Some potato-related advice for anyone:
1. Stir-fried potatoes: To prevent the potatoes from browning, add a little vinegar (not for flavor). It lowers the pH and prevents oxidation.
2. Baked potatoes/wedges: For a thicker crisp layer on the exposed potato, try soaking in hot (but not boiling) water for 10 mins.

Just tried the potato balls! Turned out great for one of my first times cooking! The string cheese is really stretchy and yummy while melted, I used Panko bread crumbs and it was amazing !

I have 2 boxes of potatoes for 4 people. I already tried the pancake potatoes but I forgot to put the salt. I will try that again and add flavor.
