    I learned to fry chicken from my Granny and my mamma. Granny fried 4 chickens every Sunday for our big dinner after church. She used a wood stove until she passed away. Low and slow and she also taught me to cut a slit in the thick part of the leg and thigh before dipping in buttermilk and flour it let the heat get to the inside. She taught me to cut up a whole chicken and use every part. My Granny was a pioneer mountain woman and could feed an army on a little bit. I miss her so.

      Hey there Tipper, I have to give my mom credit - she fried the best chicken 🍗 & they said in the family she could make pheasant the best also. I also cannot fry chicken like my mom but hopefully someday! ❤ & Prayers

    I have that same bowl, it was my husband’s granny’s, I’ll just say it because it makes me proud 😊 she adored me, as I did her. She taught me everything I know about cooking. I was the youngest of 6 and my mom cooked but I was never interested until my husband and I met, and we always had Sunday supper at his Granny’s. God rest her soul, I can still hear her calling my name. But that bowl is a treasure to me, along with her cornbread pan too and many other things she left for me.
    I will be making this chicken soon, thanks!😊

    Mmmmmmm, love baked fried chicken. Do you remember that tv commercial from the 70's; that little girl with that blonde piggy tail hairstyle said, "It's Shake -n-Bake and I helped"

      lands sake, that's exactly what I thought when Tipper mentioned the bag! When my little sister and I first see each other after a long while, one of us will say "My momma made shake-n-bake..........." and the other will answer "......an' I hayulpt!" instead of saying "hello." (yeah, we're weird!)

      I remember that and my husband told me that little girl remind him of his little sister who look and sounded like her saying that on the commercial!

    My dad used to make the best fried chicken. He never shared the recipe for his flour mixture, but he dumped it into a paper grocery bag and tossed the chicken in and shook the bag to coat the chicken. He left the chicken in the bag while the Crisco heated up in the pan and then he shook the bag again and started frying. I do remember him putting a lid on the pan for a few minutes and then removing it to finish up cooking. I never inherited his talent for fried chicken, so I'm going to try your baked recipe. Thank you for sparking a great memory. God Bless.

    I am nearly 70 years old, and you have pretty much changed the way I eat my beans! LOL!!! I always, ALWAYS, ate my beans over rice.....now I eat them over rice the second day. That first meal is over my cornbread! LOL!!!!

    I'm 82 and I learned to fry chicken from my Mother. Our trick is you fry all of the chicken nice and brown, as you know in the Iron skillet, the you pour a very small amount of hot water in the pan, maybe 15 or 20 drops, then pop a lid on, steam for about 5 min, take lid off, cook about another 5 min on low. It will still be crunchy.

    Mom made that salad everyday as long as the garden was producing. It was Dad’s favorite. She used red onion and dressed it with red wine vinegar and a drizzle of oil, then just salt and pepper. I make if for my older brother when we are together in the summer. It reminds us of those wonderful days growing up.

      my mother did too! she used red wine vinegar and season salt and pepper. I use red wine vinegar, season salt, pepper and a little bit of sugar and salad supreme seasoning-- not all the time with the salad supreme but a good bit. Kathy you are the first person I've seen that makes it the way I was raised on

    Summer Salad... 4 medium tomatoes, 2 medium cucumbers, peeled and sluced thin, 2 onions, ringed, .... 1/4 cup oil, 2 Tablespoons vinegar, 2 Tablespoons sugar, 1 teaspoon salt, 1/2 teaspoon black pepper, 2 teaspoons fresh minced parsley,optional. Combine first 3: ingredients. Mix rest of ingredients well and marinade 2 hours before serving. This is absolutely delicious and refreshing.

    When I was younger every Saturday my granny would make fried chicken, mashed potatoes, gravy and biscuits and we’d all go to her house for supper. It was pa’s favorite and a treat for all of the family to gather and enjoy. I’m going to try the baked chicken soon.

    The salad is like a Greek salad that we had when we lived in Greece. Beyond the veggies, add in olive oil, a splash of vinegar, some peppers, oregano, and feta…delicious!
    Thanks for your videos! I grew up in Blairsville (but live in Arizona now), so it’s great to feel right at home when watching!

    Looks delicious! My Aunt Dorothy made fried chicken in large quantities for a sulky-racing family at state fair time. She'd fry it till skin was crispy in her cast iron skillets and then lay the pieces in baking dishes. She'd bake them uncovered on 325 for about an hour. It comes out so tender but still crisp on the outside. I do thick pork chops this way, too. I remember as a little girl, she worked at an old-timey drugstore. She cooked in the basement and sent the food up in a dumb waiter.

    My mom made that salad all the time too! and now I make it. A classic. We’re Italian we put an Italian twist to it. We have tomatoes, onions, cucumbers, mozzarella cheese, croutons, or Italian bread, basil, and your salt and pepper, oregano and garlic. It’s like a meal. It’s delicious. Try and put Italian twist to it.. Enjoy ❤️

    I’ve been trying to get through what I put up last year from the garden. Last night for supper we had creamed corn, fried squash, green beans, fried okra and zucchini pickles. All from last year’s garden. I also made corn muffins. Had enough left over for lunch today.
    This year I’ve planted speckled butterbeans and butter peas in addition to green beans. I can hardly wait.

    Where do you find those big chicken legs? The legs I see at the local grocery store are so skimpy. I can't fry chicken on the stove either- I always under cook it or dry it out if I cook it too long. We called what my grandmother made that was like this, oven-fried chicken, and it was one of her 'go-to' dishes when the whole family gathered on Sunday after church. We did not do that every Sunday but at least once every 3-4 months we gathered around her big dining room table for a delicious meal, to discuss important family news and for the telling and re-telling of family stories. A sweet memory from childhood. Watching you fix your plate; I can almost smell the chicken cooking in her cozy kitchen!

    Oh, how I love butter beans. I could make a meal out them & corn bread. I grew up on that salad too. Mama always made daddy a little bowl with vinegar on it. He loved it like that. & that’s how I fry my chicken too! I can do it on the stovetop, but it’s so much easier in the oven. & a lot less mess!! I love watching you cook, it always feels like home… brings back so many good memories. ❤

    I had the tomato, cucumber and onion salad at a restaurant one time and they had put Italian dressing on it and it was pretty good.

      @paulaestes567 sometimes I add a homemade light coleslaw dressing to the tomato onion cuke salad. Sometimes I just add garlic, lemon juice, and basil; sometimes just a drizzle of olive oil and a drizzle of balsamic vinegar.

    Thanks for mentioning the egg free option. There are many out there like my Grandson who have life threatening egg allergy. Many think the only way to bread foods is with egg and have no idea they can use buttermilk with cornstarch mixed together to get the breading to stick.

    Put the chicken on in skillet ,let brown all sides. Turn heat on lower, put lid on, let steam cook insides until really tender and done. Soo very good. Amen. ALBAMA

      Yours is the methid a friend taught me many years ago in Salisbury, NC. It's so easy that she was frying chicken for supper while giving me a haircut in her kitchen (she had a cosmetology license). Patience is the secret I learned by watching her calmly turn the chicken pieces , put the lid back on the frying pan, adjust the heat as needed, then return to carefully snipping my hair, all the while continuing to chat with me. Thank you for helping me recall that wonderful memory! 😊

    I love oven baked chicken! Dad used buttermilk too! He Made the best fried chicken! I taught my girls his way but used the oven on busy days When you're tired and hungry you use short cuts ! Butter beans are the best but I like my black eye beans too! I will eat yellow squash any time 😂🎉

    Your little salad we make with green peppers,onions ,cucmbersand tomatoes and onion and then pour Italian dressing over it ..yummy yummy

    My mom made it with white vinegar. I’d steal little chunks of cucumber and tomato while it would marry summer days, it was in the fridge all the time it seemed.

    I make a similar salad I learned from a lady in Serbia where they call it a Shopska Salad. Mine is cucumber, tomato, red onion and feta cheese with lots of salt and pepper and then I drizzle a very small amount of balsamic vinegar over it. MMMMMMMM

    We put a bit of lemon juice and olive oil in our Tom / cucumber salad. Adds a twist. Loved the beans. 🤗

    Reminds me of suppers when I was a little girl & helped Mom or visited Grandma. Grandma let me watch sitting at the kitchen table, whereas Mom always had me help.

    How is it that your cooking videos always leave me drooling even if I've just overate my own dinner?!😅
    The only time my fried chicken has been successful was when I learned to only cook the same pieces. As long as they are all close in size, I can do a decent job.

    We make a variation of this fresh salad by making a dressing of mayonnaise and apple cider vinegar. I love it in the spring and summer.

    I make a salad much like Granny, but I add apple cider vinegar, dried oregano and some good extra virgin olive oil to the salt and pepper. If I have a ripe red bell pepper, I chop pieces of it in, too. With good bread and real butter, that makes a quick and easy summer lunch or supper on a hot day.

A frequent summer meal was a pot of black eyed peas, corn bread, pot of greens, yellow squash, and plate of sliced up fresh tomatoes, cucumbers, and onions. So good. My Dad used to call the juice in greens pot liquor. Thanks for bringing back the memories.

    My husband makes the cucumber, tomato, onion salad. He uses red onion and Paul Newmans oil and vinegar dressing. So good!

    There have been several times I have fried chicken in the flour , in the oven, put at least 1/4 cup of oil in a baking pan and fry it that way. It s really crispy and juicy.

    My Aunt Genie made fried chicken on the wood cookstove. She'd soak that chicken in buttermilk and prepare it similar to your prep. Then she would have a cast iron fry pan heating on the stove top with lard. She'd put that chicken in the pan and she'd always say "Don't you make it too crowded. That's like too many people in the church pew on the hottest day of the year. It makes everything sweaty and mushy." When she was ready to do the next batch of pieces she'd put the fried crisped pieces in the oven to keep them warm and cook them the rest of the way. She'd do all the other sides while that chicken cooked.

    In our resturant years ago Tipper we used to fry our chicken for a minute or so and finish it off in the oven,worked every time.Another way of fixing that salad is adding italian dressing to it.

    If ever you see a box of BELL'S poultry seasoning, grab it. Not as easy to find down here as it is in North East. Best seasoning around for chicken, IMHO. And the box is so beautiful and colorful.

    Here in Southern West Virginia we always had vinegar in our tomato cucumber onion salad. The meal you prepared looks so good! Can't ever go wrong with Baked Fried Chicken & butter beans & fried squash!

    We make your little salad and call it cucumber salad . We put it together and pour Italian dressing on it and let it marry ( lol) for an hour in the refrigerator. It’s great! Also goes well with bbq meats in the summer. Your supper looks and sounds good! Enjoyed your video! ❤

    The secret is to deep fry until it's golden.
    Take the chicken out and let it cool off on a drip rack or fryer basket.
    After it's cool and the temperature of the middle of the chicken pieces has come up ,drop it back into the oil until its the crispy you like.
    I don't have teeth now so I have a third step of letting it sit on paper towels on a plate under a lid until the steam softens it just right. Sometimes I put foil over it
    If you have one of those big rectangle deep electric skillets it's so nice to plug it in on the porch so I don't heat up the kitchen. I use it for everything you're cooking there.

    I love Granny's salad. I eat that alot in the summer. My Grandma made fried chicken ( in the skillet) and mashed potatoes with gravy and another side. Usually pie or cake and homemade rolls. Always an open invitation to her family or whoever happen to stop by. Love the memory ❤️ I have...Mrs.Steve

    A perfect Supper!! All looks so good and goes together so well! It looks like a summer dinner we would have when I was growing up and when I was raising my children. I cook very differently since I have been older and alone. I always think how wonderful when you talk about Granny eating the same way she always has. By the way, like You, I Love my cornbread crumbled up and bean juice with the beans. SO GOOD! The salad is a Must! Generally, we also had hot peppers, so it looked more like Pico de Gallo, but we never thought of that. Our country table always had hot peppers on it.
    Fun fact: Every child and grandchild of mine would never eat beans under the age of 14-15 unless they were all mixed up with cornbread and a lot of juice to the point of being almost a paste! Then, they loved it 😋

    I made salmon tonight & cucumbers and cherry tomatoes with our own vadila onions we grew in November and harvested the end of April ,( short day onions from Dixondale farms in Texas & Hoss tools in georgia ) I just add salt & pepper and alittle Avocado oil / basalimic .or you can use italian dressing homemade.
    Prayers for Corie that her 1st labor goes fast & your new grandson is healthy. He is blessed with having you tipper as a grandma & matt as a pawpaw .

    We always put a lil vinegar on the salad Yes the beans goes over the sliced cornbread ! You made my mouth water lol ! Looks really good. We always grew baby limas here in Louisiana ! My garden is almost done. Worst year ever between the birds and worms I dang near didn’t get many maters. Made my bread and butter pickles last night. My grandmother wrote the recipe to my momma on July 13th 1975. I have so many memories of the love she sent through her cooking. I love how she dated everything she ever wrote and sent. Digging the rest of my taters this afternoon. Waiting on my grandson so he can get his 5 year old hands dirty lol !

    I can’t wait to cook your chicken recipe! I haven’t fried chicken the old way in years, ever since I was a new wife and still tried to impress my husband! 😂. I always made the biggest mess too! On that salad which looks wonderful, it reminds me of what Mama always had in the fridge all summer: sliced, salt & peppered cucumbers and white onion and pour vinegar plus a little water over it to cover in a glass bowl. Cover and refrigerate til cooled and marinated. Dang, they are so so good!

    Hi Tipper, It took me years to figure out the secret of frying chicken, Its the chicken you use, Nowdays its hard to find a chicken small enough to fry, We have a meat market in Elkin NC about 30 minutes from here that I buy all our meat at, They have true frying chickens , 3 1/2 pound or less, the smaller the better, then i soak it several hours in the refrigerator in very salty water, salt it pepper it, then i put 2 cups self rising flour in a gallon ziplock bag, 1 tsp salt 1 tsp or more pepper, about a tsp thyme and poultry seasoning, then bread the chicken a few pieces at a time, lay on a plate at least 20 minutes for the coating to set, then I deep fry mine at 350 for about 15 to 18 minutes and drain it on a rack, it looks like restaurant chicken and is crispy and moist.

    Chicken looked delicious! I make a oven fried chicken but use crumbled up saltines. I forgot about cutting the squash in strips instead of rings. Going to do that the next time. I make a salad using home grown tomatoes dice up. Add only green onions, S&P, and a Tbs of oil, and that's it. Better at room temp. So similar to Grannys.

    I am right there with you with not being able to make fried chicken. It's either perfect on the outside and raw in the middle or the chicken is perfect and the outside is burned. I love that you shared this and I think it's something I can actually make. ❤❤
