Great tips, I have one for you. I've been a mechanic for over 40 years and just discovered that I can bake and am 1/2 decent at it and have a spring form pan also with the lip around the base. The first time I used it for a cheese cake and discovered that the lip hinders getting the cake out I wondered who would design something in such a way. I then examined the base and thought about it for a bit and realized that if I flip the base over the lip will be out of the way and the cake will be easy to remove.
i used this technique of baking it with a different recipe and it worked wonderfully. my oven has a fan so i reduced the temp to 275 and it took about an hour. the cheesecake turned out absolutely beautiful.

Not bad for my first cheesecake. Three pounds of cream cheese with all the other ingredients filled a 10 inch pan to the top. This cake was a monster!
john doe ha, too perfect huh? Very interesting. I that it was perfect in apperance and texture, but I certainly don't want it to be store bought!! Thanks for sharing, these are great to hear. I don't like airiness in cheesecakes, thus why I don't use egg whites, and I'm not a fan of lemon at all in my cheesecakes, so I don't even use the optional zest, but I might try more sugar! Hi Ashley, I purchaced the Bosch machine and the attachment's for the inside of the bowl, also your egg stick, which I totally love, I thought I would try making this cheesecake, I used the pan of hot water and followed your direction's to a T. my cheesecake puffed up after the hour, I let it bake another 1/4 th of an hour, it was just a little jiggley in the center, but it did crack, our weather is horribly cold in Michigan, that may be the reason. But I put the topping on and left the door cracked, and I did notice that it cracked more on the top. But no problem, I plan on putting strawberry pie filling on the top, after it has been in the fridge overnight. I can't wait to give it to my daughter, I don't know how it will turn out, but I love the recipe. until tomorrow, thank's for the video. will post the final outcome. tks Nicky

Haha, as soon as you said you like using ziplocs instead of getting more dishes dirty, I thought, "this is my kind of girl...she must have kids." Then you mentioned the kids. Love ziplocs...and anything else that minimizes dishes.

OMW! I finally got to making this yesterday, I am not kidding - my cheesecake was the best I have ever had. Everyone loved it. I was a little worried that I over mixed it; I let it go on mixing while I cleaned the kitchen, lol. But when I was pouring it into the springform pan I thought I saw clumps; I was wrong. This was so smooth and perfect flavor. I did do the water in a pan below and I took it out exactly as you said. I’m saving this one, thank you for sharing.

I have used your cheesecake recipe for over two years now and my family goes insane for it. I swear by your methods and I've been cooking all kinds of cheesecake for over 20 years. Thank you for letting a woman discover love in baking all over again. 😊 And in case anyone else wants to know...I don't use the gingersnaps, I do use the lemon (must use the lemon, it gives it a great flavor), I don't use the additional topping, and I haven't had one crack in my cheesecakes since using her method. Also, I've used her recipe and have incorporated additional flavors (chocolate, pumpkin) with it. Thank you!!!

I used your cheesecake recipe for the first time. I always made a tasty cheesecake, but it always shrunk down and cracked and would have a light brown top. This was the first time it was nice and fluffy and white. No cracks or shrinking. Thanks for all your tips. Took longer to make, but well worth the wait.
I just love your mixer, how can I get one! The reason the cheesecake didn't Crack is because of the water pan you had in the oven, learned that one awhile back.

Ashlee Marie Cakes what type of cream cheese would you recommend the only suitable ones I can access are mascapone or ricotta I find mascapone a bit oily and I haven't tried ricotta I would appreciate your input thank you
spreadable isn't the same - it's had stuff added to it to make it spreadable - try Philadelphia soft white cheese, it has a slightly higher fat content than the american cream cheese but it's the same manufacture
I made this yesterday and it was a HUGE HIT super delish!!!! Only tweak we did was we did a strawberry topping using mashed strawberries and cut up strawberries!!!

+SHEN Grossett I wouldn't add any more liquid, it will change the consistency and make it harder to bake, so I'd avoid the cream. And I'd add any mix ins, like peanut butter cups, berriers, etc.. right at the END after you've poured all the batter in, pour most of the batter in, add the berries, then add more of the batter.

I'm going to follow your recipe but instead of graham crackers going to use crushed Oreos & add some twix pieces inside & omit the sour cream topping & just top with more twix pieces & a drizzle of chocolate ganache. +sukisho100 sounds good to me! I only do the sour cream topping when I'm doing a plain cheesecake, I dont use it on my chocolate, caramel, peanut butter, pumpkin or any other cheesecake flavors

Hi Ashlee- I made cheesecakes in the past by using light colored pans. But when I switched to a darker pan the cheesecake kind of scorched a little even though I used the same temperature from the lighter pan. it happened every time until I went back to the lighter pan the scorching was resolved. So does light or dark pans have any bearing on it? I'm kind of puzzled..
+Stan M yes, light and dark pans can change the cook time, and cook the edges faster than light pans. I personally only HAVE dark pans, and don't have a problem with it cause it's all I know, but if I got to a lighter pan the cook time would probably be slightly longer. thus switching from a light pan to a dark pan would be less cook time. scorched is a little more than I'd expect, but a darker golden edge I'd expect.

+saima nayen Do you have a hand mixer by chnace? I will say a tenative yes, but you really need to make sure you get that cream cheese and sugar smooth smooth SMOOTH before you add anything else, you'll have to work your arm muscles, but it can be done

I liked your recipe, your tips and your simple presentation skills when everyone on youtube is so flashy and extra cheerful and fake. :) Two things though- First, I could only hear the audio from my left headphone, and no sound from right one. So you might wanna check on your audio. Second, for vegetarians, what is the substitute for eggs which can make the cake come closest to the original taste? Very helpful recipe otherwise. I know about the audio issue, I didn't know when I first started making videos that my audio was recording mono not stereo, all my newer videos are correct but youtube had no way for me to fix the audio on the older videos sadly. since I don't have dietary limitations I don't know the best ways to fix recipes to fit specific diets. I'd hate to give bad advice. I will say I have gone egg free in CAKES by using tofu, but I have only used that techniquesd with cakes, no other baked goods, and not with cheesecake. it MIGHT be worth trying but I can in NO WAY guarantee it won't be a total fail and waste of semi expensive ingredients. and if it does bake okay I don't know how it would effect the cracking

This was published a long time ago, but I just found it, so will still post an answer. I think for an "eggless" cheesecake you would have to use one of the "no bake cheesecake" recipes where they obviously don't use eggs because the cake is chilled to set, rather than baked. They taste pretty close to a real cheesecake. Also really easy to make.
Hi Ashlee, in the last couple of years I've found cooking to be a pleasure, especially when you find awesome recipes and get it right. I started with a coconut shrimp recipe that turned out perfect from the first try, and have made for family and neighbors who have raved about how good it was. I guess it's that excitement you get inside when you get that positive feedback from others and you realize you might be better at cooking than you originally thought. So even more recently (the last couple of months), I'm trying my hand further at cooking different recipes, which brings me to your cheesecake video. I tried following a recipe for cheesecake and wanted to put them into 4 inch mini springform pans as I would like to create individualized cheesecakes. The recipe I followed was very straight forward, and did not mention any of the tips you are giving, everything from not overmixing the eggs, to placing a pan of water in the oven. Since the recipe also called for a 10 inch springform pan, my following the cooking times resulted in not just cracked cheesecakes, but they basically exploded all over the oven. So in a nutshell, what would you suggest I adjust in terms of the time cooking for these smaller cakes?
+Aaron VM there are two things that effect the time of the cheesecake baking - not only the pan size but also the thickness of the cheesecake. So I can't really give you an exact answer. I'd suggest lowering the temp a little more, like up to 25 degrees (make sure you have a oven thermometer so your temp is right as well) and I can only say to watch the cheesecakes closely, start at the 30 min mark and do the jiggle test, you'll want the center 1 1/2 inches to slightly jiggle then follow the rest of my tips for cooling. Good Luck!.
Ashlee Marie Cakes I recently made my best cake using a whisk. It was a workout but I had more control and the cake was mixed well without getting too much air
jasmine heaton where are you that you can't get regular cream cheese? Marscopone and ricotta both can make good cheesecakes, but you can't just sub them out for cream cheese, you'd need to find a recipe created specifically for those products Does that help?
Sorry late reply didn't see it it on my notifications I live in a small town in the UK my super market dosen't carry block cream cheese they only have the spreadable kind I think I can use your tips with another cheesecake recipie I found thank you

I line my spring pan with parchment paper, makes removing the ring part very easy, and also makes slicing easy.

6:45 you could put the crust in the freezer for a bit before adding the filling. The butter will firm up and hold it in place.

The reason your cheesecake pan has a "lip" is because you are using it upside down. Flip the bottom insert over and the lip will "dissappear."
My grandmother had that same recipe! It’s great!

I used your cheesecake recipe for the first time. I always made a tasty cheesecake, but it always shrunk down and cracked and would have a light brown top. This was the first time it was nice and fluffy and white. No cracks or shrinking. Thanks for all your tips. Took longer to make, but well worth the wait.

I use a metal measuring cup to smooth out and press the crust. It works amazingly well.

spreadable isn't the same - it's had stuff added to it to make it spreadable - try Philadelphia soft white cheese, it has a slightly higher fat content than the american cream cheese but it's the same manufacture

+SHEN Grossett I wouldn't add any more liquid, it will change the consistency and make it harder to bake, so I'd avoid the cream. And I'd add any mix ins, like peanut butter cups, berriers, etc.. right at the END after you've poured all the batter in, pour most of the batter in, add the berries, then add more of the batter.

I'm going to follow your recipe but instead of graham crackers going to use crushed Oreos & add some twix pieces inside & omit the sour cream topping & just top with more twix pieces & a drizzle of chocolate ganache. Do you think it would taste bad ?? Like too sweet?? Or do I need the sour cream topping ??? Help!!!!
+sukisho100 sounds good to me! I only do the sour cream topping when I'm doing a plain cheesecake, I dont use it on my chocolate, caramel, peanut butter, pumpkin or any other cheesecake flavors

Hi Ashlee- I made cheesecakes in the past by using light colored pans. But when I switched to a darker pan the cheesecake kind of scorched a little even though I used the same temperature from the lighter pan. it happened every time until I went back to the lighter pan the scorching was resolved. So does light or dark pans have any bearing on it? I'm kind of puzzled..
+Stan M yes, light and dark pans can change the cook time, and cook the edges faster than light pans. I personally only HAVE dark pans, and don't have a problem with it cause it's all I know, but if I got to a lighter pan the cook time would probably be slightly longer. thus switching from a light pan to a dark pan would be less cook time. scorched is a little more than I'd expect, but a darker golden edge I'd expect.

+saima nayen Do you have a hand mixer by chnace? I will say a tenative yes, but you really need to make sure you get that cream cheese and sugar smooth smooth SMOOTH before you add anything else, you'll have to work your arm muscles, but it can be done

I have a feeling you must be a really nice person (by heart). I liked your recipe, your tips and your simple presentation skills when everyone on youtube is so flashy and extra cheerful and fake. :)
Two things though- First, I could only hear the audio from my left headphone, and no sound from right one. So you might wanna check on your audio. Second, for vegetarians, what is the substitute for eggs which can make the cake come closest to the original taste? Very helpful recipe otherwise. Thank you! :)

I know about the audio issue, I didn't know when I first started making videos that my audio was recording mono not stereo, all my newer videos are correct but youtube had no way for me to fix the audio on the older videos sadly.
since I don't have dietary limitations I don't know the best ways to fix recipes to fit specific diets. I'd hate to give bad advice. I will say I have gone egg free in CAKES by using tofu, but I have only used that techniquesd with cakes, no other baked goods, and not with cheesecake. it MIGHT be worth trying but I can in NO WAY guarantee it won't be a total fail and waste of semi expensive ingredients. and if it does bake okay I don't know how it would effect the cracking

This was published a long time ago, but I just found it, so will still post an answer. I think for an "eggless" cheesecake you would have to use one of the "no bake cheesecake" recipes where they obviously don't use eggs because the cake is chilled to set, rather than baked. They taste pretty close to a real cheesecake. Also really easy to make.
Hi Ashlee, in the last couple of years I've found cooking to be a pleasure, especially when you find awesome recipes and get it right. I started with a coconut shrimp recipe that turned out perfect from the first try, and have made for family and neighbors who have raved about how good it was. I guess it's that excitement you get inside when you get that positive feedback from others and you realize you might be better at cooking than you originally thought. So even more recently (the last couple of months), I'm trying my hand further at cooking different recipes, which brings me to your cheesecake video. I tried following a recipe for cheesecake and wanted to put them into 4 inch mini springform pans as I would like to create individualized cheesecakes. The recipe I followed was very straight forward, and did not mention any of the tips you are giving, everything from not overmixing the eggs, to placing a pan of water in the oven. Since the recipe also called for a 10 inch springform pan, my following the cooking times resulted in not just cracked cheesecakes, but they basically exploded all over the oven. So in a nutshell, what would you suggest I adjust in terms of the time cooking for these smaller cakes?
+Aaron VM there are two things that effect the time of the cheesecake baking - not only the pan size but also the thickness of the cheesecake. So I can't really give you an exact answer. I'd suggest lowering the temp a little more, like up to 25 degrees (make sure you have a oven thermometer so your temp is right as well) and I can only say to watch the cheesecakes closely, start at the 30 min mark and do the jiggle test, you'll want the center 1 1/2 inches to slightly jiggle then follow the rest of my tips for cooling. Good Luck!.
+saima nayen you can use a hand mixer, but I wouldn't use a whisk, it would be very hard to get it smooth enough.
Ashlee Marie Cakes I recently made my best cake using a whisk. It was a workout but I had more control and the cake was mixed well without getting too much air
dumb question I use a recipe that calls for unsalted butter for the crust but can you use regular salted butter ?

jasmine heaton where are you that you can't get regular cream cheese? Marscopone and ricotta both can make good cheesecakes, but you can't just sub them out for cream cheese, you'd need to find a recipe created specifically for those products Does that help?
Sorry late reply didn't see it it on my notifications I live in a small town in the UK my super market dosen't carry block cream cheese they only have the spreadable kind I think I can use your tips with another cheesecake recipie I found thank you
