service for you to TELL THE PEOPLE that they can have more of your delicious, healthy, superb recipes by signing up for the Meal Plan. It's worth it, folks! Support this woman. She's endlessly creative. (decidedly not a paid review - I'm in Toronto, far, far from anywhere where there are Spring Veg in farmers' markets)
This is still one of my all time favorite channels. You’re so talented with how you put flavors together and prove that Vegan food is NOT boring or flavorless. Thank you for cooking and sharing with love. ❤️
In love with the Tofu Ricotta Toast!! I've made this 2X now. So good!!! The pea salad was so refreshing and beautiful. Loved the lime and seasame seed oil twist! The tofu ricotta is a game changer. I've made double batches both times and then tossed it with some pasta the next day. So so good. The 2nd time I also added a bunch of Basil and some sun dried tomatoes with the oil from the jar. It was to die for with pasta! I can't wait to make other things with this ricotta!! Lasagna, anyone?! 🤤
FIVE spring recipes?! so excited!! just visited a vegan restaurant where they made spring ravioli in a pea-sto (pea pesto) sauce, and it’s got me in a seasonal mood❤
Nisha, you somehow always anticipate the exact types of recipes I’ve been craving!! It’s so obvious that you put an immense amount of work into the food that you share with us. Thank you for being you!
Sooo looking forward to making that Lemony Chickpea Soup...honestly, the majority of my favorite soup and stew recipes come from Nisha! Because of that, I just bought her Instant Pot cookbook which I've heard a lot of great things about. My Instant Pot had been sitting sadly under-utilized, and I'm looking forward to this cookbook spurring me on to finally make use of this wonderful, time-saving tool that I inexplicably never use, lol.
Ha, I can relate! I have had an unopened toaster oven sitting in my garage for the last 6 months. Like I know it will be useful, but I haven’t taken any steps towards unpacking it let alone using it. I’m so honored that you love my soup recipes!
I watch your stuff and use your recipes almost on a weekly bases since I went vegan 4 years ago. I truly love your recipes, they are delicious, very balanced and mostly very manageable! I have to say that our all time favorite is the red lentil curry, I even once cooked it for my co-workers! thanks for all your work it really helped me stay vegan and even get my friends and husband to enjoy vegan food!
Excellent recipes. I will try them when I get the chance in the future. Also, I must get the same vegetable brush. I'm so excited about that kitchen essential as well. Thank you again for your healthy meal ideas.
Girl! You are a kitchen Wizard!!! Thank you for doing what you do and sharing all of your amazing recipes - you have really helped my vegan journey!!! I do miss the old format of your videos, they were so fun to watch and really helpful when working through a recipe hope you bring them back from time to time
I’m definitely trying the beet salad this week! Your channel is my go-to when I am looking to change things up, use ingredients differently and have new food experiences. Although this is a vegan channel, your creativity on its own is the star of the show- and that, I think, makes you an advocate for the animals in a very special way ❤️
You are outdoing yourself Nisha. Everyone of these I want to eat this week! It's autumn here in Sydney but I did buy some Mexican asparagus for $5 last week. How many stalks of asparagus in the bunch you might ask? Five. So $1 per stalk. My son, an adult now, used to call it “asparasguts” as a child, so he suggested it was ridiculous to spend that much on asparasguts. Still we have enough of all the makings to, well, go forth and make. Tally ho, guv'nor (you gave me a laugh) 😅
I recently made the lemony chickpea soup and I can attest to how delicious, fresh, and cozy it is. It is definitely my new favorite soup as well! If you love lemon you NEED to make it!
Nisha, what a video! I'm talking about everything that goes into making your content: obviously the stunning and creative food, the quality on your footage and editing. Wow! There's so much work in a 16min video! Well done. You are amazing! This channel is a gem! Also thank you! I'm a vegan cook, cooking in all kinds of retreats/events and for many times I came to your channel for inspiration ❤
I made the Lemony Chickpea soup and it was truly awesome. The chickpea puree alone was super delicious. I could just dip tortilla chips or cucumbers in it and eat it. I tried the pasta too and it was quite yummy, but it is not a surprise. I have been making your recipes for a while now and you are very good at what you do. I cannot wait to try the others.
Thank you for these DELICIOUS recipes. I just made the creamed tofu with peas for lunch and WOW, it is so delicious and I felt like God's little princess dining at His table. Thank you again for all that you share here. I look forward to owning your cook book.
I am absoutely obessed with the lemon chickpea soup! My new favorite soup! I know it's not vegan , but I'm not big on the flavor of nutritional yeast so I swapped it with parm and it was delicious. I love how robust and filling this soup is!
thank you so much for these fabulous looking recipes! I need to try all of them 😍 especially love your comments for additions to make a complete meal out of every recipe. This means a lot, as I‘m struggeling to eat in a complete, balanced way. Also, loved your podcast interview at the foodblogger pro. So inspiring ❤
im a little cautionary on new recipes but i recently have been dropping meat and trying more simple vegan recipes, mostly either chickpea or black bean based, and that last recipe im already adding to my grocery list so i can make it ASAP! thank you for sharing these!
I already made the tofu ricotta---oh yum!!! I make sourdough bread, this is going to be delicious together!! Tomorrow I'm making the lemon chickpea soup!! And right now I am making your lentil curry =) =) So many of my recipes are from you!!
I make a vaguely similar lemon pasta dish, but with roasted fennel, garlic, cannellini beans and dill! Will try with asparagus and walnuts next time, it looks fantastic!
Wow! I haven’t watched a video of yours for like 2 years!! Your channel has grown so much and I love the way you made this video!! Very professional and classy! 💕💕 the food looks amazing and flavorful as well as always! 🥰
Nisha, thank you so much for the free PDF guides that go with these recipe videos!! Seriously makes it so much easier and accessible to follow along and make these dishes. The lemony asparagus pasta is on rotation in my household and I am especially looking forward to making the lemony chickpea soup 💛
I save the asparagus ends and make a pureed veg soup (sweet potato, carrot, asparagus, onion, garlic, maybe some coconut milk, Thai curry paste or whatever). All the ends of those veg, even skins, because once pressure cooked and out of instantpot, it gets pureed so you don't see the ugly, blemished or ugly veg scraps!
wonderful - just made the lemony chickpea soup and it is superb! I look forward to getting your new book in London, Uk - Thank you for your inspiring and delicious recipes - Jo 🪷

Nisha, will frozen peas work for the ricotta toast?? I am making a mother's day supper this Sunday and have already committed to making the ricotta toast and the soup (with fresh from the garden rhubarb minosas)! However, I can't find fresh peas at any grocery store, apparently they're not in season here yet! Many thanks for your fabulous recipes!

1. The actually creative seasonal recipes. I'm already making my grocery list for the week. Thanks, Nisha!!!
🥰 that’s so nice to hear - glad you’re enjoying the recipes! I have a range of mostly terrible accents that I should probably keep to myself 🙊
Which brand of nutritional yeast would you advise ? Thank you for all your wonderful videos !
what accent?
And another thing, I've concluded Nisha is the most endearing of all the vegan TH-cam chefs, just so pleasant to watch and listen to. Always looking forward to the next video. Byeee!

I can't believe I get to watch this for free. You, your food, and your production values are ✨stunning✨
Love the use of seasonal veg!!! I just went to the farmers market today. Your channel always inspires me!
The farmers market is my favorite place 😍 so delighted you’re feeling inspired!

Right? Such a good combo of flavors and textures. Glad you enjoyed it!

The pea toast was such a surprisingly fresh and delicious recipe. I would have never thought of combining these ingredients in this way. Brava!

I do this too 😊
Thank you for all your recipes. You’ve made my transition into veganism easy and Im sure you’ve helped others in the same way. It’s a big impact.

I love your videos! Most of your recipes are on repeat/rotation for me.
Made the soup yesterday, very tasty. Goes well in the Australian autumn. Thankyou for this recipe, it will definitely be on repeat. ❤
I'm excited to try EVERY single one of these recipes 😋
I like the new video format. You are very creative with your cooking.

Love new video style!! ❤ Also, delish recipes I'm keen to try!
Always love seeing your parents in your videos!
I slice the harder pieces of the ends of asparagus and boil them with rice and lemon for an infusion of flavor

Wow! Yum ! The last one I’m definitely trying and instead of dill perhaps some cilantro from my garden 😇🪴

I never thought of charring green onion to make a sauce! wow, need. to try!
I've made a variation of lemon asparagus pasta twice this week, thanks to your newsletter!
So happy to hear that ☺
Thanks a lot 😊 I downloaded the guide because I would like tu try some of these… I’m also very impressed with your chopping skills !
Made the ricotta toast today and WOW. Really light yet satisfying lunch, thank you Nisha!
"My Fair Lady" all the way!
The chickpea soup is already an instant favorite! Made it last night and it was so delicious! 😍
Love lemony recipes in the spring! Thanks Nisha, I'm making that soup as soon as I can.
Your channel is full of inspiration! Love learning new yummy ways to enjoy more veggies in my life from you! ❤
That makes me delighted to hear! Finding ways to enjoy vegetables is the best!❤
I am addicted to that lemon asparagus recipe. I use it with lots of different veg and pasta.
Wow - just made the pasta and it was absolutely fantastic! ❤😋
Your recipes are so inspiring!
Oh man! We NEVER cut mor than a tiny slice from the bottom of the asparagus!
One third we peel off, that's it.
Love your recipes….can't wait to try these!
wonderful - just made the lemony chickpea soup and it is superb! I look forward to getting your new book in London, Uk - Thank you for your inspiring and delicious recipes - Jo 🪷
Thank you! I have been going crazy trying to think of a good spring meal

@@RainbowPlantLife Update: Made the soup tonight and it was indeed delicious :)
She is a brilliant chef. Needs a restaurant!
What a wonderful video ❤️ you always make it all look so beautiful and inspiring. Do you think the soup could go in the freezer? I usually cook for just me so being able to freeze leftovers is very helpful
Thank you! Yes you can definitely freeze the soup :) you may want to slightly thin it out with water or broth when reheating.
@@RainbowPlantLife wonderful! Thank you!❤️
Quite lovely-thank you for the amazing food and the wonderful video.
Thanks for the video Nisha! :)

Nisha, will frozen peas work for the ricotta toast?? I am making a mother's day supper this Sunday and have already committed to making the ricotta toast and the soup (with fresh from the garden rhubarb minosas)!
