I could argue Bulma or a combination of Goku and Bulma are the most important character. Bulma provides the tech Goku uses and Goku does the fighting. Without Bulma, Goku would have never left where he originally lived with Grandpa Gohan. That decision alone would of left the world to likely be ravaged by the Red Ribbon Army with Goku not able to do much. Sure he was strong but he wasn't refined yet. Bulma has done so much for Goku and Goku has done a lot for her. I'd argue both of them are the most important characters in all of Dragon Ball.
Plus once the Cell Saga started Bulma was the one to send Trunks to the past so he even has a chance to save his future. She is extremely important. So even though Goku was dead, bulma was still there to provide the necessary support to beat the enemy they once saw as impossible to beat. Once Trunks was done and went back to the future he took out the androids.
EDIT: I will also add with Dragon Ball Super Bulma is the reason why Beerus even considered letting Earth stay because she promised to give him lots of tasty food to try whenever he visits. So while Beerus was originally there to elimiate the Saiyan who was going to become a Super Saiyan God, he ultimately decided to stay and spare Earth because of the good food she gave him.

I think bulma is the most important
I really appreciate how Piccolo holds down the fort when Goku is not present. He's not my personal favorite character, but I think he's one to be valued more.
