I received my cookbook yesterday and it is the most beautiful cookbook I've ever seen, and I've seen a lot! Gorgeous pictures with every single recipe!
Okokok so. For those who don’t have the seasoned frying powder, this is what I put in mine: 1 cup flour, one cup corn starch, 1/4 teaspoon garam masala, 1 teaspoon salt, 1 teaspoon minced garlic, 2 teaspoon onion powder, 2 teaspoon garlic powder, 1 teaspoon korean pepper powder, 1 teaspoon sugar. Also I marinated my chicken thighs overnight in salt, pepper, garlic, ginger and cooking wine. Then added only a little bit of garlic and replaced the sugar with honey in his sauce recipe but other than that followed it perfectly... the end taste is absolutely amazing.

Near the end of the recipe I ended up having to make a little bit more of the flour with the same exact measurements. What I’ve found with these recipes is it’s always best to have more than you think you need!
One of the reasons I really like his way of teaching how to cook. He really emphasizes the importance of being flexible and improvise when necessary. Cooking is way more fun when you're able to observe your situation and adapt.
The most important thing is not to give up on cooking just because things aren't perfect. They rarely are. You have to power through and you might just surprise yourself. It truly is an art to turn what seems like nothing into something...

My Mrs loves Korean food so I decided to try this, all I can say is follow every instruction step by step and you cannot fail. My wife is the biggest food critic and would have told me straight if it were not nice. It was the total opposite and she and the kids want me to do it again. I also commented on another video he did in which I followed the recipe and it came out great so as I said before and I truly mean it this guy deserves a medal. One thing to know is that frying is not really traditional in Korea. Many old Koreans did not grow up with fried foods. Fried foods in Korea is relatively a new thing in Korean culture.

Meaning they didn't coat it with flour before frying. They fried the chicken first in oil and then added watered flour along with soy sauce and fried it more in the pan. But, it was only available to royalty at the time, due to cost expense of flour.

Korean chili paste or gochujang is pretty easy to find nowadays! It's a pretty tough flavor to substitute, but I've been able to find it in any "asian" section of a regular grocery store.
You can use sriracha in place of gochujang. The peppers are very similar. I've used sriracha in place of gochujang when making my KBBQ sauces, and it sometimes comes out better than using gochujang.
I just tried it and woww my chicken has never been this crispy. I also marinated the chicken with some fresh milk because I remembered from maangchi's dakbokkeumtang recipe, she said that milk will make the chicken more tender. We don't have a microwave so we waited for god knows how long lmao. I made my own frying powder with wheat flour and rice flour in the ratio of 1:1 with some seasoning. The sauce recipe is also so simple and tasty though it's not very spicy according to my taste. But my roommate who doesn't like spicy foods loves it though. Thank you for the lovely recipe and a very thorough step by step tutorial. My tummy is very happy right now.

OMG you are the first person I’ve seen making this recipe that talks about the leftover oil. How do you know that sometimes I don’t want to make this cuz it uses so much oil that goes to waste 😂 I never reuse the oil because of the residue but he just explained what I can do!! Thanks. I will wait longer, 3hours like you said for the residue to separate then filter out :)
You can also filter the oil. Wait until it's room temperature. Then put a sieve over a bowl and line it with paper towels or a coffe filter. Pour as much oil as fits and let it do it's thing. Eventually you should have fairly clean oil in the bowl that you can store and reuse. Just a word of warning, if you reuse oil there's always some small particles of the food left that you can't filter out at home. So don't keep the oil for months and don't try to fry donuts in oil that you used to fry fish or something like that.
Actually I don’t recommend using the oil again, of course it seems like a lot of waste but the more times you use that oil the worst it is for your health, so try not to do it frequently at least!☺️
I also reuse my oil and filter it with a coffee filter. Takes a while but it's worth it. When reusing oil, don't mix flavours and don't use it more then 2/3 times total. My mom has a restaurant and she recycles the oil after 2/3 uses (depends in what it is used for. If it's for frying fish, only use twice.).
What he said is true. I accidentally discovered it when I fell asleep one night and forgot to clean up in the kitchen. The oil looked so clean and pure the next morning with the residue all stuck at the bottom. 🤭
When I was a US soldier at Camp Colbern (just south of Hanam, east of Seoul, but the camp is now closed) in 2001, there was this older korean guy who had his GF, whom we called "Tak Nuna" , fry an entire chicken for 7,000 won. I loved the sauce and miss that flavor so bad!!! I'm going to try this for the sauce. Thank you Aaron!

Thanks a lot for this recipe. My family loved it although I had to make a few changes like I used chicken breasts because I only had chicken breasts so I cut them into smaller size in order to use them. As for the frying powder thing I didn't have that so I mixed a cup of flour, a cup of corn starch, a cup of rice flour (I reached a point of making things up as I go hahaha) I also added baking powder, salt, chicken spices, garlic powder, onion powder and mixed the whole lot and used that to make the batter and did everything else like you did. BIG THUMPS UP.

Tried making it today, turned out pretty damn delicious. Also since I couldn't find the frying mix, I tried making mine, which also surprisingly came out well, the chicken was incredibly crispy on the outside and perfectly juicy inside. I think I messed up with salt a little bit but I adjust it with sprinkling the fried chicken with a little bit of maggi masala. Overall a 9/10 recipe (9 cause I had to make the mix on my own, if only I could find the mix easily it would have been a perfect 10/10) I love your recipes, the way you explain everything even the alternatives, if you don't have this it's perfectly fine, which I find so practical of you, like that's how everyone thinks, with other recipes I'd give up if I don't have 1 ingredient. But you give motivation, so what I don't have this I can still make it taste good. Haha.. following your recipes for years now, they never disappoint. So grateful I found you guys🤍
Korean fried chicken batter is made from corn starch and water. Add some salt and pepper and maybe some sesame oil. I don't know why he says you need flour and baking powder; that's not korean fried chicken.
A good way of telling if your frying batter has the right texture: Dip your finger in the batter, then stick it into the oil and fry it. If your finger gets burnt, it's too thin.

This was an amazing recipe honestly. I didn't have the batter and couldn't be bothered to buy it, so I made my own. Plaon flour, baking powder, corn flour, salt and pepper and then literally any other spice you want. I added cayenne pepper, paprika and a bit of sugar. Microwaving it was the trick to lock in the flavour I gather. Anyways, it was delicious and I wish I could share a photo. Will just upload on Instagram lol

Yes, i try, it was sweet bcs of the sugar and the syrup. I grind some chilli with all the ingredients and its was spicy. Try to put 10-15 chilli and grind it with ingredient.
Hi Aaron, I love your recipes. I’m in Australia and managed to get hold of the chicken frying powder. I was late home so made the chicken and the sauce but put it in a brioche bun, with lettuce. Tomato and some kewpie mayonnaise on top. That is the best fried chicken I’ve ever had. Thank you so much for your amazing recipes.

I have made this *twice* and it tasted so good each time. I got compliments on it from the people eating it. Thank you for this recipe! Plus, the microwave hack was great. I didn't have fresh or jarred minced garlic, so I used powdered garlic during the raw chicken step -- packed SO much flavor. I made my own chicken fry batter using just flour, water, salt and baking powder, it had the consistency of pancake mix and coated well. The vinegar also tasted great with all the flavors. Thanks!

Eventually you should have fairly clean oil in the bowl that you can store and reuse. Just a word of warning, if you reuse oil there's always some small particles of the food left that you can't filter out at home. So don't keep the oil for months and don't try to fry donuts in oil that you used to fry fish or something like that.
Actually I don’t recommend using the oil again, of course it seems like a lot of waste but the more times you use that oil the worst it is for your health, so try not to do it frequently at least!☺️
I also reuse my oil and filter it with a coffee filter. Takes a while but it's worth it.
When reusing oil, don't mix flavours and don't use it more then 2/3 times total.
My mom has a restaurant and she recycles the oil after 2/3 uses (depends in what it is used for. If it's for frying fish, only use twice.).
I always reuse leftover oil for anything. No harm.
What he said is true. I accidentally discovered it when I fell asleep one night and forgot to clean up in the kitchen. The oil looked so clean and pure the next morning with the residue all stuck at the bottom. 🤭
When I was a US soldier at Camp Colbern (just south of Hanam, east of Seoul, but the camp is now closed) in 2001, there was this older korean guy who had his GF, whom we called "Tak Nuna" , fry an entire chicken for 7,000 won. I loved the sauce and miss that flavor so bad!!! I'm going to try this for the sauce. Thank you Aaron!

Thanks a lot for this recipe. My family loved it although I had to make a few changes like I used chicken breasts because I only had chicken breasts so I cut them into smaller size in order to use them. As for the frying powder thing I didn't have that so I mixed a cup of flour, a cup of corn starch, a cup of rice flour (I reached a point of making things up as I go hahaha) I also added baking powder, salt, chicken spices, garlic powder, onion powder and mixed the whole lot and used that to make the batter and did everything else like you did. BIG THUMPS UP.

Tried making it today, turned out pretty damn delicious.
Also since I couldn't find the frying mix, I tried making mine, which also surprisingly came out well, the chicken was incredibly crispy on the outside and perfectly juicy inside.
I think I messed up with salt a little bit but I adjust it with sprinkling the fried chicken with a little bit of maggi masala.
Overall a 9/10 recipe (9 cause I had to make the mix on my own, if only I could find the mix easily it would have been a perfect 10/10)

Korean fried chicken batter is made from corn starch and water. Add some salt and pepper and maybe some sesame oil. I don't know why he says you need flour and baking powder; that's not korean fried chicken.

A good way of telling if your frying batter has the right texture: Dip your finger in the batter, then stick it into the oil and fry it. If your finger gets burnt, it's too thin.

This was an amazing recipe honestly. I didn't have the batter and couldn't be bothered to buy it, so I made my own. Plaon flour, baking powder, corn flour, salt and pepper and then literally any other spice you want. I added cayenne pepper, paprika and a bit of sugar. Microwaving it was the trick to lock in the flavour I gather. Anyways, it was delicious and I wish I could share a photo. Will just upload on Instagram lol

Hello there. I also live in Australia and they sold the exact same powder mix used In the video at website called asianpantry. There just search up “CJ Beksul Fried Chicken Mix”. Although they have changed the design of the package but it’s still the same thing 👍.

I have made this *twice* and it tasted so good each time. I got compliments on it from the people eating it. Thank you for this recipe! Plus, the microwave hack was great. I didn't have fresh or jarred minced garlic, so I used powdered garlic during the raw chicken step -- packed SO much flavor. I made my own chicken fry batter using just flour, water, salt and baking powder, it had the consistency of pancake mix and coated well. The vinegar also tasted great with all the flavors. Thanks!

I think he said the microwave is only there to fasten the process of the seasoning, so if u don't have a microwave u have to wait abt half an hour after adding ur vinegar, salt, garlic and pepper to the raw chicken
