I made this for my family who were visiting from Europe. My Aunt is a VERY accomplished cook and I’m always intimidated when she comes to stay even though I’m quite a good cook myself. I made this stew & the flatbreads for them and they were BLOWN AWAY!! My Aunt said it’s one of the most delicious recipes she’s ever eaten and got me to translate the recipe for her to take home. We then decided to have a ‘vegan week’ so I cooked many of your recipes and they were transformed into becoming at least part-vegan - result!!!! Thank you so much. x

I bought pre-cut butternut squash to reduce the prep time which made a world of difference. I didn't have time to make the pita so I served it over rice instead. I did make the yogurt sauce BUT tbh I probably won't make the sauce next time because this dish tastes perfectly fine on its own. My very picky best friend who's vegan and her boyfriend who's a meat eater both loved this dish and went for seconds. So needless to say, I def recommend this recipe and will certainly make it again in the future. 😊

I just made this yesterday. OMG! What a flavor party in my mouth. I am team spicy, but even though I added the extra punch, my mouth wasn't burning. It was a flavor explosion extraordinaire! Followed by a warm sweetness of the dates. I used 4 dates for a double recipe and it was right on the money for me. Even my carnivore husband, who doesn't like squash in general loved this meal. Tip I learned from the comments elsewhere on TH-cam: hold the can opener horizontally over the top of the can and open it that way (took me a minute to get it right). It cuts the entire top off, no chance to cut yourself on sharp edges. Game changer! Also, LOVE your channel so much!!!
No such thing as too many soups. Simple baked desserts. Love to see more Indian and Middle Eastern recipes. It's hard to get ahold of some of those ingredients, but being introduced to new flavor profiles has been very helpful. A world beyond steamed vegetables and trying to replicate butter or meat.

Looks yummy! My hubby is Moroccan so these flavors are quite familiar! One thing though... I never saw dates cooked in Tagine, especially Medjool ones. Those are eaten as appetizers at the beginning of a meal. Dryer dates, more fibrous dates maybe. More commonly , you will see raisins, apricots or prunes in tagine or couscous.
Made this yesterday with modifications. I had no squash and used a cauliflower and a few potatoes instead. I also used fresh cut tomatoes that was probably double the amount in the recipe. It was really good! I think i did too much Cayenne, but I definitely will be making this again. I love all the spices.
I tried out this recipe for lunch, pairing it with paratha. At first, I wasn't sure if adding raisins to chickpeas would taste good. However, because I've tried Nisha's recipes before and they've always turned out well, I decided to trust her. It ended up being a delicious dish! My mom even commented on how tasty and healthy it was because of the added veggies. I threw in some spinach and carrots for extra nutrition.

I've never written a comment for any recipe, even if they turn out great. But THIS. THIS WAS INCREDIBLE. I was blown away and did happy dances whilst I ate the entire bowl. I even made the naan recipe to go with it and it was the best naan i've ever made. The chickpea stew looks like an average vegan stew, kinda blah. But the spices and flavour were just next level. The addition of the dates (I also put in raisins as well) really elevated the dish. I put in 3 chili peppers and my god... explosion in my mouth. SO GOOD. I sent a picture to my friend as I was eating it. I was in heaven. Thank you!!!

Hi from across the Pond. Well I’ve just made (& eaten!) this tagine and I can honestly say it’s one of the best I’ve ever had! My wife and I loved it! I didn’t have any medjool dates so I had to use dried chopped baking dates, so I put dried apricots and sultanas in and a swirl of honey before adding lots of cilantro. Superb!! Thanks so much for sharing and can’t wait to try some more of your recipes. All the best for the season.

The histamines in tomatoes are definitely not anti-inflammatory for me personally...I usually use a little harissa or red bell peppers, but I don't think that would add enough moisture and acidity here?

Just a heads up on the butternut squash: some people - like myself- have a random contact allergy to the squash, so maybe test that out before cutting it without gloves! 🧤

I have bought all the ingredients but cannot find the butternut squash. Maybe it’s because their season ended. Is there any way that I can replace this with sweet potato? Everything I made from your Chanel turned out amazingly. Keep up with the great work ❤❤❤
Any winter squash would be fine! If you can’t find any of those, you can use sweet potatoes, but I would omit the dates to avoid the stew being too sweet. So glad that you have been enjoying my recipes!
This is exactly what I need in my life! I actually do have a tagine that I got from Le Creuset over a year ago, and she just sits there because I don’t know how to use her and what to make! Would I still follow all the same method (oven, temp) or cook it low on stove top if using the tagine?
First, I like that the tagine is a she. Second, le creuset tagine pots are oven safe, but I might lower the temperature to 325F and cook it for a bit longer since from what I know, tagine pots are used with lower heat. Some more tips here! www.lecreuset.co.za/blog/moroccan-magic-the-tagine-scene

Great tip on microwaving the squash. I usually bake them whole, but it's difficult to judge the appropriate length of time. Thank you for sharing.

I made the stew with lemony saffron couscous to go with it which was a very good combo.

Just a heads up on the butternut squash: some people - like myself- have a random contact allergy to the squash, so maybe test that out before cutting it without gloves! 🧤

I have bought all the ingredients but cannot find the butternut squash. Maybe it’s because their season ended. Is there any way that I can replace this with sweet potato? Everything I made from your Chanel turned out amazingly. Keep up with the great work ❤❤❤
Any winter squash would be fine! If you can’t find any of those, you can use sweet potatoes, but I would omit the dates to avoid the stew being too sweet. So glad that you have been enjoying my recipes!

This is exactly what I need in my life! I actually do have a tagine that I got from Le Creuset over a year ago, and she just sits there because I don’t know how to use her and what to make! Would I still follow all the same method (oven, temp) or cook it low on stove top if using the tagine?
First, I like that the tagine is a she. Second, le creuset tagine pots are oven safe, but I might lower the temperature to 325F and cook it for a bit longer since from what I know, tagine pots are used with lower heat.
